  • Two bottlings of Virginia Distillery's Courage & Conviction from two different blenders, including "The Nose" herself.
    Big thanks to both Nancy Fraley and Magnificent Bastard Rob Halla for the bottles. Cheers all around!

    Once again I’m not a whisky drinker but can’t stop watching these guys. I may have to try whisky at some point, it amazes me the scents they get from smelling it. I don’t like the smell or taste of any alcohol, but I’m probably just doing it wrong.

      Your probably not doing it wrong. At first all you get is probably alcohol burn bc its a poison and you body doesn't like poisons lol. But the more you have if the burn goes away and the flavor takes its place. It kinda happens all at once too. I wouldn't recommend taking shots id do small sips. One day, usually less than a month, all of the sudden the burn will be gone and the flavors will blow you away.
      You should join the Facebook group. There alot of good info and opinions there but there are some bad ones too lol. And they have a video about how to nose and taste whiskey i think. Modernrogue has one with them too i think.

    These guys are local to me, love that I’ve got such a high quality distillery nearby. I get more of a chocolatey note mixed in with the fruit.., almost like a raspberry dark chocolate with that velvety mouthfeel.
    As far as comps, I’d say the closest I’ve had to the flavor profile is The Macallan 12. Only VDC is hands down a better whisky. Crazy to think given the significantly more advanced age of the Macallan (both the distillery and the whisky).

Nancy Fraley is doing wonderful things in the whiskey world, I only hope I get to try some of her stuff someday... hell I might have already and don't even know it! On “cuts” I think maybe some have the wrong impression. I can’t imagine any distiller that plans on selling product just collects a run heads through tails and barrels it. What some will do is track the abv and nose and taste example they will start collecting at 140 proof and stop at 90 proof and keep everything in between . Theoretically if they ran the still correctly they only have hearts so there aren’t heads or tails in the final product and it was a “cut” however it is a “get what you get and don’t get upset” sort of thing, whereas making smaller cuts within the heart run allows a blender to pick and choose the best of what’s coming off and even mix in some of the head or tail product to increase the nose or body.
    If a home distiller is running say 15 gallons and they start with a good mash and run the still correctly they probably don’t really gain anything from making small cuts and blending and can still age the product to be a nice sip of whiskey ,
    It also doesn’t provide much benefit to do a strip run with that small of a quantity. The benefit of stripping is it removes the foreshots and tails from the final spirit run and reduces the quantity to make running it more controllable.
    What Daniel was referring to is how a large distiller operates and he is correct running a large vat cuts are crucial to a good product because during the collection the nose and flavor is going to vary noticeably from gallon to gallon or even quart to quart during the heart run.
    I realize this isn’t a distilling channel and I am sure Jesse could explain it better but I know a lot of MBs are getting into distilling and thought I might be useful to share. Cheers

    You know this has been a real thorn in my side as a guy that produces my own is trying to match commercial bourbon profiles with just a little bit of cleaning up...
    There's no way Jim beam makers all the major brands are making tight heart cuts there's just no way.
    The acetone and nail polish remover on the nose is undeniable

    • @theworldisastage1984
      @theworldisastage1984 3 роки тому

      Additionally I'm almost positive that most single malt scotch whiskeys and blended expressions are using cuts that go much deeper into the tails.
      How deep I'm not sure but I would assume that most Isla Scotch is go down to 30% before they cut it out probably eliminating the cloudy section that happens right before the Sweetwater hits I don't know
