I used to work in Ehime Prefecture in the 1980's! It was so remote back then. I had to take an 8 hour ferry from Kobe to get there. Ehime was a rural, slow-paced corner of Japan. I worked for a paper company and unfortunately, the stench of sulfur was everywhere. I can still smell it now! I also remember the wide variety of fish the local boats brought in every day. That was quite an experience. Love Japan and the food, keep 'em coming, I will be watching!

Disclaimer for the uninitiated. Not ALL Sashimi are best served fresh or freshly caught, some like maguro/tuna sashimi from really good sushi restaurants are aged first for a week or so in their freezer to mellow out the fishy and iron taste and gives it that melt in your mouth tenderness.
