Stainless steel pans are incredibly versatile and durable pieces of cookware, but are not a popular choice when it comes to searing a steak. While many may reach for a cast iron skillet to cook a steak on the stove, you can cook an equally delicious piece of meat in a stainless steel pan with the right technique. We enlisted Anthony Vitolo, the executive chef at Emilio’s Ballato in New York City, to show us how he makes a perfectly cooked steak in a stainless steel pan. All you need is your steak of choice, some salt and pepper, butter, and a stainless steel pan.

This doesn't seem right, burning the butter as you sear, and basting burnt butter back on? Start with using clarified butter/avocado oil/whatever high heat tolerant fat you want to sear it and it won't burn, and you get a better crust too. Save the butter for the end to finish/baste steak before it burns or at a lower heat. I just ate steak this way tonight, finished it with thyme, garlic, and butter, it was great and not burny.

Woof. You should wait for the pan to get really hot- when you drop water into it- it should bounce around the pan, tiny balls of water, that’s the secret with stainless steel. Also, ghee would be better so as not to burn, add butter close to the end. Lastly, season higher and more evenly, after patting meat dry(super important).

Had friends over for steak and cooked them (the steak, not my friends!) in my stainless pan using your method. Added carnalized mushrooms and onions on top. They were blown away! Delicious! Thanks a lot!!

You get a better crust when you dont stew the steak, like 10 grams of butter wouldve worked way better then add some more before you flip. Otherwise a flattop grill and literally any style you think of will get a crust, yes even flipping 20 times

Ok this is probably gonna be the last time I'll watch a food insider video but i just wanted to say that this is a way to cook a steak but it is not ideal at all. To get an high enough temperature to sear a steak properly without overcooking the inside, the milk solids in the butter are going to burn. A stainless steel pan is nice because it conducts and holds a lot of heat which would be good for another fat like oil but in the case of normal butter it's just going to burn. Ik i didn't put a meme or anything i just didn't want somebody to try this and then be disappointed when it doesn't taste good

Please, no one follow through with this and make a steak like he does. You never use butter to sear a steak- or any meat for that matter. Unless it's clarified butter, only use butter to finish off a steak. Otherwise, Itll turn out burnt and blackened like his did. Also, he didn't mention patting the meat dry, which is essential to get a decent crust on any meat. I'd suggest looking up reverse searing, dry brining, and other methods for the perfect steak

If you do it correctly, it’s a great way to cook a steak using butter. It’s supposed to have a crust like that. It’s not burnt. Add garlic and thyme, you really got some great flavor.

I have a question. In using your brown-butter method for searing a steak, I saw there was smoking. I thought it was because the temperature that medium to high heat produced exceeded the smoking point of the butter and the butter began to smoke. Is it inevitable? Do I have to keep on medium to high heat in spite of smoking of butter? When I lowered the heat on seeing the smoke, it seemed that the meat was steaming instead of being properly seared. Of course, I had tapped and removed the moisture of the meat with paper towel twice before putting them onto the stainless steel fry pan and used grape seed oil at first. The initial searing of the bottom side seemed great, but as soon as I made first turn and add a small lump of butter to the pan, I had to see the butter smoked a bit. So I decreased the heat and after that I felt the pan discontinued searing but started steaming the meat. I want to get some hints regarding how I can sear both sides with butter properly. Thanks!
I don't exactly like how this guy cooks the steak. With this method, you're almost frying the steak rather than searing it, which is what you want. You don't want to use butter as your cooking oil for steak, because it has too low of a heat-point to sear your steak. You can still use the butter without it burning either, but you don't use it to cook the steak. You want to use a high heat-point oil. I'd recommend avocado oil, sunflower oil, and (my personal favorite) peanut oil. These will give your steaks an amazing sear when done right. Now, once you've seared your steak, you can turn down the heat. I would probably move it to a new burner on a lower heat. Maybe give the pan a minute or two to cool down as well, but after that, you can add your butter (you can also add rosemary and thyme sprigs for some extra flavor) and use the butter to baste the steak in it, still making sure to flip the steak every little while, but at this stage you want to start cooking the steak to how you want it. Once you've gotten it to how you wanted, set your steak out and let it rest for around 3-5 minutes. Then, it should be great and ready to eat :)

@@benscibi2036 Then use beef tallow lol. It's just as safe as butter, but also has a higher smoke point than butter. It also melts more into an oil than butter will. Whatever makes you feel safer! I would rather you feel okay with what you're eating. However, I'm still sticking to my oils :]

Doesn’t patting salt into the steak then putting it in a stainless steel frying pan create pits in the steel? I’d like to add salt but my stainless steel pan’s instructions say you should not do this.
If you are skilled enough you can just season top half when your throw it on the pan and season again on the flip.
That's the first time I've ever heard of that. I'd say it's a myth. I've cooked chicken breast and all kinds of meats on a stainless steel pan, never had any problems.
@@jeffpro8 No it's not a myth. It's chemical reaction between chloride and chromium. To prevent pitting, only add salt to water/food after the pan is boiling/hot.

put some herbs with salt and pepper in the pan then let the steak cook for around 3 to 4 minites and then flip it ovver for another 3 to 4 minites and the flavers go through the steak.

heat rating on the stove is different from manufacturers. don't get why people keep saying use low, medium, high or whatever. does not make sense. people should specific what temperature the pan should be like how we do for ovens.

Hey there. Why don't you use less butter and a splash of oil to prevent the butter from burning? So you can turn the heat up and the steak gets a nice and caramelized crust. And I'd let it sit afterwards in the oven for about 10m to let it rest and make the steak nice and tender.

@@larriyrnir5756 Warm is different from hot. You don't want to eat a hot or cool steak. You want a warm steak. If you eat it right away after letting it rest for a few minutes, it should probably still be warm. But if you want to let it sit for a bit longer while you get stuff ready, you can keep it warm in a number of ways. You don't need to necessarily turn the oven on but you could to a low temp. I usually just heat up the plates a bit before setting the steak down on them.
