  • Cook with me to make some delicious Pickled Oyster Mushrooms!!
    In this episode, I show you step by step to make EASY Pickled Wild Mushrooms that can be adapted to ANY mushroom.
    RECIPE:
    4 ounces cleaned and torn mushrooms
    1/2 tsp. salt
    water to cover
    Add mushrooms, water and salt into a small pot. Bring to boil, reduce to a low simmer for 10 minutes. Drain and save that broth for another use. Set mushrooms aside and make the pickling liquid.
    3/4 cup apple cider vinegar
    1-2 tsp. honey
    1 garlic clove, sliced
    4 tiny bay leaves or 1 large one
    2 Tbsp. sliced onions
    1.5 Tablespoons wild seeds or pickling seed mix.
    12-15 fresh pine needles
    1 tsp. kosher salt
    pinch red pepper flakes.
    Heat in a pot. Bring to boil, reduce to low simmer for 4-5 minutes.
    Put mushrooms in jars, divide spices and liquid over the mushrooms. Refrigerate for up to 2 months or waterbath can.
