@@LaraMesanza personally, for at-home sushi, I go to a local Asian market, look for "sushi grade" (frozen/unfrozen) fish, and use those fillets the day of or the next. They flash freeze it to low temperatures that my freezer can't reach. Also, salmon and mackerel tend to have higher rates than other fish (still a super small number, it's not common to get parasites). Consider the source too, IDK if I would trust Walmart Salmon for sushi. Restaurants just get the whole fish already frozen and keep it until use. If you try to freeze it yourself, it might not get cold enough to have the same effect, and slow freeze just ruins the fish (tastewise and texture). So, just look for previously frozen, "sushi grade" is the best bet. Good luck!

Having a backup channel with a lot of subscribers would also be beneficial in case UA-cam ever goes fucky wucky, or if y'all decide on a spin off channel (which every successful channel does). Would love to see a second channel about buying local ingredients, navigating farmers markets and whatnot, etc
At this point, Joshua Weissman might be one of UA-cam’s winning top chefs by default. His recipes are always a must-try. Regardless if you’re just a home chef or a pro chef at best, doing experiments in the kitchen are definitely worth the try.

THANK YOU for using the quartering method for avocados! The slam-the-knife-towards-your-hand method is one of my biggest cooking pet peeves. For extra safety, a basic dull table knife can cut an avocado just fine.

For rice in a pot I was taught to being it up to a boil, turn down the heat to around 3/10 with a lid for 15mins, then take off the heat with lid still on and let it rest for 15mins. You can try this method and adjust based on the end result you get since burners are always different

@@Blunderbussy Rice cookers (or at least instant pots which have more options) make consistently good rice with no extra steps. If you have an instant pot it'll also do a lot of other stuff like slow cooking etc. which frees up the stove/oven for more active cooking. I use mine for rice, hard/softboiled eggs, any kind of meat that needs a long, slow cook like a stew, lots of stuff. And rice cookers aren't always the size of joshua's, you can get tiny ones that only do a couple cups just for yourself.

Good video. When I made sushi for a living, we would fan the rice while mixing it. It's a very nice touch on the wetting the barrel. Rice will stick to a dry barrel and ruin your day. It's important to make sure that the wood is just saturated with water enough for there to be no pooling water for the opposite reason though. As well as either storing it slightly damp if you plan on using daily, or fully dried so as to avoid warping the wood. For spicy tuna, you can also try to use a paste called youki if you can find it. Only a little though, as it has a strong taste. Nice technique on the avocados. It's what we would do. For applying rice to the sheets, it helps to place a mass of rice along the length at the top of the sheet, then roll it down to cover the entire sheet.
There was a period of time where I couldn't eat basically anything enjoyable, for about 9 months I couldn't have gluten, dairy, soy, milk, or most nuts. I love sushi so I love this video! I especially love the avocado cutting tip, I will be doing that from now on. Earlier today actually I was cutting into an avocado and I started by cutting it in half and then pushing the knife into the pit. I have mildly hurt myself doing this before when the pit slips, but today I nearly sliced my finger off! I am so glad I watched this! If only I had watched it the day it came out 😅

Safety first, especially on the road! Think of it this way, you are saving time by NOT getting in an accident that would take a LOT more time than driving safely. For those who DO drive too slow, going too slow is not only another safety issue, it is also a way for getting a ticket for impeding traffic. I have known a few people who got tickets for going the speed limit for not keeping up with the flow of traffic and/or unsafe driving. I was actually with one of them when he got pulled over for this, but he just got a warning and told to take a side road and get off the interstate.
Fun fact about the avocado comment. 3 weeks ago I cut my finger to the bone pitting an avocado. First time I've ever cut myself doing it but the seed wasn't very hard and the knife just kept going.
This roll was terrifying... for the next time, cut your nori in half (where it is vertically long), you only use the full sheet for Futomaki (The big rolls) for Uramaki you use half a sheet and try not to roll in the rice, it looks cheap. The bought roll, did look very good, It was very well filled and they usually do not add too much rice on the outside to not stuff you with rice so you order more, but every good sushi place does that. Damon did not teach you to roll sushi the way you did! The video with damon is actually my favorite video of yours, it was really entertaining and he really was amazing at making sushi, to this day I enjoy watching it alot.
I mean putting together the sushi is easy lol it's all the prep work that needs to be done (and already been done prior filming the video) that takes up most of the time xD
Probably the main reason i go to a sushi restaurant is the fact that they ( almost always) have better ingredients to work with than me. Being that sushi itself is a few ingredient dish the quality of the ingredients matters alot
I'm Japanese but I've never seen this type of sushi roll in my life. Is it some kind of adopted version to suit different countries' tastes? I want to try it.
Essentially, those would be the westernized version of makizushi, usually with rice on the outside to hide seaweed. (I heard when sushi was introduced to other parts of the world, people were not familiar with the taste and texture of seaweed) Western countries have sushi restaurants that serves traditional sushi and sashimi, but westernized version is also popular too. Honestly, they taste really good so I care less about authenticity :P

I'm from Houston and was able to find the sushi restaurant from context clues but lets just say it's really not close to where they started. and there is many sushi restaurants in between the start point and the place they pick. I would assume if you live in Houston and you are walking anywhere at all, you either live in Midtown, the Heights, Greenway or Downtown. Outside of those areas, I would say most people aren’t walking to three different sushi restaurants within a reasonable timeframe

I do make sushi at home like once a year... but I will never agree that home made stresfull time consuming sushi is better than stress free enjoy delivery sushi.

Safety first, especially on the road! Think of it this way, you are saving time by NOT getting in an accident that would take a LOT more time than driving safely. For those who DO drive too slow, going too slow is not only another safety issue, it is also a way for getting a ticket for impeding traffic. I have known a few people who got tickets for going the speed limit for not keeping up with the flow of traffic and/or unsafe driving. I was actually with one of them when he got pulled over for this, but he just got a warning and told to take a side road and get off the interstate.

Fun fact about the avocado comment. 3 weeks ago I cut my finger to the bone pitting an avocado. First time I've ever cut myself doing it but the seed wasn't very hard and the knife just kept going.

This roll was terrifying...
for the next time, cut your nori in half (where it is vertically long), you only use the full sheet for Futomaki (The big rolls) for Uramaki you use half a sheet and try not to roll in the rice, it looks cheap. The bought roll, did look very good, It was very well filled and they usually do not add too much rice on the outside to not stuff you with rice so you order more, but every good sushi place does that. Damon did not teach you to roll sushi the way you did!
The video with damon is actually my favorite video of yours, it was really entertaining and he really was amazing at making sushi, to this day I enjoy watching it alot.

Probably the main reason i go to a sushi restaurant is the fact that they ( almost always) have better ingredients to work with than me.
Being that sushi itself is a few ingredient dish the quality of the ingredients matters alot

I'm Japanese but I've never seen this type of sushi roll in my life. Is it some kind of adopted version to suit different countries' tastes? I want to try it.
Essentially, those would be the westernized version of makizushi, usually with rice on the outside to hide seaweed. (I heard when sushi was introduced to other parts of the world, people were not familiar with the taste and texture of seaweed)
Western countries have sushi restaurants that serves traditional sushi and sashimi, but westernized version is also popular too. Honestly, they taste really good so I care less about authenticity :P

To be perfectly fair in these contests, you need to restore the kitchen to "clean". If you ordered out, there's no kitchen for YOU to clean. Great content.

Where the F did you order from? Where I live, I can walk to 3 different places for sushi in 15 minutes. I can get there by car in 3. Did you order from a restaurant across town? Seems like your homemade rolls are superior, but I really doubt the race based on time was fair.
I definitely have to drive about 13 minutes from my house for the closer restaurant
I'm from Houston and was able to find the sushi restaurant from context clues but lets just say it's really not close to where they started. and there is many sushi restaurants in between the start point and the place they pick. Not hating, its a show for fun so I'm sure its designed to make it work.
@@angelicamichelle5568 While some people do live that rural I'm not sure its common, maybe 13 minutes to a closest specific style of restaurant sure, but 13 minutes to the closest restaurant of any kind is pretty rare i think. but even at 13 minutes, you would have beat Josh in this competition.
I would assume if you live in Houston and you are walking anywhere at all, you either live in Midtown, the Heights, Greenway or Downtown. Outside of those areas, I would say most people aren’t walking to three different sushi restaurants within a reasonable timeframe
