INGREDIENTS
5 SPICE INGREDIENTS
Fennel Seed
Cloves
Star Anise
Ground Cinnamon
Szechuan Peppercorn
PORK BELLY INGREDIENTS
1 (3lbs) pork belly
Kosher salt
PICKLED VEG INGREDIENTS
1 cup white vinegar
½ cup sugar
1 cup water
1 large carrot
1 daikon radish
LIVERWURST PATE INGREDIENTS
Liverwurst
12 tablespoons butter, divided (8 TB cold, 4 TB melted)
NUOC MAM CUNG INGREDIENTS
Rice wine vinegar
Fish sauce
Maple syrup
1 Green Chili, minced
1 Knob Ginger, grated
1 Shallot, chopped
1 Lime, zest, and juice
2 Garlic cloves, chopped and macerated
ASSEMBLY
Cilantro
Hoisin
Sriracha
Jalapenos
English cucumber
Maggi seasoning
French baguette rolls
COOKING METHOD
1. In a medium skillet over low heat, add all the whole spices and toast until fragrant. Allow to cool slightly, then add ground cinnamon and grind together. Set aside.
2. Preheat oven to 400°F. Add prepared pork belly to a roasting pan and cook for 50-60 minutes, or until the top of the pork belly is crisp and the pork meat is juicy and tender. Set aside.
3. Cube liverwurst and add to a food processor. With the machine running, add cold butter cubes and process until fully emulsified. Taste and season as necessary. Refrigerate and allow to fully set.
4. Make marinade, then add julienned vegetables to a large, resealable container. Pour marinade over the top and shake to combine. Set aside.
5. Add all Nuoc Mam Gung ingredients to a bowl and stir to combine. Set aside.
6. Cut the pork belly into 1-inch cubes and add to a large bowl for assembly. Toss with nuoc mam gung. Slice baguettes in half, horizontally, and spread liberally with pate. Add cilantro, cucumber, jalapenos, pork belly, hoisin, sriracha, and pickled veg. - Комедії

I'm from Vietnam. I can tell this recipe is not really how people make this in my country, but I really do loveee Matty's version!! Banh Mi makers in my local area should learn how to stuff that much meat into their bread 😂 They kinda serve Banh Mi with less meat these days 😂
I mostly watch Matty to get tips that I can use in my own dishes (and obviously he's entertaining), because I usually only cook for myself and many of these dishes are a lot of work just to make for one person. This one right here though, I'm going to make it just as it is in the video. That cross section of the sandwich at the end sealed the deal for me.
I implore you to make a banh mi anyways dude. You're worth the effort!

I'm sure it's being conceptualized, since those videos are far and away the most popular on his channel, but I get the feeling it's tough to commit since they were notoriously advertiser-unfriendly and sponsor-unfriendly, so just the name "Just a Dash" is probably hard to monetize.
Honestly if Manscaped just sponsored the entire series just to make it happen, I'd forgive them for being the most annoying sponsor on UA-cam since Raid: Shadow Legends.
@@Morgannin Manscaped got a huge amount of funding in exchange for a huge amount of equity and to justify it they kept spending and spending on youtube ads to the point where the same people were seeing like 5 to 10 of the same ads a day they are gonna go bankrupt soon but the people at the top will have made huge money.

When I saw the word Banh Mi, I had to investigate. I saw Matty Matheson, and it piqued my curiosity further. I was ready to grill him for making any mistakes, but alas Nuoc Mam Gung...there it is. Best and most REAL cooking show ever. Proud owner of both cook books but just can't seem to get a FKN pan.
My pate hack is 2 parts braunschweiger/liverwurst (which is pork) + 1 part ground pork cooked w/ a lot of fresh ground pepper and a dash of fish sauce. Remove the pork and add minced onions and little water to the pan to deglaze/caramelize then add garlic at the end till fragrant. Throw it all in the food processor and add butter/heavy whipping cream/salt to your desired consistency/taste. I found when I was just using chix liver it was a little too liver”y” for me. And most Vietnamese pork liver pate recipes also temper the pork liver taste w ground pork.

The butter makes sense, I got a food processor as a gift and one the first things i put in it was pork meat, meaning to make a rough chop but made pork meat sand. Some fat and liquid probably would have made it palatable.

I live in Atlanta and we have an amazing Bahn Mi place near me. Probably would agree, it’s def one of the best sandwiches in the world. This, and a Torta I had in Arizona are the best I’ve ever had.
