    Never be afraid to do a post boil top up! It's always good to have volume graduations on as much equipment as possible for this reason!
    I don't do split batches, but have always topped up my fermenter to the recipes yield volume In order to get as close as possible to the intended ABV without worrying about mash and boil volume as much.

    Nice looking beers! I make rookie mistakes all the time, but at the end of the day you made beer...and that's a win! Keep up the good work! Maybe if you dropped out the yeast with some cold side finings it would taste a bit smoother?

    Nice video! I have been wanting to try out different yeasts for a Pale Ale. I have a US-05 vs S-33 version on tap now. Yesterday I tasted a friends US-05 vs S-04 beers. So far the US-05 beer has been an undisputed favorite. I guess there is a reason that yeast is so popular. K-97, W-34/70 and BRY-97 are on my list for future brews (I am also trying to play more with dry yeasts).
    I also recently did my first keg ferment very similar to yours (floating dip tube, spunding valve that leaked, served out of the keg). There was about 1/2 gal of liquid in the keg when it started to blow foam, so probably about 1/4 gal of beer. I am not sold on the idea, but I will try it again.

      Nice! I really like comparing the yeasts side by side, I’ve definitely learned a lot about yeast character doing it. I’m not sold on the kegs as fermenters yet either but I’ll probably try it out again.

    Appreciate your honesty. Mistakes are bound to happen when you are experimenting. I just try not to stress out about them anymore. It still turned out okay right.

    So this is a W-34/70 and US-05 comparison. Why was the beer with the lager yeast worse? Let it lager for a month. You will love the beer with that lager yeast.

      I'm sorry for the many comments. So, from what I know, W-34/70 makes a fine lager at ale temperatures. But it likes its water with low minerality. So you basically made a comparison between two clean strains, US-05 and W-34/70 and US-05 came out on top, which is great! Great channel!

      @@ElementaryBrewingCo about the rookie mistake: my last beer turned on me, I wanted to brew a Tripel and ended up with a Golden Strong Ale. Sometimes things don't go as planned.

    Nice chicken! I reduce hop harshness or astringency by not boiling it at 60 minutes, but at 30 minutes.

      I’ll try that next, I’ve been experimenting with first wort hopping so that may have caused the harshness in this one too.

    Great video! I wonder if the harshness came from your brewing salts since you didn’t use the full water volume? I couldn’t tell if you adjusted brewing salts or not, though. Either way, great experiment and video!

      Thanks! Yes I thought of all that after the fact. Could have definitely come from the salts as they would’ve been more concentrated.

      I'd let the lager version sit a bit longer... like 10 weeks in lager temp. Why? So the alcohol can mellow out. Also, dry hops, especially if used generously, can give a bit of hop burn. If you have more body/dextrans in the beer, it balances the hop. With your single step mash, the beer gets quite dry, leaving the hops "bare naked". In Czech lager diacetyl helps this dryness issue, fooling you into believing theres more body there. So in place of the saflager 34/70 id pitch bohemian and just a quick diacetyl rest.
      Sulfur is from too short fermentation with lager yeast, esp german style.

      Here is another split batch experiment for you: belgian golden ale with and without wheat flakes in mash. Feel free to hop to your heart's content. In my hands galaxy early and dr rudi for flavor have worked quite well :)

    You should make an IPA that my 7 year old daughter put together for me I couldn't believe how good it came out. I suck at making beer so I have her do the chef work

    Hey love the vid! Also if you are over gravity its much easier to correct post boil then being under. Always feel free to top off with water to adjust the gravity/volume. There are plenty of dilution calculators online to help adjust here.

    Noticed a huge amount of hops hitting the filter when transferring from the spigot, then no filter when you switched to auto-siphon... did you scrap the filter when you switched? Do you think you got a quite a bit of hops in the keg?

      Tried not to get too much. I was able to pull from the top with the siphon so it was definitely clearer. But yes I was really surprised by the hop matter and will be adding using a hop basket from this point forward because of that:)

      @@blakefaulds totally agree, when I use a hop basket I don’t feel like I get as much flavor out of the hops. But I don’t want all that hop matter making it into the fermenter either.

      I wasn’t thinking 😂 Honestly though I’d had some good wort left in the kettle on the last few brew days so I initially just thought I’ll just add less water, it will be okay. Did not think it through at all really. I’ve since adjusted my system profile in Brewfather to get as accurate as I can that way my losses aren’t as great.

    Less volume than expected with the same amount of hops will increase IBU.

      Yes, more IBUs and water chemistry will be off too with higher concentrations. Both of those things could be the culprit for the perceived harshness.
