Watery is fine so you can taste the ingredients!! I love this recipe because it’s healthy without all the high blood pressure/ diabetes to worry about 😂 yes smashing them a little bit more would have taken the water. But I also add bay leaves, red flake pepper to give it a little spice 😅
Grandma taught us to just wash the peas and cook it for 20 minutes in enough water to cover with no spices or salt or anything at all except for water. And it cooks perfectly. Then you start your recipe using cooked peas. 👌🏻 I make this dish .. wash abd soak rice for 40 minutes, mix the cooked peas with rice together in a pot of salted water, add turmeric for appetizing color and cook until aldente then sieve (I usually keep the rice water in the freezer for other recipes). Boil a couple of eggs and shell them. Sauté onions with butter or olive oil until nicely golden, add the rice/peas over it and place the eggs on top either whole or sliced, I like them quarters, gather some rice around them to infuse them and drizzle about a quarter cup of rice water over the mixture in the pot and cover to continue cooking for 20 minutes on lowest flame you got. Once done, turn off heat, carefully fluff with a fork to release excess trapped steam and cover for 10 minutes before serving alongside a refreshing deli yoghurt mix or Greek Tzatziki. 🤗 Enjoy.
