    I use freeze dried shredded zucchini instead of bread crumbs. It rehydrates in the burger, and you do not lose any of the taste to the bread crumbs. Delicious. Do the same for meatloaf.

    Hi Carter, the reason behind cooking chicken breast to 155 degrees is so that it doesn't dry out. Once it reaches 155 remove it from the pan and onto a plate and cover with foil, the chicken will finish cooking in it's own residual heat giving you a much more tender and juicier chicken breast.     I canned your chicken soup recipe some time ago. It is delicious. My husband opened a jar yesterday and ate half of the jar. Tonight I took the remaining amount and added a pint of potatoes and carrots and also added some noodles. OMG. It was so good. Thank you for all you do. Barb

Do you by chance have a gluten free, low carb tortilla (home made or store bought) that you like. That seems to be my toughest gluten sticking point.

    It looks really good! I think you have beat my record as queen of the ten minute meal lol
    I canned and dehydrated most of this week as my poor freezedryer has developed a vacuum leak! 😢
    Anyway I roasted two turkeys made bone broth and soup! Froze the breast into slices for sandwiches, made turkey dressing freezer meals and canned 6 quarts of pot pie filling.
    Next I had 20 lbs of chicken breast tenders. Half I canned, the other half I poached in broth and they are in the freezer waiting for the dryer to be fixed. Finally started tackling the sweet potatoes 15 quarts canned. ( 1 did not seal and became sw potato custard cups) made two quarts of yummy gravy from the drippings, and froze them to go on top of the turkey breast.
    Dehydrated 2 cases bell peppers and have bread slices in now for bread crumbs. It was a busy week, but the freezer is going down and that is my goal for Dec and Jan. Hope your kitchen remodel is going well!

      Wow, Connie! It was a crazy busy week for you. Did the turkeys and the chicken tenders all come out of the freezer? That would be huge. How long to get the FD fixed?

      @@growandpreserve it is an internal wiring problem. I can't get a vacuum. I need to take the case off and silicone the wiring system. I'm waiting for an electrician to help me. Beyond my expertise. Yes the chicken and turkeys were in the freezer.

    Happy belated birthday! I pulled out venison from 2020, it got lost in the freezer. Had several packages in food saver bags, I thawed it and canned it, was still fine!!😊

    I was cleaning out a shelf the other day and came across a jar of sweet pickle relish (hold on to your hat) that was dated 7/2013 🤫🤣 Haven't opened it yet, but, it looks wonderful!

    Happy Belated Birthday, Carter! I have that same glass pot that you have on your stove. I noticed it in the last video that I watched and wondered what was in it. It looks like you are steeping tea but now I’m wondering if it is some kind of potpourri.
    Thanks for the tip on the sous vide chicken temperature. Thawing and cooking chicken breast is just such a pain in the rear that I have grown to prefer to reach for the canned instead, but that sous vide idea is gold.

      Thanks, Kari! I have cinnamon sticks, cloves and star anise simmering in the pot. Smells like Christmas. I love it. I agree that thawing and cooking chicken for a single meal is a pain. The sous vide method has worked really well for me.

    At some point, if you're comfortable with it, could you explain converting a recipe to a canning recipe? I have my favorite chili recipe and want to make sure it would be safe to PC.

    I dont know if oatmeal is keto, but I dont use flour if I can help it and have always made my meat loaf or taurines or Salisbury steak with rolled oats in place of bread crumbs or flour. Just putting it out there if its helpful for anyone! hope you had a lovely Thanksgiving.

    Always enjoy your videos, meals look so yummy. I had no idea that you could freeze roasted sweet tato. They seemed to have held their shape well. I must try this and add it to my freezer veggies in the fall for winter use. Do you freeze crookneck squash?

      I used a pack of frozen roasted sweet potatoes yesterday. Still perfect! I don't freeze crookneck squash because I only really like it fresh and cooked on the grill.

    Just dropping in to see this freezer cleansing. Carter, you may be the only other human to consciously use a spatter guard. I preach about their importance to all that will listen. "All who listen" often excludes my household. 🙄 Bravo!
    I think I have an extra 2 or 3 stored in hidden locations for an emergency. (Don't tell the FBI.) Merry Christmas! (you had me at goat cheese...wow that looks good. I'm available for adoption, but I would sneak rice on the side.. . ;< )

      Absolutely! I switched from the standard American diet to Paleo 12/1/2015, as I lost both parents in their early 70s. I experienced radical improvements in my health over the next year. In March 2017, I moved to clean keto and saw so many more improvements. In 2020, I started loosening up on most of my healthy habits. The gym closed, I was walking less and less, and finally, over the past couple of years, my diet has gone awry. I'm back on track now and feeling fantastic. I don't know if you can see the difference in how I look between the beginning of this video (shot on 12/27) and the Azure piece (shot on 12/12), but I feel like I have gone from drab and sluggish to bright and vibrant again. Energy levels are way up. Weight is dropping. Joints are better. I am so glad to be back on this journey. I am happy to answer any questions you have about it.

    Yum all looks amazing! Thinking of the Salisbury Steak, have you ever tried Porq? Its pork rinds smashed into bread crumbs. Zero carb and delicious! I get it at Walmart. : ) your birthday cake looked amazing!

      If you season the pork rind crumbs (garlic powder, etc) it totally removes the pork rind taste!

      Hey, Vicki! The kitchen reno is underway! The new island frame is in place. The bookcase and desk area have been removed. And the new appliance closet has been framed.

      Hey, Donna! It was in the 3/4-1 cup range. I usually add 1 cup to the baggies, but if I defrost in the baggie, I never get a full cup out. Sometimes I'll break it up while frozen, then put the chunks of pesto in a dish to defrost. That gets me closer to the full cup. Glad you're caning today. Have fun!

      Sweet pickles done. They were refrigerator pickles but I used vacuum sealer for the lids. Christmas gifts for my sisters and friends.

      @@growandpreserve I have made it a whole 3x in my life, all of them this year. For some reason, I thought that it would be difficult so I never looked into it. Someone that I follow made some and I was like no way, that's so easy. I have making meatloaf since God was a boy, as well as hamburgers. I didn't know that was all it is. My mom never made it so the only time I had it was at school or a TV dinner. I decided to make real brown gravy (not an envelope or jar) this time with onions and mushrooms since I had them. That was something that I only learned how to do in 2020. The dinner turned out pretty good.

      We feel so much better on keto. We've been off for awhile now, and both of us are sluggish, gaining weight, and generally feeling and looking unhealthy. Clean keto, with Paleo periods in between, is the best I've found for my health.
