For this black eye peas recipe you'll need...
2 cups black eye peas (dry)
6 cups water (for soaking)
6 cups water (cooking the peas)
1 large onion
3 cloves garlic
1 ham bone
1-2 cups diced ham
1 1/2 cup coconut milk
4-6 allspice berries
4-6 sprigs thyme
1 whole scotch bonnet pepper (optional)
1/2 teaspoon salt (adjust)
1/4 teaspoon black pepper
2 bay leaf
2 large carrots
1 tablespoon brown sugar
1 tablespoon olive oil
2 tablespoon parsley (topping for the end)

made this last year with pork belly and everyone loved it, i was quick enough to get the bone and a good slab of the christmas ham in the freezer to make it up proper this year. black eyed peas and cornbread every new years day.

I decided to start my New Year's off with black eye beans pelau using your recipe to start me off. I decided to try one recipe from my homeland of Trinidad and Tobago once a month. If it sucks, I will do it until I get it right. There is no way girlfriend is going out not being able to cook for meh grandchildren like my Mom used to cook for me. Omg yes I must make this. I just asked my sister for the ham bone from Christmas so I can do Lima beans but I think I will do black eye peas instead. This would be perfect with some rice.

Raw chicken? I have only heard/known of escoveitch fish. I am pretty sure eating raw chicken (no matter how much vinegar or lime you use), is unsafe. Just saying.
I've never heard of escovich chicken. That sounds culinarily dangerous.

Aren't u supposed to add salt to peas after it's been cooked? I thought adding salt before cooking would make it tough

I would try smoked turkey. That's what I plan to do since I don't have a ham cooked.

No! Would you like to know the story of black eyed peas and rice on New year's day which is called hoppin John? It was during the civil war and the North very close to the South went and stole their food and the only thing left behind was Black eyed peas and rice this was done on New year's Eve. So the southern soldiers made black eyed peas and rice and called it hoppin John. later on people said it would bring prosperity for the new year to eat on New year's day. Please pass the story on so that I don't have to tell it 30 more times. Thank you! :-)
Too thick to be a soup. Not thick enough to be a stew. I guess this would fall under the category of cassoulet.
