Even after so many visits to Brazil…Moqueca is still my favourite Brazilian food…had it a few times over the years in Rio but ate it plenty during my visits to Salvador. Almost recall ordering it everywhere I went haha 😂 I think I could survive only on Moqueca, Açai, Guarana and Antarctica Original 😂

I've been to Brazil many times (my mother is Brazilian). The one time I went to Salvador (during a World Cup trip in 2014), I went to a hole-in-the-wall place for dinner one night, and they offered just two dishes. Catch of the day or moqueca. We opted for the moqueca, and it was by far - by FAR - the best food I had on that entire trip, which encompassed many different cities and regions. I've now learned how to make it myself!
I'm Brazilian from Fortaleza, LUV ALL. Living in London , missing Brazil and now very hungry indeed. Luv it!
btw Pirao is manioc flour and fish stock mixed together, thats why Steve find the taste strong its "fishy"

@@saayazzy Você não entendeu nada do que eu perguntei. Eu perguntei se há algum prato na Bahia que não leva dendê. Sacou ? Obviamente dendê faz parte da culinária baiana, porém se tudo na Bahia leva dendê, logo os sabores dos pratos são sempre parecidos, já que dendê tem um sabor dominante no prato.
Isso porque eles foram no Yemanja que a aba sendo um restaurante mais turístico, se fosse no Kimoqueca se mudavam pra Salvador 🤣
I hope you two prove acarajé: a dumpling made from bean flour, stuffed with shrimp and vatapá. It is the most famous Bahia's food.
I'm glad you guys got to go to Bahia. It definitely has some of my favorite dishes ever. I could eat muqueca, caruru and acaraje everyday and never get tired of it! Looking forward to the acaraje video!

Ivana has a very sharp taste to point the right food ingredients.
0:40 The white sand crab (Ocypode quadrata) is not edible. This dish called "casquinha de siri" is made from the swimming crab (Callinectes sapidus). There is also the "casquinha de caranguejo" which for me is more flavorful and is made from mangrove crabs. 🙂🤙
We also have a restaurant named Yemanjá here in Saint Louis, Missouri.

My mouth watered... I'm drooling over this food! I'm from Salvador ans it is about 4 years that I don't comeback there. I miss theses food sooooo much. I love baiana's food: moqueca, vatapa, caruru, farofa de dendê, xinxin, acarajé, casquinha de siri.... Oh my God!
This is my vaforite dish by far, as well as "bobó de camarão" and some 'fish moqueca'.

É muito saboroso mesmo, mas é bem gorduroso. É um tipo de comida para se comer poucas vezes no mês. Algumas pessoas têm o sistema digestivo bem sensível; então, não é aconselhado pra todos por causa do azeite de dendê e os condimentos quentes. Palavras de um baiano de Salvador...

"Moqueca de Camarão" might be better translated as shrimp moqueca. There are other types of moqueca too, the "capixaba" one is great (capixaba is how people born in the Espírito Santo State are called).
The pirão is also a very tasty food and it can be made with other ingredients too, like fish and even cow meat. My wife does a particularly good one. If you are able to find one made with cow meat, you mighr like it even more.

You should come backup to Florianopolis to have Moqueca at Rancho Açoriano in Ribeirao da Ilha
There are two types of moquecas. The Bahia moqueca and the moqueca from Espirito Santo, the estate just down south from Bahia. There is silly moqueca war between both estates lol.
Não sei se ainda está aberto, mas tem um restaurante do Sesi ou Senac aí no Pelourinho, que é a melhor comida da Bahia.
Good place to try Bahia Food. I also would go to Donana and Cabana do João.

I was waiting for you guys to try comida baiana! People say new Orleans not only looks like Salvador but the food also it's similar due to the African heritage. My guess is they use similar ingredients like Okra, dry shrimp, peppers and lots of spices, but even if it's similar for sure comida baiana it's pretty unique
I love moqueca from Bahia, for my taste is the best one. And it is not that difficult to cook. Much better than the southeast version. Dende is life. You should try the street food known as Acarajé and the shrimp Bobó.

I remember how Steve wasn't thrilled about vatapá when he first tried it in Rio, and now it's part of his favorite combination in the country! The tables do turn, indeed...
Also, a tidbit: dendê oil is also a staple in West and Central African cuisines (where the palm originally came from). West Africa was the primary supplier of slaves to Bahia, which gives a lot of cultural affinity between these regions to this day, from the liberal use of dendê to the heavy Yoruba influence in Candomblé.

I lived in Canada for around 6 months, first thing I ate when I came back was moqueca, just love it.

You can find dende oil here in Canada, but you have to search a Brazilian store. I always make moqueca… canadian winter + moqueca is the perfect combination :d

@@eduardosantos5078 o restante dos ingredientes você encontra de boa, leite de côco, as verduras etc. O mais difícil é o dendê mesmo, pq aí sim tenho que ver os sites/ lojas brs que tem aqui. Ah e a farinha de mandioca quando quero fazer pirão tb não encontro fácil, tem que ser tb de loja br.

Wow! I've been in that restaurant once and the food is so delicious. I ate a muqueca bow all alone.
Vatapá and caruru have the same base, that's why taste similar. They both have peanuts, Brazilian cashews and dry shrimp. Diferences are that vatapá has some kind of flour (bread, yucca flour or plain flour) and caruru Góes with okra.

Just for curiosity:
Yellow farofa can also be yellow if it is made from puba (fermented cassava).
Caruru has a different "older" version made with no okras, but a native wild green plant with the same name, that grows everywhere all throughout Brazil.
The crab that you eat was Blue Crab, the small one that you saw at the beach is named Maria Farinha, nobody eat them.
I was born in luxembourg but go to brazil every year and for me too moqueca is my favourite dish aswell. I had it once with lobster and i think that was the best thing i ate in my life

Just to be clear: dendê oil is actually unrefined palm oil.
The thing is that Brazil is probably one of the few places that use it for frying and seasoning at the same time. Maybe some countries of Africa do that as well.

Não é não. Gengibre nem é tradicional assim na culinária baiana. O azeite dendê é que que tem um fundo meio adocicado, além do leite de coco que vai em muita coisa. O apimentado é literalmente pimenta, pimentão, camarão seco, cebolinha.. esses temperos gerais

@@ivonete6641 pode ter gengibre, mas não é obrigatório/um dos ingredientes tradicionais como o dendê, o quiabo, o amendoim, o camarão seco.. esses são alguns dos que não tem como sequer fazer a comida sem. São os que dão o sabor específico da culinária baiana. É que nem farelo de pão no vatapá, pode ter, mas não vai deixar de ser vatapá se não tiver, já um dendê não tem como n ter.

I’m surprised that no one offered to take you to eat moqueca before you got to Bahia! Bahian food is famous in Brazil and you can get it in other states too, we used to eat it when we’d go to Paraty in RJ state. There’s a rivalry between the moqueca of Bahia and the moqueca capixaba (of Espírito Santo state), but I’ve never had moqueca capixaba and can’t comment on it. There used to be a place in Toronto (on Queen st. I think) that served moqueca and it was actually pretty good, but it was bought out for its liquor license :( I’m not sure if there’s anywhere in Ontario where you can get good moqueca anymore, but you can buy imported dendê oil and try your hand at it since Ivana loves to cook.

I'm from Minas Gerais and I also love Bahian food, in my opinion, the second best food in Brazil. Having a local person to guide you is very important!
In Minas Gerais you ate Kaol and went to Xapuri and ate chicken! Man, you went to the best Minas Gerais food restaurant in Brazil and ate chicken!!! This was insanely misguided. They should have eaten crackling piglet, bean tutu (complete), Tropeiro beans (complete, has nothing to do with the tropeiros that are eaten around, in places other than Minas Gerais), pork rack with molasses, the various types homemade sausage, among many other dishes! That wasn't fair!!!

38 years ago, when I lived in Salvador, Iemanjá was already one of the top 5 restaurants in the town. The last time I went there was in 2010, and it still kept its high quality. Moqueca is the most typical food from Bahia, but my favorite is Bobó de Camarão, which I highly recommend.
BTW, pirão is made adding mandioca flour to the water where fish or shrimp was cooked.
As you have already noticed, Bahia culture is very unique and different from the rest of Brazil. They have their own music, folklore, dance, and food.
Hard to choose between Bahia and Minas regarding food.

@@eduardosantos5078 quando morei em Salvador, em 1985, havia um restaurante ainda melhor que o Iemanjá: o Agdá. Em 2010 já não existia mais. Fiquei triste.

if you have a chance, in Pelourinho has a few restaurants who has Carne de Sertão Moqueca, is kind a of Dried sun beef used as a main ingredient in moqueca, but is really unique. Sururu is another thing who is really unique, is kind of a really small mussels, really famous for cure hangovers. Btw, for hangovers try a thing called Engov Its miracle

Yo, Ivana's taste buds are among the best on earth! (Well, obviously she has good taste, she chose me :D :D) but really, she can taste ingredients from one meal and often she can prepare the dish without a recipe. She's a natural chef
