  • Made from just 3 staple ingredients - sugar, coconut milk, eggs and pandan leaves for flavor - Kaya is a staple in many Malaysian homes and South East Asia. Kaya literally translates into 'rich' in Malay, understandably so as a good kaya is decadent, luscious and dreamy. Often referred to as a jam, it is actually more of a custard spread. Using Gula Melaka (Malaysian Coconut Palm Sugar) results in a dark, smoky, caramel flavor that's hard to resist. Making Kaya the traditional way is often associated with double-boiling, lots of continuous stirring on low heat or you'll risk having your Kaya curdle into a hot mess. I use to watch my Hainanese mom labor over her Kaya growing up. Good news though, I have a Kaya hack that will yield your best Kaya ever. Let me show you how.
