I flick my stick and my transitions are just as smooth as yours. It's mostly personal preference, but you can be smooth with flicking as well. Good video though 👌🏻
The 2billion is a money mod but for the console player buy the car lumberjack get a fast racing tune and play time attack and do the west coast arena you can get around 700k if you do it within 25 seconds

toe is what makes the tires go outwards an inwards. toe in rear make car go slower (i think) and toe in front can give more angle
In drift builds the ideal tuning is toe out front and toe in back.
