These are amazing! Thanks so much Chris! I have fancied them up by putting melted chocolate on half of the cookie, for parties and whatnot. You can dip them in Carmel, white choc, peppermint glaze or schnapps glaze! But sometimes,...it is just nice to have the original!

@irishbakerabroad I baked today. Made the vanilla, chocolate, and lemon shortbread. Should have used fresh lemon rather than extract, though. The cocoa ratio is perfect for myself and my eldest daughter, as we like dark chocolateflavour, my youngest found them too rich, so for her, I would adjust to maybe 40g cocoa powder. Hi Chris could i use this recipe for shortbread apple squares or do you have a different recipe for shortbread apples squares please.
Do you have to cool the dough before cooking.?
If you use more butter or if it’s during summer and it’s very humid then yes that would be a good idea 😊
If I wanted to make chocolate shortbread, would I just replace some of the flour with cocoa powder? If so, how much? Thank you 😊
Try with 275g of flour and 55g of cocoa powder 😊☘️

It’ butter. But they do also sell an easy spreadable version which is about 30% butter ☘️
