Do you find the 28 retourne harder to close compared to the 25?
I would love a 28 but going back and forth between sellier & retourne because I think the sellier is a bit boxy but worry that the retourne is tricky to manage in terms of getting in and out

The lock on both will be a bit tricky. Go for the size in terms of capacity you need and the look you want (more formal or more casual). The Kelly bag is not a fuss free bag.

Do you remove all your H bags’ hardware sticker?

Yes I generally do after using the bag for a few months as keeping the stickers on the bag could cause the hardware to “oxidise”. Hope it helps.
