I think you're on point to suggest the rice. Rice and beans are always the way to go to extend that budget... and elevating the beans was done outstandingly in your challenge. Everything looked absolutely fantastic, Maria. What a smart way to use those carrots, I never would have thought of that.
ELEVATION was the word I'm looking for. Some of these budget challenges are totally necessary and totally cool but look so broke and sad. And I'm sure a lot of us have been there but when she showed that roasted sweet potato with the chili over it it looked like a 5 star michelin dish. If you only have $10 to eat for the entire week, having beautiful food is kind of thing that can Really make a difference for your mental health. WOW!
I like to use powdered Goya Ham Bouillon in my split peas soup. Lentils on toast...beans/Soups,Ramen..there are 40 ¼ servings for $2.48 at Walmart (April 2024)
@@michellejugao4091 basically a simple syrup. Brown sugar and water, heated until sugar melts. There are different ratios of sugar to water: depending on the thickness you’re going for. Or brown sugar melted with a bit of butter, would work too.
Love this! You could always buy a couple packs of the ramen noodles, chicken or beef flavor, and use the bouillon packets from those and use the noodles for a different dish like vegetable stir fry, or in the soup you made! I love the chili sweet potato idea!
I made your chicken adobo recipe and it was so easy and so yummy, thanks! Now I have a lot of adobo seasoning left and I feel like it would be really good if I didn’t have chicken bouillon or salt or onions and garlic. Your $10 budget assumes you have nothing in the pantry, my $10 budget includes things leftover from multiple Meals With Maria recipes. Thank you for improving my meal selection, my pantry and my food budget.
Excellent video! I love this...please make more. We need this so badly nowadays with food prices skyrocketing. Your use of the ingredients was very creative, as well. I really enjoyed your ideas. Rice definitely would have helped to make some of the meals more filling.
Sweet of you to be honest about not necessarily eating the foods over the 7 days. People do this all the time and I'm pretty sure they don't either :) You are looking happy and healthy. 43K Yeah!
I appreciate all the work you put into your videos. These are great and I also love that you make real food, not just canned or out of a box and that you try to consider the best nutrition you can purchase. Enjoy your day. Catherine
I really have never had to be so extremely concerned about my budget ....you put things together that I never really thought about.... Really appreciate the way you think about others and what they may not have access to....BTW I love your music in the background...it seems very Marie!♥️♥️♥️
Maria, I have been so fortunate in my life to never have been food-insecure. But it does my heart good to see you so compassionate to share these videos with those who are. Thank you!!
I have a basic oatmeal pancake recie that is 2 eggs, 2 ripe bananas, and 1 cup oats. Adding carrots and cinnamon would make them absolutely incredible. Going to do that ASAP...and maybe some raisins simmered in syrup for the top?
I would add chili powder into the chili, because I always have it on hand. Beans and rice make a complete protein and the addition of the rice would certainly bulk up the dishes for the week. Hot rice with butter, sugar, cinnamon and a little milk makes a very hardy breakfast, especially when it’s cold. Love this video!!❤❤
Surprise surprise! You did it again. Very fantastic! All of these budget meals as you call them are my daily plant-based meals. Smoked paprika is definitely a go to spice if you're missing the meat or just in general. The substitution of rice instead of bullion is an excellent suggestion. Also using the Bean Bean broth or aquafaba is a great flavor enhancer for free!
Loved the "put your fat pants on" sign.... would make a great t-shirt... Very good video! I subscribed. We Seniors need budget/meal help, too! 🌞 Blessings to all from Central Florida.
Everything looked delicious. I agree, I would have gone for the rice and eliminated the sweet potato (not a fan). Or another alternative would be to swap the sweet potato for white potatoes. Cubed and added to the soup and served mashed with the chili will also bulk up the meals. Great job!
So awesome that you include these recipes for those that are on an extreme budget 😀! I will be making some of these definitely. My family loves sweet potatoes and I had never thought of putting chili on them. So creative. Would enjoy some more of these recipes.
Excellent choices for nutrition, vibrant color and taste. I did not do a calorie count. If the rice was added, it would up the bulk but cut the nutrition if white rice is chosen. Bullion is a kitchen staple for a lot of people. With rice, chicken bullion, 1-2 mini carrots, teaspoon of red onion and 1 tablespoon of tomatoes; you could have a simple dish with no spiciness. Just a thought. But with a $10 budget, something has to give.
@@MealsWithMaria yes, using the same ingredients you could go spicy one week and Italian the next to stave of boredom/sameness. I think with one can fire roasted and one can not, a person can save up to buy chicken quarters on sale/markdown for $4.90/$5 for 10lbs. It’s amazing how quickly change adds up to a targeted amount.
I would just like to state that I think you did a great job! Everything you made was simple, gave good vegetarian options, and with a few swaps could easily be made GF and/or vegan if needed. Great channel!
I recently bought an 88c bag of mixed vegetables from Walmart. I boiled 1/2 the bag with the flavor packet from 2 Ramen pkgs. When done I added the Ramen noodles. A $1.00 lunch for 4. I really enjoy all your videos. Have to try the carrot cake pancakes. All dry beans are sooooo very good. Unlimited options. Your boys are so cute.
I really appreciate the budget videos. Being in a home of 3 adults two of which are unable to work at this time, I am always excited for budget ideas. I can’t wait to make the pancakes! And I think I’ll try the bean soup too! The super cold weather is due to start this weekend so I am definitely looking forward to soup season
Back in the day (I'm talking about the late 50s early 60s) when my mom made bean soup she always put the beans in water and brought it to boil - drained it and then did the same thing 2 more times (that took the place of letting them sit over night)
I'd never heard that one! Quick cook method says boil for a few minutes and let sit for an hour, then cook an hour +. I tend to just use my slow-cooker overnight😊 easiest way for me, Lol.
In my area... I literally do not think this is possible. Bread is $3-6 a loaf. That's including store brand... rice is around the same for a 1lb bag. You literally cannot get anything in a store where I'm at for less than $1.70 (even literal expired food is worth more than a $ where I am at)
Maria I am 76year old widower and can only spend 50.00 a month for groceries. So your 10.00 a week was exactlly what I was looking for. I have no car and so I can not get to a food bank but their is just me and I am doing great on 10.00 a week. But I do spend 50.00 at the top of the month because I have a neighbor take me when she shops.
Maria... excellent video! You may have saved someone who was feeling desperate and didn't know what to do...I commend you for doing so much work and sharing this with those in need...God bless ♥️.
Love your idea's to help families! Wish I had these resources when my kids were little❤ One thing I did learn was to stop thinking we couldn't or didn't deserve to make enjoyable, tastey meals on a strict budget! Creative thinking is the key.
I’ve done it. Cannot eat beans due to legume allergy, so rice & beans is out for me. $.81 for quick oats = a week’s worth of breakfasts. ($1.28 for 11 serving canister.) Add cinnamon and sugar from pantry $1.00 store brand bread 20 oz loaf $2.72 for 4 cans of Soups = 8 servings, at 34 cents each. Add handful (2 oz) of rice to soups $ .82 for lb of rice $2. (2) rice sides (diff flavors) add 4 oz rice to this to extend it = 6 dinners, 3 ea flavor $1.36 for (2)cans of tuna, add to rice side for protein $ .35 stick of margerine ($1.40 for 4 sticks) to butter bread
These recipes sound great 😋! I love soup, I'd have to find something else for my daughter to eat though, she has food sensitivities. (Texture and certain foods, makes it challenging to feed us all the same thing). I wouldn't have a problem eating the same thing all week, we can change it up by adding other things like making chili-mac from chili😊
People are! I am teaching my children how to do plain basic things that people prior were doing but have not due to modern conveniences. Like for example making our own laundry soap. Or actually making your own bread.
Hats off to you. It's really hard to stretch money to do what. You done can't wait to try carrot pancakes never would I thought to use in pancakes 😋 God is Bless
Something I don't see a lot of people do with rice leftovers; rice pudding! Super easy to eat chilled or hot for breakfast or dessert and very filling.

If you plan to add something different every day to the bean soup it helps to eliminate food fatigue and extend the soup for about nine days.
Instead of store bought syrup, if you have some brown sugar on hand, you can make brown sugar syrup by adding some water. .

I smash up ramen noodles, in the package, before cooking. Thanks, Maria!
Good idea!
I put chili over ramen noodles with a sprinkle of cheese if i have. I call it redneck chili 3way.
Yumm!!!
WOW good job!
Cute kids.
Thank you!
Beans beans beans.
I want to recreate the pinto bean soup. How big of a bag did you get and do we double everything in that recipe? Kind of confused on this part
1lb bag of pinto beans , but I just doubled all of the ingredients except for the tomatoes

Do you eat the skin of a sweet potato?
I do, especially if it's baked in the oven and a little crispy.

please keep individual ones coming it's so hard to think how to cook as a widow. I think i've gone to hoping meat and salad will last and eating that
