    Tapioca fiber may be in your so-called keto-friendly products, but is it actually a keto-friendly ingredient?

    Today we’re going to talk about tapioca, and I’m going to answer the question, “is tapioca fiber keto-friendly?”
    Where does tapioca come from?
    Tapioca is a starch that comes from the cassava plant.
    It’s actually quite high in carbohydrates. In fact, the carbohydrates from cassava flour are 25% more than white flour.
    If we compare tapioca flour to almond flour, this is what we find:
    • 1/4 cup tapioca flour - 27 net carbs
    • 1/4 cup almond flour - 3 net carbs
    There is an ingredient found in many so-called “keto-friendly” products called soluble tapioca fiber. Soluble tapioca fiber is the same thing as prebiotic tapioca and organic non-GMO tapioca fiber.
    Soluble tapioca fiber is a big source of IMO, which is a common sweetener. I used to think this was fine, but I no longer recommend it. More recent studies show that IMO has the same glycemic effect as glucose and dextrose. It’s actually worse to use than sugar. If you want to eat keto-friendly foods and stay in ketosis, you may want to stay away from tapioca flour and tapioca fiber.

    Hi Dr Berg...love all the information you give us..could you do a video on arrowroot flour....and how keto friendly or not it is...I make the bread recipe you posted and it has arrowroot flour in it but I've substituted it with tapioca flour so I'm grateful you did this one for us...thank you.

    Your content is perfect. There is no single thing I would change.
    You changed my life. I wish I could have found your videos in 2016 and maybe my father could be still alive.
    I live in Bulgaria - Number 2 country in the world in eating bread - 209 pounds (95 kg) of bread per year. Of course we are in top 3 in heart attacks in Europe and people can't make the connection.
    Even the prime minister said "You want to not have heart attacks - stop eating fat".

    I’ve studied the tapioca powder. The reason being is it works really good as a binder four breading to fry in like fried chicken. Even Net 18 carbs you’re spreading that over eight or 10 pieces of chicken, And a huge amount of that breading mixture is going to be left behind in the bowl or in the pan, so you’re probably looking at a gram of carbs per piece of chicken or less. That’s pretty much the only way I would use it, not as a sweetener but as a binder to mix with a breading for frying chicken. The carbs in the tapioca powder or pretty close to all purpose wheat flour or corn starch so I’m not sure it’s much of an improvement other than possibly not being something that causes inflammation but when using it with a keto breading mix, it would be using a lot less. I don’t think I’d use it for anything other than that though. :/
    Steve at serious keto did a test where on an empty stomach after fasting he consumed 2 tablespoons of it, one just mix them with water and one cooked into an egg waffle and one cooked into chicken broth. He had a negligible glycemic spike but it was anywhere from 20 to 50 points, so consuming a tiny bit and breading I don’t think would make much of a difference but it’s definitely not something you want to use in any quantity. :/

      I just ate Tapioca Fiber/almond flour pancakes and my blood sugar was just fine after a few hours. I would suggest everyone get their blood glucose monitor out and see how it affects you rather than depend on speculation.

    Dr Berg you shocked me again and I won't eat either and I have not eaten pasta, fizzy drinks or any Easter eggs and but I am cravings salmon and eggs and loads of vegetables and coleslaw and healthy fats now and I am not hungry or cravings anything and I still feel like I am in your class at medical school but from my comfort of my home and thank you for everything you are doing and making my knowledge high and willpower is very high as well and I am finding that betaine hcl is helping a lot with eating and I am not getting any acid reflux or acne now and I am so happy that I have found your channel because I have struggle with my cravings for years.

    Thanks for showing me this. My son brought imo fir me as an alternative to sugar. We eat cassava, so that is also being taken off the list in my household. I was also trying to grow the cassava in my garden.

    You probably have a video on this already, but I'll ask here. What should I eat to get fiber and help prevent/treat diarrhea? One huge problem I have trying to stay keto during chemo is that all the fiber foods that are supposed to help prevent/relieve diarrhea (one of my worst side effects along with hand/foot/mouth) are non-keto, high carb -bananas, rice, apples, toast, etc. P.S. Thanks for sharing your wealth of knowledge in these videos. They have been a tremendous help. Edit: I did find the video about keto safe veggies to help relieve the big D. I will try it and hopefully it will help!

    Tapioca has been consumed here in Brazil for a long long time... people through in the frying pan without anything so that it takes form, then one can put literally anything from sweat to savoury, then just close it as an omelette and enjoy.

    So glad you cleared this up and clarified what these ingredients are. I laugh when people are trying to be helpful and tell me about these keto bars and other processed keto friendly foods that are available now. I told my husband the other day not to buy me any of that garbage. The ingredients are horrible! I'd rather make myself a keto cake or fat bomb treat than to eat what I've been getting away from - processed prepared food.. I'm down 122 pounds in a little over a year. I'm so thankful for you Dr. Berg!

    Thanks for telling us this. I bought Nature’s plus unflavored KalmAssure magnesium citrate powder last month and the label says it contains tapioca fiber and i kept wondering if it was safe or not. It tastes weirdly sweet because of this tapioca fiber thing and the texture is weird too and what’s worse not keto friendly! ( so really, what’s the point in them adding such a thing to their unflavored product ) I have just learned whenever I’m not sure about something, I should just avoid it and if dr.Berg says it’s safe, I’ll use it. By the way, Flavored Natural Calm magnesium citrate powder has “organic flavor” which is actually Maltodextrin but you can’t find the word Maltodextrin anywhere on the label. I e-mailed and asked Natural Calm about it but they kept telling me it had no added sugar. i never asked them about added sugar. I asked them about their organic flavor which is actually Maltodextrin but they claim that it has zero carb/sugar. I really hate the fact that you don’t need to tell us how many carbohydrates your products contains if less than 0.5g or something.

      I'm quite certain tapioca starch-flour are similar if not the same and differs from say the product Kraft Minute Tapioca. The recipe I make substitutes milk with heavy cream and coconut milk, 8 more carbs there. I'm using Splenda instead of sugar. A 2 cup recipe using 3 Tablespoons of Kraft Tapioca has 10 carbs for 4 half cup servings or 5 carbs each for a 1 cup serving. So this 2 cup recipe totals 18 carbs.

    you have taught me so much. I was looking at a protein bar called "ONE" and it said 5 net carbs, sugar free. but i saw this ingredient in it (tapioca fiber) and I wasn't sure, but then i saw it had "malitol" and i remembered you said that's more sugar than table sugar so i put it down lol. Also, i've seen a lot of so called keto products with this tapioca ingredient. scary.

    It’s alarming the amount of non Keto ingredients that are in “Keto” or “low carb” items. And people STILL today believe the front of the label and the manufactures know this! Thank you for whistle blowing the ingredients Doc! Things that didn’t used to have maltodextrin in it now has it and other starches I have to look up.

      I even saw what’s so called keto flour that contains wheat and barley flour!!!!
      That is because most people look at keto net carb wise and serving wise not considering insulin index instead

    I discovered tapioca flour when I did Whole30 a few years ago. They recommended it for thickening sauces and breading chicken. Crazy that it’s worse than sugar.

      I hadn't heard about these Konjac noodles until a news story came on last night warning about them. A woman is suing Amazon and a company that makes/sells the noodles (Better Than Pasta/Green Spot Foods) on Amazon for an intestinal blockage (bezoar) that sent her to the hospital. She had eaten four packages in one sitting since 1/2 pack equated to 15 calories. They congealed in her stomach so, I would like to know what amount of these can safely be eaten in one meal. What are some of the factors that might make one person have a blockage while others can eat it without any issues?

      @@brooklynbabe718 Four packages in one sitting is pretty crazy. Over here, we do eat konjac mainly as a sort of (not sweet) pudding, made out of konjac flour and water. When it is in its "pudding" form, its potential to take up more water and quell is quite low, so no problem here. With the noodles from packages one has to be cautious though. The more "glibbery" they get, the better. Also make sure you get a product where they don't mix in wheat flour for a better taste and easier cooking.

    Another WAKE UP video from Dr. Berg! I bought some Tapioca Flour and made cookies with it. Yummy they were; however, that is the last time I use Tapioca Flour!

PLEASE LOOK INTO SMARTSWEETS SWEETFISH!!!!!!!!! its on amazon and its sold as keto friendly "LOW SUGAR 3G" But if you read the comments on amazon for this item everyone is pissed because it takes them out of keto and diabetics have had a hard time with this snack that has TAPIOCA FIBER. Again great video i am a new subscriber!

    I guess this means no more Lakanto Maple Syrup sweetener for me! It has tapioca fiber. I was so loving this addition to my diet to supplement maple syrup and honey within my keto recipes.

    We have these new lollies in Australia called “Funday” loaded with Tapioca and IMO. I’ve resorted to them a lot as an alternative. Will be avoiding from now on. Thanks Dr Berg!

    Hi I came across this vid as I tried a keto friendly bread under your channel that uses arrowroot flour. In Australia - I was unable to find Arrowroot flour at the local supermarket but found a McKenzie's Arrowroot (Tapioca Flour) that I used as a substitute. On the side of the pack it states - Arrowroot and Tapioca Flour are often interchangeable as they are vary similar in source , manufacture and characteristics. The Carb content for 25gm serve is 22.5gm - which is extremely high and as this is a major ingredient of your low carb bread I am now assuming possibly the tapioca flour and arrowroot flour are possibly different in their carb content. I need to do some more research on the differences between tapioca and arrowroot flour but I now have come to the conclusion that the low carb keto friendly bread using tapioca flour is likely not low carb at all and as tapioca flour is often sold and marketed as Arrowroot it is an important caveat to avoid using this flour in the future

    Amazing videos Dr Berg! started keto a month ago! I do have a question, on your website you have a recipe for Waffles and you use FiberYum. So I went ahead and bought some of that and made some delicious waffles at home! But now I have contradicting data because you're saying to stay away from Tapioca Fiber! - Is the waffle recipe on your site no good?

    QUESTION: Even as a resistant starch and fuel/feed for your gut microbiom you still suggest cassava as a bad thing? It does truly spike your glucose levels and isn't mostly converted as fuel for your microbiom as a resistant starch?

    Hi Dr Berg,
    I found Pyure Hazelnut spread on Amazon which contains Organic Soluble Tapioca. What are your thoughts in the following? In description, they write:
    Legal Disclaimer :
    Pyure tapioca fiber is a resistant dextrin type that is well tolerated and should not cause large spikes in blood glucose levels. Other brands may use what is called isomaltooligosaccharides (IMO) which can cause spikes and can also be labeled as fiber. Pyure does not use IMO.

    Thanks for your informative video. Cassava is much better than every grain (product)!!
    My father's been eating cassava for 105 yrs, and he's still alive and strong. I've been eating cassava since infancy, and I'm healthier than ever!
    Unfortunately, there are lots and lots of misinformation about cassava. But fortunately, I know cassava very well.

    Cassava is a tuber root crop, and I've always thought by definition that makes it a high carb food ingredient. Why people would put it in "keto friendly" products is probably due to the lower costs (almond flour can get expensive in comparison, per gram) and taking advantage of the fancy-sounding word "tapioca" that makes marketing easier.

It's from the Against the Grain brand in the frozen section. It's 8.49 for a two baguette package. Do you know of any store bought keto friendly bread?

    Please analyse the root TARO and purple potatoes (Okinawan sweet potatoes), are these good for keto?
    What are the best resistant starches to eat?
    What are the best sources of resistant starches to feed the microbe and produce SCFA (short chain fatty acids).
    Yes, I know 10 cups of leafy greens, but is not easy to ruminate like a goat the whole day with grass. I suspect some boiled (instant pot flash) roots can replace more or less the 10 cups of hay.
    I fell great when I eat resistant starches. The SCFA give me great of endurance and I can perform OMAD easy.

    Dr. Berg i have been eating cassava and everything you can make with it all my life in my country its one of our number 1 food staple we grow it here TRINIDAD AND TOBAGO. And people consume it every single day in many ways so i really dont know what to add or take away from what your saying but it fills lots of hungry bellies in my country and it goes a long way in feeding large families keeps them full and satisfy longer. Thanks for the info still.

      It has a glycimic index of 46 it's high in resistant starch and rick in many nutrients like potassium, it's a healthy food

    QUANTITY COUNTS! Wheat allergy pushes me to use Bob's Red Mill Gluten Free 1 to 1 Flour (contains tapioca) to thicken gravies, BUT USAGE IS ONLY 1/2 tsp. per serving. My Carb Manager app shows that amount as only 1 carb. It does a beautiful job of thickening gravy, especially when I add a quart of beef bone broth to the stew. Nutritional yeast flakes add even more thickening and flavor. When I coat my veggies with the gravy, I need more restraint watching the quantities of carbs in carrots and onions and garlic cloves. Can't beat the beef gravy over wilted kale. Yum!
