Best oysters/lobster I have ever had was at Portland, Maine. Simple fresh caught oysters/lobster with basic lemon/ingredients. I agree when i went to vegas last summer I could not find a comparable seafood dish.

Just a bit of info regarding your surprise at wagyu vs kobe - Wagyu and Kobe are not necessarily different things; Wagyu means Japanese Cattle and is a term used to describe beef that originated from Japan cattle. Kobe beef is one of several breeds of Wagyu, or Japanese cattle, which are bred throughout the country and often associated with the area where they were raised. Kobe beef is produced from the Tajima breed of cattle born and slaughtered in the Hyogo Prefecture (Japan). So, while all kobe beef is always Wagyu, not all wagyu beef is Kobe. Hope this helps!

I read the menu and before watching the rest it’s time for fish school. Black Cod is not even Cod, it’s Sable Fish and it does not come from the Atlantic but the Pacific, from Alaska down to Cali. and out to Japan. Sable Fish have a lot more oil than Cod since it has no swim bladder but uses the oils in it’s muscle to control buoyancy. It was pretty much considered a trash fish with little commercial value until maybe 40 years ago when it began to catch on with folks here. Why? English folks were snobs when it comes to fish which is funny since they now use Dogfish for a lot of their fish n chips. 😂
