I just wanted to come here and say that I made this and it turned out freaking PERFECT. It is FOOL PROOF. I added a fairly finely minced and sauteed carrot and jalapeno pepper, along with 1 tsp of minced garlic. I also used 2 tablespoons tomato paste instead of tomato sauce. It turned out RIDICULOUSLY delicious!!!!! Thank you for this recipe, it's wonderful to know that I have the means to re-create this glorious rice perfectly with my instant pot. One more note: my Instant Pot (it's the "Duo") has a 12 minute Rice setting (instead of the 10 minute in your video) and it doesn't have the buttons, at least that I could find, to lower it. I just let it run its course for the full 12 minutes and then allowed it to rest like you did for 12 additional minutes. It produced Mexican rice PERFECTION. Thank you thank you thank you!!!!!!!! I can't wait to make it again.

Ok I just got a instant pot like one month ago and omg its life changing I just made this rice but I don't use tomato sauce just onion powder and the tomato bouillon and I put 4 cups rice and 9 cups water 2 tablespoons of the bouillon and it was prefect thanks for showing how to make rice in it

* DEAR CALORIE COUNTERS* Yes, you can skip the oil. Yes, there is just the slightest difference in taste if you do skip it. The rice is more sticky without the oil but still SO good. It also barely makes a difference in calories per serving. This is my favorite rice recipe I’ve found 😍😍😍
Got my instant pot and opened it today. This was the first recipe that I tried. I did not have the powered bullion so used 2 bullion cubes and 1/2 can (4 oz) of tomato sauce. Could not figure out how to change the rice default setting to 10 min. So cooked it for 12 min. You did not specify to cook on low or high pressure. I selected high pressure. Let it rest for 13 min. The rice had a great flavor but half was fluffy and the other half was a little sticky. I did not wash the rice first. As I see it, there are 3 variables that I can change to get the rice more fluffy. 1. Reduce the water to 2 1/2 cups. 2. Wash the rice. 3. Cook on low pressure instead of high pressure. The rice that I used was the long grain white rice from Walmart. Any input wold be most helpful. Tomorrow I will cook my chili beans which are pure addictive.
I would suggest adding granulated onion and garlic and a bit of cumin. My mother was Mexican and she always added spices. It was much better than the restaurant.
The main point of this video was to give people the correct times and ratios of ingredients for making it in the Instant Pot. I don’t necessarily season it the same way every time. Thanks for watching!

It looked just a tad clumpy... not bad, but I think if you would brown the rice just a tad longer before adding the rice it would take it to the next level

Mine won’t let me adjust the time. It auto defaults. I can only change it to 8,12 or 15.

You need less water with the instant pot than you would normally use

Comes out too pasty if you add the whole little can. If you dont like pasty, add half of the can and save the rest for the next time you make rice
