i ate this fruit 10 years ago in Surabaya Indonesia, and fell in love with it instantly, it was moderate sweet and soft with jelly like texture, there's some nectar on the inside of the fruit when u bite into it.. it's sweet and fragrant and fulfilling and at the same time quench ur thirst.. i like the younger ones so i dont have to munch on it too much.. the flesh getting harder when they got old. This fruit has so many names, so yeah some of the annoying comments like "wait that's not A FRUIT but it's B FRUIT and this is from my country not ur country", guess what? they are the same fruits with different names!! that's all.

kalau di jawa timur namanya buah ental / siwalan. nah, bunga pohonnya (masuk genus palem) disadap terus dimasak jadi gula nira/aren. kalau air hasil sadapan bunga diminum langsung, namanya legen. dalam beberapa jam aja, si legen akan terfermentasi sendiri (karena kandungan gulanya cukup tinggi) menjadi alkohol yang disebut dengan tuak. tekstur dan rasa buah ental ini mirip kolang kaling (ketika buah sangat masak/tua), namun ketika buahnya masih muda, teksturnya lebih lunak dan berair banyak, agak manis (mirip degan/kelapa muda). kalau di jawa timur, buah ental yang tua, biasanya disajikan sebagai dawet. namanya dawet siwalan. buah ental dipotong dadu kecil-kecil, diberi gula nira, dan dikasih santan encer+es batu. rasanya top markotop. ah jadi kangen sama kampung halaman

Bisa dipotong kecil-kecil dicampur santan, gula jawa, dan potongan kecil buah nangka (opsional) menjadi Es Siwalan (kaya es cendol, tapi cendolnya diganti jadi buah siwalan), yang sekarang sudah langka yang jual (kecuali di bulan Ramadhan). well, cambodia is no-different from java then, at my town, Tuban East java, we use it same way you've described. maybe there some differences in technical detils, like we don't used it as sour wine, we had 2 other way, 1st it drink fresh under fermentation, when the alcohol and acid still low, we called it legen (javanese; sweet/nount), 2nd is we add compound called "babakan" that delay acid formation, so the alcohol beverage product didn't taste sour, this called "tuak". i guess there is bunch of similarities among nearbies countries
this is widely available in india, mainly on the eastern coast. it comes once a year. it tastes like raw coconut pulp, the kind where u drink the water and break it to extract the pulp. in Odisha its called 'Tala saja'.
In odisha, we even make sugar/ jaggery out of its extract akin to palm sugar n date jaggery et all. its even used in making 'pithas' a sort of oven baked cakes (Poda pitha) made outta rice powder, a native food of Odisha again.
You can just cut the top portion and using a spoon you can still eat the jelly. Less Wastage. And the skin consumed along with this is very healthy. Rich in fiber. It's one of Cambodian way to eat this fruit. For us , we can harvest the juice from the tree , those juice is sweet . We can extract the brown sugar from it , or we sometimes we make wine. The thing is that I'm surprised that this fruit is also available in Indonesia.

Westerners always critisize Asian for certain stuff like dirty streets food and disgusting food like brains or guys. But they didn't know that Asians are generally more disciplined, they work hard to earn living for their lives, they live life guided by principles. Especially China, mostly being criticized, I understand why but that's their way of living. Actually China invented gunpowder in the first place. Before that people only fought with weapons. So many unique food in Asian need to be known because some are so rare and some only exist in certain areas. Same goes to Asians, we are not so extroverted and open like westerners do(wearing skimpy clothing,greeting strangers,...)but we can both look at each side and learn their way of life. Maybe we could adopt some of their good habits too.

we called it Lontar. it tastes sooooo gewddd. when you put it in your mouth and then chew it, it starts burst and the liquid taste like coconut water.. the jelly is so soft and will melt on your mouth.. it is soo refreshing and yummyyyy.. in Jakarta, it's a lil bit hard to find. but once you found the man who sell Lontar, don't think twice. just buy it!!! ;)

So many unique food in Asian need to be known because some are so rare and some only exist in certain areas. Same goes to Asians, we are not so extroverted and open like westerners do(wearing skimpy clothing,greeting strangers,...)but we can both look at each side and learn their way of life. Maybe we could adopt some of their good habits too.
I have to disagree here, I have Westerner friends who are devoting to their career and family, live humble life, dress appropriate and respect other cultures. It applies to most of my friends who are from different cultures. Most people are nice except some toxic individuals, and I guess I have to respect their way of living their own life.

we called it Lontar. it tastes sooooo gewddd. when you put it in your mouth and then chew it, it starts burst and the liquid taste like coconut water.. the jelly is so soft and will melt on your mouth..
