I live around the corner from the hotel and restaurant that originated the Caesar salad, Caesars Hotel in Tijuana, Baja California, México. It's on Avenida Revolucion near Calle 5ta. They also make a pretty good old fashioned.
Those croutons look amazing. I'm not kidding. The ones we get in the restaurants in my town look like boring gray cubes!! They are tasteless and hard as rock!! And the shocking thing is that they are usually part of relatively expensive meals!! So seeing this was encouraging. 😊 Maybe they don't have to be as terrible as I always thought they were. ❤

Eh. For me, nothing will ever beat a simple greek style salad where you throw cucumbers, tomatoes, red onion, optional peppers, feta cheese and olives in a bowl and then just salt it and douse with olive oil and balsamic. So simple, so damn good.

best caesar salad ive ever had came from restaurant cadet in montreal. pretty regular caesar salad but they season it with a bit zataar and they also put green apples in it. served with lamb chops and a demi. incredible dish.

That’s the way Caesar Cardini originally served the lettuce. His dressing was quite different, though, never using anchovies, and including coddled eggs.
I've brought this up many times and I think the majority of people refuse to believe that anchovies are the secret ingredient in caeser salad dressing, but they are.
Ok so, make a salted garlic paste, add one anchovy. Then add that to a mixing bowl with one egg yolk, Dijon mustard, juice of one lemon, pepper, then slowly whisk in oil until it’s an emulsion. Then add grated parmesan cheese. Just in case anyone missed it.

Whenever I don’t have anchovies (so, all the time 🥴), I use fish sauce and a few dashes of Worcestershire. Works like a charm.
I personally cut my vegetables so I can take a bite with a fork, but monkey mode salad also works :)
