Chicken Water Balloons? Or Beer Can Chickens? You Decide! | Kosmos Q

  • We like to mix it up around here so we called back to an old absurdly redneck recipe...the Beer Can Chicken. Now there are many ways to prepare these little moisture bombs but none better than the most primitive and clean-burning El Rey stick burner. If you’ve seen it, then you know. Its heaven on a golf cart chassis. We polished off four of the biggest birds Wes could get his hands on and they drank that Coors banquet like it was their last meal. I’ve never seen moisture retention like this on another smoked chicken. These were legendary. Everything you need to make some of your own is right down below, So get a move on!
    Recipe:
    4 - Sizeable whole frying chickens. (frying chickens already have the neck and giblets removed, if you like that stuff, grab the other whole chickens in the cooler the packaging will tell you everything you need to know.
    Parkay squeeze butter or another sticky agent to help the rub stick.
    Kosmos Q SPG Rub
    Kosmos Q Dirty Bird Rub
    Coors Banquet Beer (or brew of your choice)
    Some nifty stands to keep everything upright so you don’t have any spillage.
    Step 1 - Unpack your birds and give them a good rub down in some Parkay squeeze butter.
    Step 2 - Season them WELL with the rub of your choice and try your best to not complain in the comments, because we don’t really give a rip.
    Step 3 - Fill your stands with Coors Banquet, (or shimmy the cans into your stand)
    Gently impale your chickens with the stands and crack all the funny jokes you want to yourself or out loud to your unwitting friends and family and make the most of this opportunity.
    Step 4 - After cooking these at 300 degrees for about an hour, check on your progress and slip an instant-read digital thermometer into the breast of the chicken.
    Step 5 - Once the breast meat reaches 165 F internal temperature MAKE SURE you check the temperature in the thigh meat as well. Chicken must be cooked to 165 throughout otherwise you run the risk of some nasty foodborne illness.
    Step 6 - Once the thigh meat has reached 165 F pull your chickens and let them rest under a foil tent for at least 10-15 minutes.
    Step 7 - Glove up and pull the meat off of the bones and season the meat once more if you so desire.
    Step 8 - Serve this glorious drunken foul to your friends and marvel at how much beer both you and the chickens drank throughout this whole process.

    A thin mustard layer is used for ribs and brisket to hold on the rub.
    The mustard flavor cooks out.
    Don't care for it, leaves a paper like layer on the meat.

    I love using mustard as a baste. I actually use mustard as a marinade! Add Mustard and a little Maggi season sauce onto chicken wings. Let sit for a couple hours. Then add lemon pepper, garlic powder & cayane and grill! So good! 🤙

    Next time try putting some seasoning in with the beer. It seasons the inside while it cooks. Another great video brother.

    Thank you for emphasizing the importance of avoiding salmonella when dealing with chicken. I suffered a bout of salmonella from cross contamination at a restaurant. It knocked me down for over a month before we could find the correct antibiotic to kill it. I still do not process certain minerals well as a result of it and it was over 20 years ago. There is no one on earth I dislike enough to wish on them . So, thanks again for stressing food safety!

    I do a brine with beers for beer can chickens for 24 hours. Always had good luck. Want to try this balloon method.

    You should place those chickens in a gallon ziploc bag with a beer over night. With your ceramic beer holders you can then pour beer from bag into ceramic holder ( for less waste) will add a hoppy beer flavor as well. I promise you it is soo much better when soaked in beer over night.

    Nice job!! That's pretty close to how I cook them on the Macdaddy compound!!
    I put a tray of water under them to catch the juice to make gravy or broth.

    I marinate over night in lime/lemon juice and beer with seasoning and then season before smoking it’s the best we call them drunken chickens.!

    I bought all the rubs. Used SPG, Texas Beef, and Cow Cover on the ribeyes last weekend at the lake. People lost their minds. This weekend gonna do some beer can chickens. I need to buy a 50# bag of SPG though. Burn through that quick!!

    Clear juice does not indicate done.
    Cook the breast to 158-160 and let it rest. Cook the thighs to 165-175 and let rest. Juicy chicken, no brine

    Dude I just got the rub you sent me, I thought you were being too generously applying the rub. I didn't use as much as you did, But it tasted so good I doubled up on the next steak. Unbelievable how Awesome this stuff it is. Texas Beef and Cow Cover forever man. thanks for educating us idiots on how to really enjoy steak. Man I am going to order more soon, wish I had a grill.     That's the best thing to do cook your chicken right to temp. But I still wash my chicken I just do it outside not in my kitchen
