    A few months ago I hit a very tight spot in my budget. I had 30€ for a whole month to spend on everything. Gas, food and other needs. I had other tight times before, but this month was really tight, because of other bills pouring in. So I hardcore shopped my pantry and freezer. I get fresh fruits at work so I only bought the cheapest veggies I could find and got through that month without going hungry. That month made me appreciate all I have so much more and now have my eyes open for people who are struggling. I had only this one month, others have this every month 😞

      Very similar in western New York... $24.28 (with larger packages of the dried items). Luckily, most of these items are great to have on hand at all times. I would only need to buy bananas and a pumpkin, so I could make these meals for free (sort of)!

      Great idea!
      Here (Munich, Germany) I'm at 21,76€.
      This was fascinating! Actually I have spelt spaghetti, because they where WAY cheaper. Also they didn't have dried chickpeas online and a can is 1,29 - where I know I can get them for 49 cents at Aldi, or just use dried. The organic lentils were the cheapest, also the organic lime had the same price as the non organic lemon!

    Congratulations! Well done. I am so delighted to see a young woman and mother being so practical. I am a granny vegan and am always distressed when I hear people complaining about how expensive it is to “eat healthy “ . I am close to 80 and have raised my family on a tight budget always able to feed them healthy tasty vegan food. With this video you show folks how to do this. Wonderful indeed! btw you have a darling ❤little boy.

    £12.70 here in the UK for your shopping list as a comparison! And for all the dried goods they’re 500g instead of 300g! Great video with great inspo, especially for us in the UK in a cost of living and energy price crisis :)

    This was inspiring, since we use over 250€ on groceries in a week as a family with two toddlers. (Food prices are very high here in Scandinavia.) I tend to go to the store whenever I feel one or two items are missing but I should just get more creative with the remaining ingredients!

    Love the recipes! So healthy and easy to cook. Loved how you used red lentils in your marinara sauce to boost its nutrition and volume. And that red lentil and pumpkin soup is a winner. I also make a similar soup with lentils, butternut squash and kale. So delicious:)

    Great food as always, simple, enjoyable, affordable. I actually make exactly the same pumpkin soup and lentil stew/curry/marinara thing on weekly basis too. I have to make this bread though, looks gooooood.

    do not throw away the pumpkin seeds...cover with oil, salt and soy sauce and roast for great toppings for salads/soups...I really enjoyed your recipes--they look delicious...great ways to use a minimum of ingredients...thanks for the good ideas...dts/usa

    It all looks wonderful. I make your pumpkin soup with butternut squash instead of pumpkin. I add chic peas and chunks of roasted sweet potato. So good. Thanks for the recipes!!

      You may find 'onion skin tea' a useful search... It does not have a strong flavour, its very nutritious and basically free.
      If you cut off the top of beetroot, carrots etc you can regrow the greens and use as salad greens.
      Lots of videos on yt with instructions :)
      Search 'carrot greens'.

    I'm in Pittsburgh, and I put in everything except the chickpeas and lentils (allergic to legumes), and the spices ( already have) and it came out to 20.51. Great video!

    Wow that looks so good!!! So nutritious. If you keep bananas in a bunch and keep the top stem covered it slows down ripening. I thought nah!! But I tried it, and it worked!!

    Fun vid! Thx! I love cooking this way, but like you, I enjoy eating more veggies than this. I used to shop once a month on a whisper of money as a young mom. Yes, monthly shopping with occasional produce runs in between is better because you can work things to afford #25 bags of staples to use over several months. Bulk buying is much less expensive and allows for more variety (and also more fresh produce) without using more money. Frugality was necessary for my large family at first but now is my hobby.

    A tip for inexpensive whole wheat flour - get Atta flour. It is finely ground whole wheat, it works well in baking cakes, muffins, flatbreads, it’s like a whole wheat pastry flour. It has a slightly different protein content because of the type of wheat it is made of, so it doesn’t work as well by itself for baking a loaf of bread, as it comes out a little flat. But you can combine it with a bit of high protein wheat flour to make good rolls and other yeast bread.

    Hi, not sure if you're aware, but chick pea water (after cooking them in it) can be used as an egg substitute, or as a vegan whipped topping if you add sugar and vanilla. 🥰

      Yes! I love using aquafaba, but the aquafaba I get after cooking chickpeas doesn’t seem to be the same. Maybe I need to simmer it for a bit to let it thicken??

    So I’m not actually plant based but I found your channel the other day and you’ve inspired me to incorporate more veggies in my diet. I have nearly all of these ingredients so I want to give these recipes a try. I’m counting macros and I’m trying to get 130g of protein a day. I’ve noticed that vegan food is carb heavy although there is still some protein. Would nutritional yeast or tofu work in the taste of any of these meals to help boost the protein content? Thank you so much for your content! I bought your book and I’m looking forward to learning more to expand my diet.

Nutritional yeast would be great in or on the marinara sauce and I would have loved baked tofu with the soup or a tofu scramble with nutritional yeast to pair with 1-2 pancakes.     I don't use oil at all so I saute my pumpkin seeds in a bit of tamari, when they are sauted I lightly salt them, and add a bit of lemon pepper, You did a great week your $13.89 priced out at $24.69, I just priced everything out at my least expensive store online.

      It was my favorite meal for sure! And I know!! I’ve actually been loving frozen Berry oatmeal so I think I’m off my chocolate kick for a little bit…didn’t think it would ever happen!

    have you considered if sourdough would be another way to save on bread while adding a lot of flavor? and it is healthy, too. of course it depends whether you like sd.
    You seem to be a very good planner and cook. I can smell it all!

      I love sourdough and just recently became a sourdough mama! I just didn’t include it because I figured more people bake with yeast so I wanted the recipes to seem attainable for more people ☺️

    Hi there. A lovely week but please remember to add in the cost of a B12 supplement. There is also no vitamin D too. These nutrients will cause serious issues if not addressed long term.
