Dehydrated Salt & Vinegar Cucumber Chips 🥒 || Preserving the Last of the Cucumbers!

    Join me today in the garden as I harvest the last of our cucumbers & then we'll head into the kitchen where I'm going to share with you my simple recipe for dehydrated vinegar salt cucumber chips! They are delicious and such a healthy snack. A great alternative to potato chips! Thanks for joining me, stay BLESSED! CORRECTION I accidently said oxygen absorbent packets pull out the excess “moisture” but I meant to say, it draws out the “oxygen!”
    Recipe:
    10-15 medium sized cucumbers
    1 cup apple cider vinegar
    2 TBS salt
    1/4 cup olive oil
    Simply wash & slice your cucumbers (thin). Set them aside while you make your brine by whisking together the vinegar, salt & olive oil. Dunk your cucumbers in the brine, give them a good shake & then line your dehydrator trays making sure that the cucumbers don't touch or over-lap.
    Dehydrate your cucumbers for 12-24 hrs at 135 degrees! You can dehydrate them to the consistency that you like. Me personally, I like to dehydrate mine for a full 24 hrs because this makes them nice and crunchy just like a potato chip!

    Never ever had the thought of dehydrated food. Off to buy a dehydrator. Love the apron. Made my hubby smile, as I am the only person he knows who wears an apron whilst cleaning and have one for cooking. Goes back to my mother and aunties. ❤🙏👍🥰

    First time watching your channel. I have my cucumbers 🥒 in my mom’s borrowed dehydrator now and the dehydrator you show ordered! I’m so excited for this great way to use the bountiful cucumbers we have this year! A person can only eat so much cucumber/tomato salad and freeze so much cucumber purée!

    Two batches of cucumbers are in the dehydrators now. This is by far the best taking recipe I’ve tried. Shared some with my neighbor, now she wants the recipe too… and she brought over more cucumbers 🥒 to make the chips with! 🤣 Love the 9 tray dehumidifier too!!! I was able to get so much more started than with the one I borrowed from Mom. Thank you!!!

      @@HomeFreeAlaska I watched your video and immediately cut up my cucumbers. I cant get them dry enough. I have a question that I cant find an answer to. Can I use my vacuum sealer to store my dehydrated veggies and fruits? I am trying to keep my food in light weight packages and not in glass that will break. I do have oxygen absorbers but didn't know if the can be sealed. So much to learn.

    Looks like you could replace the cukes with zucchini or even, GASP, thinly sliced and blanced potatoes. Whatever you use, I agree they won't last long.

    I made these last night. Started my Excalibur dehydrator at 9:30 pm and turned off today at 1:30 pm in afternoon. 16 hours. They seemed crispy and crunchy but when I picked them up, they were greasy on the underside. Anyone eating them would get very greasy hands. I just put them on parchment lined cookie sheets and in over at 175. I will check in and hour and maybe give them a stir before then. I did not use olive oil, but ‘Chosen’ brand, organic avacado, coconut and safflower oil. Did not think that would make a difference. Any ideas? I did learn that I should have used a larger cuke for more uniform pieces. Some of mine are pretty small after shrinking. I did enjoy your video. I also made your refrigerator dill pickles and love them. Thank you.

    Just came up from my garden with a crap load of cucumbers & decided to search up -can I dehydrate cucumbers ??-(I didn’t think I could because of the high water content.)- so thank you very much for posting this !!!

      I always put some in a mason jar for quit eats & the rest I vacuum seal. Prob be good for a yr or so.😊

    Oxygen packs take oxygen out not moisture but you can get other things for the moisture

    I was curious, if you have ever frozen any cucumbers, and then in thawing perhaps in water in the refrigerator, or on the counter afterward tried to complete the same cucumber chips?

      I’ve never frozen cucumbers. I would worry about them getting mushy in the center when they thaw. But I’m not sure.☺️

    The salt was wayyyyy too much & you have to let the cucumbers get super big on the vine for huge slices. A regular cucumber slice dehydrates to the size of a quarter or less which gives you teensy chips. I’m tweaking the recipe, tasting the brine on a slice before dehydrating & also slicing the cucumber in half & then lengthwise to make the chips a more normal size. The brine recipe (with much less salt) is surprisingly delicious. I’m going to try this on potatoes too!

    I have a question about using oil in the brine recipe; wouldn't that put a lipid layer on the cukes that would slow down the dehydration process? Or does it serve some other purpose?

      Hi there! It doesn’t slow down the process at all. 😊 I always dab them a bit with a paper towel if I get too much oil on there. But you can make this recipe with just the salt & vinegar if you don’t want to use the olive oil. It’ll work out just fine with or without the oil. I just like the texture the oil gives to the chips.

      Hi Mariah! The recipe is in the description of the video too, if that's helpful to you! But the brine is 1 cup apple cider vinegar to 2 TBS salt & about 1/4 cup of olive oil.

    I remember visiting my Aunt Shirley as a child, and in her kitchen there was a small wooden plaque above the pantry door which read something along the lines of ....This aint Burger King where you can "have it your way", this is My Kitchen, and in My Kitchen, you get it My way or you don't get the son of a bitch at all....     lovely recipe.. try some (herbion natural brand on amazon) Indian Himalayan Pink salt (fine grain)..just a pinch per serving plate... too much and you might get a loose tummy., the 5 second blooper at the end was a nice touch...Stay safe.. regards from Singapore, GOD BLESS

    I am not a picky eater but these tastes like grass with salt and oil on them! Will not do it again. Also tried drying plain cucumbers, very grassy tasting! Disappointing!🙁

      Grassy?! What kind of cucumbers were you using?! Mine have never tasted like “grass,” they’re delicious. To each their own. Just because you didn’t like them, doesn’t mean they’re gross. They’re just gross to you. Thanks for the lovely comment though!😉

    You said you just use "regular vinegar...regular white vinegar, " then you start mixing salt and Apple Cider vinegar. ? And why no measurements? SMH

      Like I said at minute 6:00 of the video, you can use regular vinegar or apple cider vinegar. Doesn’t matter which one I used because you can use either, that’s why I made sure to point that out. 😉 And the measurements and recipe is in the video description like I said in the video!
