This easy candied citrus peel recipe is awesome and it's a great way to use those leftover peels that you most likely just throw away. Don't throw away the citrus peels, make candy with them!     Ingredients:
    3 medium oranges (or whatever citrus you want to use)
    3 cups of water (for boiling) done 2 or 3 times until bitterness is gone.
    1 cup white granulated sugar (may add up to 2 cups of sugar)
    1 cup of water
    Sugar for rolling the peels in
    Tools:
    Pot
    Spoon
    Collander
    Knife or peeler
    Wire rack
    Parchment paper
    Sheet pan

    Oh man... My Great Aunt that lived in Orlando Florida use to have several orange trees in her yard. She use to make these when we visited and the syrup from them got used on waffles the next morning too! I haven't thought about these in many, many, years Matt!
    Thanks for sharing! I think I will have to teach the kids how to make these this summer when we get decent oranges up here!

    I had a batch of lemons of outstanding quality and decided to use this recipe in order to make lemon candied peel. It really is a great recipe, everything went well - although at the end I chickened out and poured the syrup coated peels onto a base of sugar and then poured sugar onto them. I got in enough of a sticky mess handling them the first time. They were easy to toss in sugar once mostly coated - at least the sugar was on them this time. I also saved the water from both boiled batches and added it to the syrup. I then brought both up to a high temperature and simmered and stirred them. I did can the liquid as it tasted absolutely amazing. It was good enough to use on its own or I could add it to juice and water to make a soda or such. Great recipe thanks.
    PS May be worth adding a note to retain the water at the first stage as people could have discarded it by the time you mention it at a later point in the video.

      Try this same method to make crystalised ginger.
      That is assuming that you like ginger.
      Great if you're a bit under the weather just to chew on.

    I am back to view again! I have eaten countless Le Parfait jars full of all candied citrus permutations, I am now using a different variety of lemon, one with slightly thinner rind. I have even made this recipe minus the zest altogether, just using the ends of the fruit to add the additional flavour. I tried that because I tend to peel/ grate the zest, then juice the fruit, then pull out the membranes and use the rind for the candy. Great way not to waste so much of the fruit - hooked! Thank you again for making a great recipe, with simple instructions!

    These are wonderful, my Grandmother taught me how to make these many years ago, but have not tried them since. She used to cut them slightly thicker and soaked them in water for a couple of days to get rid of acidity. However, think your method is better, quicker just to boil. These make lovely little treats of gift to friends. Just found you on YT & subscribed. Thank you Matt. X:)

    i haven't made these yet but i absolutely will! a lot of recipes i've seen for candied citrus are so finicky about the rind, i'm really glad to see one like this where i don't have to spend a ton of time and energy getting the pith off somehow. thank you for the recipe! your whole channel seems like a goldmine of practical cooking.

      I also make Orangecello to salvage goodness from the skins, the alcohol being a good preservative. Nice to have the candy option and the syrup though.

      @@--TOM-- all heat sensitive vitamins, minerals usually are not affected by cooking , however most are probably cooked out in the water that gets pitched😉

    I just had some huge oranges in the fridge that weren’t to pleasent for eating (course/dry). I peeled them and filéed them (cut out the segments in between the white, so you only have pure fruit flesh) and added that to a batch of redcurrant jam together with a filéed lemon (the jam is soooo good!). The peel I plan to make this from, so thanks a lot for the video! 🤗

      Hi Lotta! I only use alcohol to soak my candied orange and lemon peels, nuts, raisins in for about a month, before I make my Christmas Stollens! Then after baking, the Dresden Stollens are left untouched and refrigerated for 6 weeks before slicing. Excellent taste and very German as I remember from my Oma! Thanks for the question!

    Good morning! Update on my version of yours! I sugared them last night and kept them out. This morning they were soaked. Guess sugar draws water! I dried them up a bit, wrapped in paper towels and refrigerated. I thought I had blown it! I have a small counter top toaster/oven. Much easier to handle after fridge cooled. Placed in oven on tray and dehydrated on 225/230 degrees for about 2/3 hours. It worked! They are perfection! Just the right amount of sweetness and tartness! It is so good 😊! I’m keeping them stacked on paper towels and refrigerated. You could definitely Chocolate coat some, use as a garnish or in a vodka martini or in my Stollens I’m planning on making this week! Glad I ran into you here! I subscribed and will visit you again soon. This was worth the time and effort! 👍😃 TY

      Glad you made them, Ingrid! :) The climate will also effect the drying process. Here in Arizona, where I live it is so dry, haha. Did you let them dry first before rolling in sugar? Let them dry until tacky then roll in the sugar and dry again. It takes at least 4 to 6 hours for them to dry after being rolled in sugar, here where I live in a very dry climate.

      No. It was late and I figured 🤪if I sprinkled sugar over them I’d just brush off most of it in the morning and surprise! A tray of sugar water which had the same effect! The dehydration worked. And they are stiff but pliable and very appetizing and good looking! Wish I could send you pics! I keep going back to eat one. Leaves such a nice clean taste. 😊

      You can just store them in a ziplock bag or airtight container in the pantry or on the counter for a few weeks. :)

    hi, is it possible cook in the syrup for too long or maybe I had the temp too high? I noticed a strange taste at the end, almost like caramel starting to come into the mixture. Is the recipe supposed to avoid caramelizing and more so just get the sugar into the peels?

      Yes it absolutely is possible to cook it too long. The sugar will turn into caramel haha :) Yes if the sugar starts turning amber color it has gone too long. You want to avoid caramelizing, unless you want that flavor.

    How many times do you boil and drain to take away the bitterness?

      Hello Ann, there is not set number of times, usually it takes 2 or 3, but it can take longer. You can check it after the second time, by biting into a small piece to see if it is still bitter. :)

    Can the candied orange peels be made with agave nectar instead of sugar?

      Hi Renee, I have no idea, I haven't tried it. :) I think it will work. The main thing is the boiling process with water to get rid of the bitterness. Then you can use a sweetener. Give it a try and see. :)

    Really enjoyed the video... and I have lemon peels in the pot for their 1st boil. Have you had anyone use a dehydrator to "dry the peels" to the point of tacky... just asking

      @@inthekitchenwithmatt I ended up having to boil/change water 4 times. By the time it got to the boil in the sugar/water they started falling apart LOL. So the rolling in sugar part turned into ladling them onto plastic sheets used for making fruit leathers. I then sprinkled them with sugar and let them dehydrate over night. They turned out great and maybe with a thicker peel I wouldn't have had them fall apart. I'll try grapefruit peels next ! Thanks! I was going to post pictures but it won't let me.

      @@dionneblanchard4075 Awesome Dionne! Yeah each type of peel will take different amount of boil times, since they will have different amounts of bitterness and may be thicker or thinner. :) Glad you are having fun trying out different ones! :)

    I like to boil my peels with the juice of the oranges with sugar until the juice cooks out on low. Sometimes roll them in sugar i like to dry them out in the oven .

      Hello, pineapple isn't a citrus. This recipe/video is for citrus peels only. To make candied pineapple, you need to do it a little bit differently. But the idea is the same. You boil the pineapple in a water/syrup low and slow until translucent. But you don't change the water at all. Because they aren't bitter, like orange peel. I will make a video about it. :)

    Hi! Aren't you supposed to take off the white part from the peel? It take away the bitterness I heard. Also if it's not organic,( chemically treated peels ) can you cook the chemicals out or it is better organic? Thank you for your answer 😊

      Hello, nope do it just like I showed in the video. :) Rinsing them off really well first then cooking the peels will help reduce any chemicals that may be present. But if you are concerned about it, use organic. :)

    I was reading recipes on how to do this and needed a visual -- your video was wonderful. I have a bunch of limes I've used an old press juicer to juice, so they have some pulp and membrane still... think they would be okay to do like this? There is NO easy way to get that out now! I have another 50lbs of lemons to go through as well.....

      hmmm yeah, there isn't an easy way to get that pulp and membrane after you put it in the juicer. I guess you could try slicing them into smaller pieces and see if you can dig them out. Good luck!! :) And thank you, glad you found the video helpful.

      You are welcome! I don't think just the peel is sold by itself, you need to buy the actual oranges and then peel them.

    Do you have experience with day/half a day old peels? Will they be okay for candying?

      I always use fresh peels. I imagine half day old peels will be okay. But again, I have always used fresh ones.

    This may be just what I was looking for - I impulse purchased a pomelo (🤣) and was trying to figure out something easy to do with all that skin! Maybe it will take a little extra boiling with a skin that thick, but hey, it’s a method that won’t take me a week 😆

      Yep that is great too. No I haven't done it with violets or rose petals. But seems like they would be yummy, not sure of they would hold up the same way, because they are way more delicate then an orange/citrus peel.

    All this time I've been throwing away peel,smh. I'm curious before u coat them in sugar,can you leave them dry and dip them in chocolate? Or if you're using lime peels could you dip it in white chocolate?

      Sure you can totally coat them in chocolate! :) And yes you can dip them in white chocolate as well if you are doing lime peels. :)

    Can you use brown sugar for the sugar syrup? Anyone done that? I’m simply asking because I only have enough white sugar to coat them and I don’t plan on shopping today but have lots of orange and lemon peel ready to cook in the fridge… 🤗😋

      I have never tried it with brown sugar. But you can make simple syrup with brown sugar, so I don't see why not. I think it will add a caramel flavor to the peels though.

    To candy ginger you would just simmer the cut up ginger for the whole half hour then follow the same process with the simple syrup???

      Pretty similar yes. Peel the ginger root and cut into thin slices. Add to a pot of water on medium-high heat and cook for 30 to 40 minutes. No need to switch the water. Save some of the water after you drain the ginger, like 1/2 cup of it. Then add 2 cups of sugar to that ginger water. Bring that to a boil and let the sugar dissolve then add the ginger. Reduce the heat to medium/medium low and simmer for 40 to 45 minutes, make sure to stir. Then drain and let them cool on a rack, for a few hours before dipping them in sugar, then let them dry. So yes pretty similar! :) Some people will also just keep simmering it until the water is completely gone and the sugar crystalizes on the soft ginger, then cool it. No need to dip it later.

    In my country we use the pith of grapefruit to make a dessert. Yes, I said pith. It's delicious. Look it up on UA-cam cocina con fujito.

I tried making the following recipe -- title: How "To Make Candied Lemon Peel & Orange Peel ✪ MyGerman.Recipes" and it came pretty good, or better than expected. It was only a few hour process. It helps to find an (organic) orange that has a thick peel. I tried the "MyGerman" recipe twice, once it came as expected, the second time it came a bit mushy---maybe my heat was too high, or I used less sugar, don't know what happened. The 6 day process probably provides more consistent results. Good luck, please let me know how it goes with whatever you do.

      You need to let it dry longer, after you cook it down in the sugar solution and remove it, place it on a wire rack. Let it dry until tacky or even more dry. Then roll it in sugar. If the sugar still melts a little, roll it in more sugar and let it dry some more. :)

    Sorry I know this is a dumb question but why not just dump all the peels into the sugar and use a wire flour sifter to separate the sugar. Much faster

      They can be if you don't boil them enough. Some people like a slight bitter taste. Otherwise just boil and drain, like I do in the video until the bitterness is gone. And then move on to the candy phase.

      Hello, you need to keep boiling it and changing the water. Like I mention in the video, you may have to do it more times, it just depends on the oranges you use. Just keep boiling then changing the water, and boil more. Until it no longer tastes bitter.

    Or you can use tongs to remove lemon slices from the syrup. Save time by putting lemon slices and sugar in a zip-loc bag and rolling them around. And, sugar syrup can be used in sweetening tea and baked goods. Just saying!

      It's hard to over do it, you take them off when the peels look translucent, (a bit see through). You can kind of see it in the video, but it will be obvious in person. :)

    Tip… limes can be hard to peel. I’m doing orange and lemon. If you have a cut on your finger wear runner gloves. I didn’t. OUCH!!!!

      I agree with you, in that the lemon with vinegar is a better natural cleaner. I meant to express, and forgot, that in utilizing the orange water along after straining, and adding abit more water either tap, distilled, or purified water to spray as a lovely air freshener, or even a spritz for car care. Plus taking dried peels combined in a slightly opened bag that can heat up in the car to maintain a nice scent.

    With this item a big story happened today.
    I saw this video yesterday. Asked my dad and mom orange. They said tomorrow. Dad went and told, there is long que, I will buy evening. I distrusted him and made head ache for him. He went again for me in lock down, in sunny, in head ache, without eating his lunch. he had no money. But bought one some other country orange with high cost. I became happy and started making this. I distrusted my mom for buying oranges . So my mom got anger and not helped to make this. I did this with the help of my dad. Video said to boil the orange peel 2 - 3 times. I told my dad same. 2 times went. 3rd time he dropped whole vessel. All gone waste. My father felt bad. I know if I cry. My dad will feel even more sad. So i tried not to cry. But i can't control, I cried. Seeing me, my dad said ..I am feeling like heart attack when u cry. My dad said I will bring one more orange for u. I said dad .. it's okay. Dad got tention, called mom. Then mom made orange peel with rest things . She then doing all what I saying. Dad was watching from back, sadly. Finally mom and me did it. Tasted .........

      I kinda enjoy boiling lemon and orange peels in the sugar water, not coating and half oven or dehydrating...pretty good snack, yet definitely have to coat ginger after several boils to remove alittle over spice bite for an in between and or dice into fine peices for bread, or other recipes combined for a nice balance.

      I can't remember what type of orange it was. It may have been a satsuma , or a navel, or sunkist orange.
