don't forget to switch the normal map texture to be non-color instead of sRGB. You won't notice any issues on a sphere, however you'll end up with different values on your phone and you may not realize why. If you're using custom normals, like if you've sharpened edges, then you'll get a bunch of odd sharp edges in eevee and you might even be tearing your hair out (like I was) trying to fix it, blaming eevee for sucking since it will look smooth in cycles. But it's just a little drop down change. I'm not sure if metallic, roughness etc need to be non-color as well. Specular can use color to effect the reflected color, but I'm not sure what is allowed in usdz or gltf. Most examples I've seen end up combining the maps into one map where each of them just use a different channel since they are black and white maps so you really only need one, and I'm not sure if there is a standard order either. If you learn that, it might be a good followup for optimizing.
At 4:24 you can just press ctrl shift t and then select all the maps (base color, roughness...) and then blender sets up the whole shader for you
