I really don't like this attitude to be honest. It's very self centered. Imagine when people created boba tea. Are you going to say "Taiwan never put boba in tea before this and I'm not ATTRACTED to boba in my tea and I don't NEED people putting stuff in my tea. You're making tea too complicated. Keep it simple!" Or when Apple released the iPhone? "I never had a capactive touch screen on my phone and I'm not attracted to capactive touch screens and I don't NEED a touch screen like that. You're making phones too complicated. Keep it simple!" Well, I fully disagree with that attitude. I think people should innovate. Explore. Push boundaries. Find and create new things. Sure, sometimes when you try something new it sucks, but at least you know it sucks after trying. Sometimes when you try something you new you discover something awesome. Encourage people trying new things, don't discourage them.

You're telling a Michelin starred chef with a successful restaurant that you don't think he should do what earned him his success and instead "keep it simple" because YOU aren't "attracted" to his restaurant concept and YOU don't "need" his concept. That's why it sounds self-centered.
