I was eating a pound of spinach a week, raw. Plus a couple handful of walnut halves a day, plus almond butter on my celery. Also doing keto and intermittent fasting, plus 6 minutes of intense exercise a day. I'm 67. I had a very slight dizziness some of the time. I quit all high oxalate food, and right away the dizziness ended. I will be very careful to minimize(or avoiding) high oxalate foods. That is my experience.

Pound of spinach and multiple handfuls of walnut is definitely way too much but good thing you caught it sooner than later.
If you still want to consume foods like walnuts and spinach there are several ways to reduce the oxalates. You can boil spinach or soak walnuts in water. That will reduce oxalates by a lot. Hope I helped and good luck!

The nature of oxalates is complicated and often not fully accurately represented. The body can make Oxalate endogenously as a result of excess sugar as a biproduct of glycolysis, the glycolytic enzymes and subsequent enzymes that interact with glucose, pyruvate and acetate can effectively create Oxalate from Vitamin C as it is molecularly similar to glucose.
the metabolites of Oxalates like methylglyoxal are typically broken down by enzymes produced as a biproduct of glycolysis like glyoxalase and can be broken down by glutathione and harmlessly excreted, or they can ultimately contribute to AGEs or Advanced Glycation End products that have been implicated in contributing to several metabolic diseases.
Most dietary oxalates will bind to calcium in the gut, if you've eaten enough calcium to bind to all of the oxalates, and will not absorb through the intestine. However, people have been hospitalized and even have died from oxalate toxicity after eating things like Rhubarb, Sorrel soup etc. When oxalate crystals deposit in the tissues of the body it's called oxalosis, and it can cause more oxidative stress and damage, and of course calcium oxalate deposits in the kidneys are also known as kidney stones.
The reasons why some people tolerate oxalates better and some are hypersensitive are not fully understood. It's likely multifactorial: The diet is deficient in calcium to prevent oxalate absorption in the gut, their diet is high in carbohydrates and they're producing more endogenous oxalate than normal, they have altered genetic expression and lack sufficient enzyme production to break down the oxalates, they're deficient in magnesium and vitamin D so they have excess free-floating calcium in the blood for the oxalates to bind to, they're deficient in glutathione because of certain medications and things that deplete the body of antioxidants like high fructose diets, smoking, drinking etc.
It has been suggested that the benefits of Manuka Honey are due in large part to the naturally high occurring methylglyoxal content of honey from the manuka flower. the proposed mechanism of action is that this potentially toxic oxalate metabolite is tolerated by healthy cells and not by unhealthy cells, or by pathogens like certain bacteria that take up the methylglyoxal and lack the enzymes to neutralize it and can kill those defective cells or pathogens. A similar mechanism is proposed behind the claims that ESSIAC tea can fight cancer. All of it's ingredients are very high in oxalate content.
So when you see people arguing about are Oxalates good or bad for you, the answer is not as simple as yes or no, but potentially both depending on certain dietary, lifestyle, and genetic factors as well as your overall metabolic health.

    • @mikekumaus4098
      @mikekumaus4098 5 років тому +25

beware of the logic "I've never had a problem," or "I've never had an issue." because many of these things are chronic conditions which take years and decades to manifest. Nothing is ever a problem... until it is.
people think "I've never had a heart attack therefore I don't have cardiovascular disease..." but cardiovascular disease doesn't start with a heart attack, it ends with one, and by the time you've had one it's taken years or decades to finally culminate in a potentially lethal event.
type 2 diabetes also doesn't start with the failure of the beta cells in the pancreas and being dependent on exogenous insulin, that's end stage diabetes. It takes years of damage that we ignore the symptoms and telltale warning signs and shrug them off as no big deal, or mistake them for being different problems of their own.
kidney stones can form over years and decades before they're problematic and people think it's something that JUST happened, "I've never had a kidney stone before," well just because you never had one break loose and damage the kidney, obstruct and damage the urinary tract, the bladder, urethra, etc. doesn't mean you're not forming stones...
so be careful with that very vague and generalized logic based on the casual observation that since you don't yet have end stage diseases and conditions therefore you don't have a problem.
it's also a failure of logic to think the body's mechanisms to maintain homeostasis will just take care of it. if that was the case we would be able to drink unlimited amounts of alcohol, eat unlimited amounts of carbohydrates and not get diabetes, fatty liver cirrhosis... but you all know that's not the case.
the liver does produce gluconeogenesis enzymes to convert certain amino acids into glucose, but this is a survival mechanism, not a homeostasis mechanism, and it's metabolically expensive. for that reason, the body only does this when there is a demand for energy. glucagon is the hormone that signals for gluconeogenesis, however it also signals for the production of lipolytic enzymes that break down the body's stored fat and then the liver converts those into ketones for energy, which is much more energy efficient than Gluconeogenesis, and the presence of the activated fatty acids in the liver turns off the production of Gluconeogenesis enzymes.
this is why you see people who do extended fasting, in the beginning there is a period of gluconeogenesis and a small amount of muscle wasting, but once ketosis starts, it actually preserves the muscles or is muscle sparing.
people think of the body too simplistically, like it's a computer where if I push this button and it does that. Rather, the entire body and all of its systems are driven by hormones and enzymes that are more like a game of mousetrap or one of those elaborate setups of dominos that starts with tipping over one domino and results in a complex chain reaction in order to achieve an end result...
think of nutrient deficiency like missing some dominos in there, toxicity like having a bunch of random dominos where they don't belong, obesity like have a ton of excess dominos that you don't know what to do with, and genetic mutations like parts of the domino setup have been moved around and don't fall in the sequence...
this is also a simplistic analogy, because think of this one elaborate domino setup, then realize your body has many, many of these happening simultaneously that are all interconnected at crucial junctions... but it's a step in the right direction for people to get them appreciating the complexity of the body and it's processes and systems, and why proper health and nutrition require a holistic approach, and certainly much more consideration than people give it based on their observation.

The problem is not simply the chelation of minerals. The problem is chronic accumulation of oxalate in the extracellular space and intracellular compartment.
This takes place over long periods of time and is not immediately perceived. Hence, oxalate accumulation is an insidious process which eventually can culminate in a variety of chronic health conditions which often involve pain.
Mineral chelation is primarily an issue once someone has adopted a low oxalate diet and is dumping heavily into the blood.
Also, there is no evidence of beneficial roles of oxalate in biochemistry. It is a waste product which is generated endogenously in small amounts, but in higher amounts under conditions of oxidative stress and nutritional deficiency. It is misleading to suggest that endogenous oxalate production might play beneficial roles, as this is not consistent with any existing literature

  • @Vitatalks
    @Vitatalks 5 років тому +28

This is why plant based foods are not first choice foods, they are loaded with anti-nutrients like Oxalates. Plant based foods are also a source of phytates, these also chelate minerals and reduce their absorption. All sorts of traditional food processing methods were developed to reduce anti-nutrient levels in plant foods, like fermenting, sprouting, soaking etc. Unfortunately these methods have been forgotten, and people eat these foods in an unprocessed form, this is detrimental to nutrient status. Animal products are so beneficial to health because they do not contain these anti-nutrients, and they are nutrient dense, this is why they are first choice foods!

Would you eat mercury in a moderate amount or a little round-up? High oxalate foods are toxic and they make you very sick... Never eat them! I know because I ate a ton of them when I was juicing and eating almonds and peanut butter. "Anything in moderation"does not apply to oxalates.

It's an interesting thing... Your Liver produces Oxalates in the same manner that it creates Carbs for your body. You don't need to take in exogenous sources in order to have your body regulate balances/ratios of certain components. The body has so many mechanisms for maintaining homeostasis. I don't think the logic of "your Liver produces it, therefore it's good for you" is correct. Your Liver does it for a purpose. If you just start taking in exogenous sources of oxalates, it would be the same thing as eating a bunch of Rice for a source of Carbs, instead of relying on your Liver to produce it.
You don't need to have a certain amount of veggies every single day, like what is most commonly recommended.

Not all leafy greens are high in oxalates. Just certain ones like spinach and chard. Also, many women are not getting enough iron, so that is not really the problem of iron chelation--it's about the absorption of iron which is more readily absorbed from animal foods. And from what I have read, chelation aside, it's the physical structure of the oxalate that causes damage--that they are essentially non-soluble sharp, dagger-shaped crystals that damage cell tissue and the gut lining.

Thank goodness for Sally Norton, as well as a neurofeedback doc I am working with, or I wouldn't have pieced together what was going on. Within in 2 days of cutting out greens (chard, dandelion greens, kale, beets greens), as well as the chia, cocao and macadamia nuts, ALL of my bloating eas gone. And, I dont have to take as much magnesium. Just proves that oxalates were my cause of never ending mineral consumption. Just can't agree with you on this one, Thomas. The worst garbage and offenders are: spinach and parlsey. Spinach and parlsey contain 1000mg and 1600mg of oxalates per 100g, respectively.

Question: would oxalates be affecting menopausal autoimmune intermittent-fasting- regimen woman who at the same time is confined to sitting? 1 green salad and 1 green smoothie daily with plenty of water. And by the way never had 3-month-looking bloating issues before age 50. Curretly take ACV 2X daily and bone broth too. Sounds complicating - I know. Help..suggestions !?

I think one of the points is, unlike all the other plant toxins, oxalate accumulates in the body. Most people have probably been over-consuming oxalate for decades by the time they are watching a video like this. Within two months of lowering oxalates, my sneeze-induced urinary incontinence, intractable since my late 20's, is *gone*. I had a cold recently, sneezed about a million times. No peeing, no concentrating hard, no kegel-ing. It may take people time to dig out from under the years of accumulation.

In india much of its population is vegetarian but they eat a variety of foods at least once in a day called thali( meaning platter) typically consisting of a cooked veg, raw veg, lentil, pickle, fried chips, desert and a home cooked bread.

I also heard candida and mold increase internal oxalate load - (because they contain oxalates, or make them?)
I take beta-glucans to try reduce this problem as I have kidney pains when I eat too many oxalates, also drinking lemon juice and potassium citrate, acv, himalayan salt mix daily.

ser keto, look also into "lectins" found in some vegetables. the so-called healthy veggies, mind you. some experts are saying to stay away from these since they cause bloating, digestive problems and other health compromises. Jean.

@@Crepitom Agreed. Carnivore diet doesn't resolve root cause of oxalate absorption, which can be either leathy gut, IBS or lack of enzymes that break down oxalates. Plus, carnivore diet can lead to other kind of health problems.

The only high oxalate food that I eat is dark chocolate (and cocoa). But I hate spinach like a plague. First of all, it tastes like a metal wrench. It leaves a strong metallic taste in your mouth that won't leave it. The second thing is - it tries to look like a green veggie, but it is unappealing. It is disgusting and... I don't have another words how I can explain disgust of spinach. The alternative is lettuce that contains little to no oxalate + it doesn't leave a metallic taste in your mouth (it has a best taste when you pour an apple vinegar to it). Next food is Swiss Chard, which I also hate. I can't even look at that plant (not to mention eating). Then comes beetroot. Beetroot is tasteless and tastes like a nothing. It doesn't have any taste, any flavour. But I eat apples, bananas, strawberries (some sources say that they contain oxalates, while other say that they don't contain oxalates - I don't know in which source to believe, but I assure that strawberries don't contain oxalates), and other fruits. But one is sure: spinach, Swiss Chard, Beets, dark chocolate (which is only high oxalate food that I eat), and some vegetables contain oxalates. The spinach is the worst offender - it contains more than 1000mg of oxalates per 100g (and to add salt to injury, tastes metallic).

I am so tired of all these nutritional camps. Everyone just wants to feel in control, so they look to the things that they can control as the source of the problem."If it's not food, then it's not in my control". All this back and forth arguing about minute details serves no purpose other than to encourage fear of food and disordered eating. Also unnecessary guilt for feeling responsible for all their health concerns.
