Ultimate Smoked Chicken (Slow Food Recipes) You gotta love smoked meat!

  • In trying to become the pit-master of my own bbq and smoker, I'm always looking for new techniques, ideas and recipes. Some work, some don't. But this one, this one worked! If you try this recipe, I'd love to hear how it worked for you in the comments!
    Recipe:
    -Dry rub
    1/2 cup brown sugar
    1/4 cup salt
    1/4 cup paprika
    1 Tbs garlic powder
    1Tbs onion powder
    1 Tbs black pepper
    1 tsp lemon zest
    -Coat chicken breasts with maple syrup and the slather on the rub.
    -Let stand for 1 hour in the fridge.
    -Smoke on racks for 1 hr at 225ºF with your favourite wood chips. (we
    used maple)
    -Place in pan and put 4 Tbs of cubed butter on the chicken breasts.
    Seal with aluminum foil and cook for 1/2 hr at 225ºF
    -Remove from pan and dunk the chicken breasts in a mixture of 1 cup
    bbq sauce (your favourite) and 1 cup apple juice.
    -Smoke directly on racks for an additional 1/2 hr.
    -Remove from smoker and immediately drizzle with warmed honey.
    -Enjoy!

    Tried this(except I use a different rub mix), it came out amazing. I'm doing it again today, but will be reducing final cook time by 5 minutes and using some devil's spit bbq sauce(was more sweet than spicy last time, looking to balance), I prefer my chicken just a touch more juicy, and the temp probe had the meat at a good safe temp by the last 5 mins anyway. Thanks for sharing!!

    This is a very delicious recipe! Cooked with an electric smoker. Only thing I did different was poured the bbq mixture into the pan instead of dipping. I got lazy. Thanks for the recipe!!!

    Saw your video the other night & I've just returned from Costco with all the ingredients I need to make this recipe! Recently bought a Yoder pellet smoker and will be making this tomorrow night for dinner. My wife is going to really be happy! Thanks for the inspiration.

    Next time put the dry rub in a food processor and give it a quick whirl. Way easier and better blend of the spices, no brown sugar clumps. YUM! Chicken had a nice smoke ring. I do the same with turkey breast as well. I mix 2 parts honey to one part maple syrup and keep it in a squeeze bottle on the counter.

    I'm also a smoked food junky. Smoked a pot roast last week then into a pan with the liquid and veggies and back into the smoker. I think I ate close to a pound! I've never tried sweet, we do alot of vinegar and spice. Do you use smoked paprika? Put your rub ingredients in a food processor or use a whisk, easier mixing. Thanks for sharing

    I like the taste of chicken with the smoke. When done right you don't need all the other stuff in there. You can cook good food without over seasoning it right? Thumbs up for sharing This is a desert more than a chicken dish!

    Made the recipe & it tasted as good as it looked in the video and coming off my smoker. It was also very tender and juicy. The combination of flavors is so good and the recipe is easy to follow. When it came time to put the smoked breasts in a covered pan with butter I used a small Pyrex casserole dish. When I dipped the breasts in the bbq sauce & juice I saved the butter/chicken drippings. While the glazed breasts were on the smoker I boiled some sliced red potatoes and then sauteed them in a cast iron skillet with the butter/drippings I had saved with a bit of olive oil added. This was a great meal and one I will make again.

      No worries, your arteries will already be clogged from all the sugar at that point. I think there is a side of chicken with all the salt and sugar.

    Well I know what I'm having tonight! Love the recipe, though I may cut down on cooking time, I prefer my chicken a little juicier than these were when you cut them open. I also feel like this would work great wrapped in bacon.

      225 is actually pretty low for poultry; most recipes call for smoking at 275-300°F

      I'm really confused about chicken and cooking temps. Some are doing 350, others 220, all for about the same time period. My Weber in Phoenix, with no coals or fire rests at about 175F. Maybe I could smoke chix withOUT any fire! - Thanks - Lumpy

    If you were doing a whole chicken I would have asked if you brined it before you smoked it. Normally I wouldn't brine chicken breasts but when i have they turned out awesome. If you ever do a whole chicken, like beer can chicken, I have had issues with the skin turning into rubber once it got to 165 (f). I found that if you cook the chicken to 145 and finish it in a high temperature grill to 165, the skin crisps up nicely. Chicken looks really good and hurry up and invest in a Traeger, I am going to tell you every time you put up a cook video :)

    Did not need to put it into a pan with butter for 30 mins. I don't understand what that even does, or how the rub stuck to the chicken after only an hour, after steaming in the wrap. I don't see this coming out any moister by just going constantly at 225 and spritzing, followed by glaze.

    Get a little sous vide machine! Smoke then sous vide, jouciest breasts ever. The recipe looks great, but for $150 you can get a machine that makes everything super simple.

    Personally, I don't care much for breast, too dry!
    I'd use chicken thighs, the most tender and succulent of the chicken pieces! With a little smoked paprika and a little cumin! NOM! In fact Double NOM!!

    The outside looks nice... But on your squeeze test literally no juices came out, so, obviously dry as cardboard.
