The tarpon I have been getting on my boat up river are that dark golden color, there have been tarpon at that small bridge where you fished next to me that one day at first light. Where is that last spill way if I may ask.
I usually use artificial shrimp, 4-6 inch swimbaits, jerkbaits/jerkshads, jigs and rattletraps. For live bait, live shrimp, pinfish, pilchards and bluegill work good.
Great variety of areas, fish, bait and patterns. Learning a lot. However, I have noticed you are fishing 'bridge' areas that are subject to the new Cape Coral regulations. Are they just not enforcing them? Or is everyone ignoring them? Specifically looking at the 31:38 location and google walking it reading the signs....
Those signs have been there for a while. I've never gotten stopped, asked to leave or seen anyone else getting asked to leave, despite seeing many cape coral cops and other city vehicles drive by while fishing.
This is getting me super excited for my trip to that area end of March. Do you have instagram? I’m coming from Canada and this is all new to me- I’d love to ask some questions if possible!

Try adding a Popping Cork.
I used to use popping corks years ago. I'll have to give them a try again, maybe during the winter when more trout go up into the canals.

Good videos, but please try not to drag the fish in the grass. It removes the protective coating and can cause death to them.
