Amazing. Am a mallu raised outside Kerala and from what I have gathered most mallus like me are unable to adapt to the culture of Kerala. U know the cultural differences......glad that you love the place. There are somethings that are really awesome. People are aware of their civil rights as compared to the average Indian
Adjusting to any place is about the mindset. We had an exchange student from Denmark staying with us and enjoying everything including the food. She just loved almost everything, except may be puttu! I find plenty of NRI Malayalee second generation kids struggling to adapt. It is about the attitude more than anything. If someone come with an idea of coconut oil being hair oil and not to be used in food, they will struggle.

Yes Kerala is the most beautiful place to work and stay in India, provided you can adjust with certain things and find an alternative for that, first is food, one will have to start liking rice items or typical Kerala snacks, other is non-veg. So, North INdians and veggies would find it a little bit tough, though now Kerala has changed, especially Kochi where you can get veg food and also North Indian dishes, but that would be a sort of effort to go to that particular restaurants. Rest frankly living in Kerala is nothing less than a 5-star life with the best quality that you cannot find anywhere else in India, not even in main metros like Mumbai, Delhi, Bangalore. Life in Kerala is chill and so are the people of Kerala. In fact, they love life and unlike other cities and metros are not just focussed on things like money, glamour etc. Even a simple man lives a very rich life in Kerala. And who can miss the best time in Kerala, i.e. monsoon. Just out of this world.

Near to infopark in kakkanad there is a place called just tiffins, fully vegetarian place ,you will get aalo paratha ,chaat etc since you were saying you couldn't find much vegetarian options ,also there is aryaas hotel near infopark phase 1 fully vegetarian,do try their paneer masala dosa.
Kerala vegetable dishes are tasty and nutritious. Aviyal, sambhar, different type of thoran, rasam, thiyal. Also avoid making roti like that on lpg as it can have toxic residue from lpg. It's ok on wood fire.
Elite only adopted it. Most of the households ate Rice (ചോറ് എന്ന് തന്നെ പറയണം) 2 times. And Rice powder based Diet in morning. That combines 3 times rice based food.
Me too living in kerala and a vegetarian and of course north indiann.Idont like eating outside much but south Indian vegetarian foods is good choice may be once a week.our eating habits include rice for lunch and chappati stuffed parathas or pooris for dinner. Breakfast depends sometimes plain parathas or something light like poha chila etc

Please introduce appam, idi appam, kozhakkatta, puttu etc also. We use wheat flour also to make dosa and puttu at home. Try vegetarian dishes like thoran, avial, puliseri, etc. also.

Regarding vegetarian food the methods to prepare it in Palakkad, Pathanamthitta, Kollam and Kasaragode are of different taste than that available in Kochi. Normally veg hotels in Kochi are of Tamil Nadu style mainly Thiruchirapally. If you want the exact Kerala type you will get in BTH Sarovaram or chayakkada (small outlets).

It's opposite in kerala, non veg costs u less as most malayalis prefer non veg over veg. U could get a combo of 3 chapati and chicken curry for less than 150 rupees but 3 chapati and portion paneer butter or kuruma cost more than 150. But you can find so many veg hotels in kerala cause after a certain age, like 55 keralities start eating veggies more because our body start talking about what's going on inside and report diseases to us. 😅
