Looks delicious, thank you. I’ll have to try this, if I can find some porgies. How deep do you typically need to go to get them out of Barnegat inlet? Do you find them on the inshore wrecks and reefs, or do you need to head out to deeper water?
We do better up north out of Manasquan by sea girt reef, but we have found them at garden state north reef about 9 miles south of barnegat and about 80 ft deep. The picture of Chef Mike holding one was right at the Barnegat (aka Tires) reef outside of the inlet about 3miles NE. We use clam for bait.
I like my porgy just baked with the first steps. I don't like it swimming in all of that sauce....I don't want to give that poor fish the illusion it's been resurrected. 🤣Thank you chef!! 😋

I didn’t think people eat porgy , I use them for bait.
One of the best fish there are. Not fishing and best white flakey meat.
