    A brilliant video on this is by a phd professor from RoseRed Homestead who tested the nesco to can meat sauce among other things. It did get into the kill zone, but only when she canned pints for 70 mins and quarts for 90 min. She determined that when doing thicker things, it must be processed longer than the recommended 70 mins like beef stew. I’m at 978 elevation, but I will definitely extend my time with low acid foods. There’s no reason not to to be safe.

      A pressure CANNER is not the same as an Instant Pot or other pressure COOKER. I love Rose Red's "gadget" that measures temperatures inside the jars throughout the process. Data is very important and weighs more than feelings.

      I too watch Pam and Jim on RoseRed Homestead. She does everything by the book and uses the "gadget" in the jar. I trust her enough that I did buy the Nesco canner and have used it half a dozen times already and am very happy with it. Thank you for all your research and for putting out this video.

    I'm part of a canning group on FB and MANY do not share your opinion so I always forward this video. We all know by now that just because something doesn't hv the seal of approval from the government...the GOVERNMENT, doesn't mean it's a fail. Hello?! I'm going to rely on a government entity to tell me what's good for me🤣

      Thank you, Jessica for your comment and for sharing my video with others. A big issue with the testing on the Carey/Nesco is that they don't indicate which valve they used. I found the email addresses for 3 of the people listed on the study and emailed them, asking which valve they used. I also asked them to send me a link to more detailed information on the study. Unfortunately, they didn't respond to me, so I still don't know.

    In my opinion, there are many in our world that wants the population to be reliant on the Government and associated agencies and not have the ability to be self sustaining. If poor or impartial information is circulated to cause doubt in the population this can allow the continued control (brain washing) over a majority of the people looking to purchase these products or similar devices. Great video, I really enjoyed how you rolled this up nice and neat and poked it into the nay-sayers eyes!!! 👏🏻

      Ed, thanks so much for your comment. You last sentence made me laugh! At first, when I started getting these types of comments, I almost stopped publishing videos on this topic, but I decided that I wasn't going to allow myself to be bullied. I think some people don't like change, and for whatever reason feel compelled to "make" everyone agree with them. I felt that the misinformation was in a sense, hurting people, and that's why I decided to go ahead and make this video. Appreciate your support!

      I agree with you. But there is a place for testing too. I’m glad for the Center for Home Food Preservation. But I am so disappointed in this Utah study. The way it was done seems more like a political scheme instead of legitimate scientific research for the purpose of increasing safety. Although I am not LDS, usually the food preservation info they have is spot on. Since Utah has such a high percentage of LDS people, I expected more careful, legitimate research to come from there.

I totally agree with you about there being a place for testing. Testing is extremely important. The key is to conduct tests carefully, and to be open to outcomes different than you prefer. :)

      I follow Red Rose Homestead and she is a scientist with a test gadget. This particular canner passes with flying colors! Check out her research it’s very interesting for sure

    RoseRed Homestead has done proper testing on the Nesco, Instant Pot Max and the Presto Digital Electric Canner. She is a scientist (PhD) and did use a data logger for her testing. She has a number of videos so please watch all of them as she updated her information. She lives at a level of 5000 ft. I am looking for a decent price so I can buy the Nesco. Thank you for making this video.

    Great video! I love my Nesco pressure canner. Before I knew better, I used my Power Pressure Cooker XL to can small batches. However, nobody died and I live well below 2000 feet (Florida) so that's probably why I never had a problem using the PPC XL. I use my Nesco canner without hesitation. Rose Red Homestead did extensive testing of this unit and bottom line is it passed and she feels confident using it for her family. That's good enough for me!

      Susan, you certainly have an advantage since you are in a lower elevation. But I would feel comfortable with the Nesco even in a high elevation, using the green pressure valve. I LOVE RedRose Homestead! I was so happy to see the results of her tests of the Nesco canner!

    I love my Nesco. It's so much lighter and easy to handle. I'm crippled in my back and just can't manage the traditional canner anymore. I get better results with the Nesco, less evacuation of the jars and I believe they are kept at a more constant temperature while processing. And husband and I are still here! Thank you for your thoughtful research and presenting it in an orderly fashion.

    We been canning dry beans, potato's, green beans and many-many other food (s) in our Carey and Nesco electric canner for 3 years now and I'm still around at least until my wife figures out how to make it look like an accident.

    Thank you so much for this video! I am new to canning and recently watched a short video series in which the instructor repeatedly stated that electric pressure canners should not be used for canning based on research studies, but did not specify the studies. I greatly appreciate your attention to detail and willingness to share this knowledge with us.

      In support of the owner of this channel, I would like to offer this information on the Nesco Pressure Canner. The study that is cited is entirely flawed. Pressure Cookers are not the same as Pressure Canners. Many Pressure Canners also pressure cook food items, but pressure cookers are NOT to be used as Pressure Canners ever. So I wondered what the results mentioned in the Utah Study were referring to.
      Rose Red Homestead had the answers that I agree with for my family in regards to the Nesco Pressure Canner. Pam actually purchased a data logger, at considerable expense, which she placed inside several jars of processing food and presented her findings. Verify your own information, but in the end, Pam found the Nesco Canner rated the best of 3 various brands of Pressure Canners.
      In short, she found that lengthening the processing time to 90 mins for quarts and 75 minutes for pints brought the internal temp up to the sufficient heat and pressure to the " kill zone" in eliminating botulism spores or salmonella.
      Curiously, it should be mentioned that Rose Red Homestead comes to the UA-cam community from a high plateau in Arizona of over 5000 ft above sea level. She used the correct "green" weight for proper psi, not the "black" one that is to be used for elevations under 1000 ft above sea level.
      On the results of her studies, I purchased this amazing gadget and bought one for my sister as well, over and above any other Pressure Canner out there.
      I was very afraid of Pressure canning, let alone an electric Canner. But here I am along with this channel's owner defending my purchase.
      Good day, ladies and gentleman, happy electric pressure canning. I sure am.

    I love my Carey. I've been using it for 3 years now. You did an awesome job with all that information. I've been canning so long that I remember when the steam canner came out and everyone said it was unsafe, dangerous and not recommended and now they are used a lot and were found safe.

    Thank you for this. I'm surprised that when the tested the Instant Pot for pressure canning that they didn't use the Instant Pot MAX that actually has the Pressure Canning function on it.

      You're welcome, and agreed! I don't have a problem with them testing an Instant Pot, but they definitely should have tested using the one with the canning feature.

      I thought the sam thing myself. They were testing pressure COOKERS not canners. No wonder they failed 🤦‍♀️

      @@donnawilliamson9281 Yes, it was almost guaranteed to fail, which I don't think is the best way to test something. It seems they didn't want them to succeed.

      UA-camR....Rose Red tested, with the correct data device, the Presto Electric canner and the Instant Pot Max.
      Her findings were interesting, but I would love to see all Electric pressure "cookers" testec as well.

Unfortunately, I don't have the data logger that she uses, and it's really pricey, so I won't be doing such tests any time soon. But based on everything else, I feel comfortable with this canner.     Have mine waiting in a cart but was researching before I finalized the buy and came across your video. Appreciate all the info. I believe, but don't quote me lol, that USDA only approves of commercial canning, not home canning and especially not home canning of meat. The XL canner actually showed a video of a woman canning one single quart jar laying on it's side. Probably where the study got that idea. I do have the XL but quit using it several years ago. I do have 3 Instant Pots but no way would I use them for canning as they are not made for canning. The Nesco looks like the best bet for me. Pricewise the 9.5 qt is most economical for me to buy and use since it is almost 200 dollars less than most of the other electric canners (Ball being one of them and Presto the other). I thank you. Now I will go finalize my buy.

    Thank you for sharing your research and experience information on the Nesco canner. I watched Pam from Rose Red Homestead test the Nesco canner too and she thinks it’s a great pressure canner. I felt comfortable with her research and testing, but now with yours I know this is the pressure canner for me. I am in a lower altitude area, so I should be fine to pressure can in it. I had to go by what I consider to be common sense since I don't have her background nor her handy gadget. It's great that her tests verified what I already thought was the case.

    I found this video very clarifying and appreciate your efforts to use critical thinking skills to answer important questions. I don't know if you are aware but the channel Rose Red Homestead has been doing it's own independent testing with a data logger and her results support your conclusions about the Nesco. She is also testing at a higher elevation. What is interesting is that she has been testing meat spaghetti sauce and found that the NCFS recommedations barely meet the guidelines for killing botulism with the stovetop canner. She is increasing her times with this specific food to ensure an appropriate kill time for both the stovetop and Nesco canners. She will have her final conlusions on the Nesco in the near future, but I expect that they will be positive with qualifiers about certain food processing times. These experiments and evaluations of research points out that while a respected and fabulous resource, the NCFS has it's own issues and everyone should take steps to make good safety decisions instead of just relying entities to tell them what to do.

      Thank you so much for your comment! I love RoseRed Homestead! And as soon as her video popped up today, I watched it. I was pleased to know that the Nesco passed with the longer processing time. I already was processing anything with meat for the longer time. I tend to look at the processing time for each ingredient in something, and choose whatever is longest.
      I do look forward to the rest of her tests on the Nesco and if needed will adapt what I do based on what she discovers and recommends. I don't have one of those fancy data loggers, and so I was really happy to see her buy a Nesco since that means she can do the tests for me. :)
      I was surprised by the results of both of the Prestos - that the electric one didn't pass at all and the stove top only passed with the long time.

    I've been using my Carey canners for about 3 years, and I have never had a problem with anything I have canned. I did buy a second one too, and they are always set up in my kitchen. Thank you for your well researched report. My health dictates that I stay away from salt and all other preservatives, and I don't know what I'd do without the Careys.

    its ironic i just pulled my new nesco from its box and i just found this video. 23 yrs ago i watched an epic pressure canner explosion(1 person hospitalized) and i vowed never to presssure can. waterbath recipes are a little harder to find and sometimes its hard to try to convert processing techniques from pressure canning for what im doing so i looked for a canner that was automatic so i could not be in the same room. i got lucky when i bought the nesco and you got rid of a lot of fear in me with this vid. im still not gonna be in the same room nor will any of my family members. safety first. thanks again. im canning water today(testing it out)

    Thank you for your intelligent and thorough explanation. In this day and age we're learning that our government agencies are mostly against we the people. Rose red homestead had an amazing test with the temp gadget. I recommend all watch it if considering buying this canner. I just got it and canning venison today. Love it so far!

    You are oh so correct on so many levels here. Testing things for things they were never designed for isn't really a study at all. I run into this in other areas, guns. People complaining that things don't work out their way using something it was never designed to be capable of. Peace Friend.

    This is a great video. I stumbled upon your channel because I am trying to research electric pressure canners. They are not cheap and I have to consider carefully if the purchase can be justified. I'm getting older and I cannot lift my stove top canner like I used to. If I could just sit the canner on my countertop and let it cool down naturally, it would make things easier. There's another channel, I believe it's called Rosered Homestead (?) She has a great review of the Presto electric canner and she is a scientist and did her own testing. She recommended that canner BTW. I don't know if she tested a Nesco or not. But I found your video informative and interesting. Thank you.

      Hi ML, thanks for your comment. Rose Red Homestead did indeed buy and test the canner after I did this video. It passed with flying colors! I think the Nesco is great for older people because like you said, it is easier to move. I also like that it's small batch canning, so it's not as much work as canning a large amount at a time. Plus, you may not eat as much without as many mouths to feed. So all around I think it's a great option for those of us who are getting older.

    I have a power xl that I have been successfully canning with for years. I recently bought a Carey and am unfortunately so spoiled by my power xl that I'm sending this one back until I can get the bigger power xl. I just want to pressure can quarts. Lol Thank you for this information. I cannot believe the didn't test these below 2000 ft. 🤦🏼‍♀️

      Thanks for your comment, Katie. Are you in a lower elevation? From what I've heard, the Power XL does work well in lower elevations. I totally get you sending the Carey back, because it's definitely easier to stick with what you know. I've considered getting an Instant Pot Max, but since it's so different from the Nesco, if I buy a new device, it will probably be another Nesco. I am in higher elevations, though, so really need one made for that.

    Wow...Thank you so much for sharing this video and your research! I bought a Nesco canner and was considering returning because of the comments about safety but wasn’t sure because the concerns seemed unsubstantiated. We are at just below 1000 ft so the Utah study is even more of a non-issue. Think I will be keeping mine. Thanks for answering a lot of the questions I had with actual facts.

    Thank you for this very interesting video. I just purchased one for by birthday and am looking forward to canning. Now, I too have a stove top Presto 16qt. canner. Dr. Cantrell, the red headed lady from Rose Read Homestead, tested three different electric pots with Nesco being one of them. She canned hamburger in the Nesco. The results indicated that the hamburger reached the necessary temperature within the time frame suggested in the Nesco Manual to kill the spores. After researching this canner, I decided to purchase one.

    I have listened to a ton of videos on the Nesco/Carey. I think you did a very logical study yourself and I appreciate the time it took to do that. Thank you for your details. Between your videos and Rose Red who actually did test better than the study you have sited, I feel more than confident in using my new Carey. There were concerns about viscosity of different foods like meat sauce. But since then, I believe it passed the test to extend the time. Great job! I will be listening more!

    Maybe it would help folks to know I made chicken soup last year in my Nesco Pressure Canner. I followed a Ball recipe including for time. The soup was over a year old when we ate it. It was delicious and we didn't get sick. I am using it and feel confident about it. Everyone should do what they feel is right for them and their families.

    This is a great video! I have the Nesco canner. Canning rhubarb today using the water bath method in this unit, because my house steams up so bad when I use my enamel water bath canner. I did my research as well, but you did a great job! I feel that the unit is safe, regardless it’s important to follow recipes. I would never use my instant pot for canning as it’s labeled and marketed as a pressure “cooker” not a pressure “canner”. From what I’ve read the pressure cooker cannot reach the high temperatures that the electric pressure canner can. I appreciate your research and thanks again!!

    From what I gather you have to let the pressure canner come to cooling temperature after cooking before opening lid. The studies I’ve seen doing pressure in jars all suggest this cool down on its own as Food continues to cook even while it’s off. They used the temperature gauge like USDA uses. I bought the Nesco and plan to can safety stock meals. ❤ thanks for sharing

      Yes! Accordiung to the instructions in the manual, you have to let it sit for at least 60 minutes before opening the lid. I find that especially when canning quarts, it takes 90 minutes before I can open the lid. And that is definitely an important part of the process. Thanks for your comment!

Right now that's the Nesco at $113 (amzn.to/3YNxmr9) compared to the Carey that is currently $157 (amzn.to/3LM9Gvs). The only difference between the two is the logo on the front.

I love that the basic process used with the Nesco follows the same steps as a stovetop canner - e.g. venting for 10 minutes before switching the valve to airtight. I did find it a bit confusing when I first used it, just because it was a new device. So, I recommend having the instruction book out and going step-by-step the first few times you use it until it becomes second nature to you.

      I'm in a similar situation. My husband and I live with and care for my 92-year-old mom, but she has a pretty small appetite. Also, we don't have a ton of room to store things, so I don't have the space to can dozens of jars of the same food. At some point in the future, it will likely be just my husband and me, so small batches are great for us. Also, I like not having the work of massive canning projects, so all around, small batches work great for us!

    Regarding cans on their sides, this is often done with commercial canning processes (in metal cans). That's the only thing I can think of that made them state that. I've never heard of any canning done with glass jars on their sides.

    Great video. I have the Presto Digital Electric Canner and love it…..
    I recently also bought the Nesco Electric Canner and used last week and also equally love it ….. between the two canners I can do 9 Qts (Presto 5 / Nesco 4).
    I have a regular Presto stovetop type canner….. but have a smooth top type range and on MY RANGE I struggle incredibly with my burner getting it to stay at a temp for my jiggler to be at the sweet spot to can…it is either too HIGH or it fluctuates and drops too low…..I gave up on using my Stovetop type canner to Pressure Can on MY CURRENT stove and now just use for Water Bath canning currently.
    I see many people with their smooth top ranges have success..however I finally gave up trying in my case.
    I’m at 1200 ft elevation so on the Nesco I use the Green weighted dial.
    I have watched RoseRed channel and she also has done her own personal testing and opinion on Electric Canner’s that is good.
    Your opinion is spot on, I just came upon your channel as I’ve been watching videos on users of the Nesco….. I personally ❤️ it

      Thanks so much for your great comment. I'm glad to hear you love the Presto, also. I recently bought a second Nesco. It was on sale for around $104, and I couldn't resist! It's nice to run two at a time when I have a bigger batch, or simply want to can two things at once.
      I also have the Presto stovetop canner. I haven't used it for a long time, because the Nesco is just so much easier. And yet, I hold onto the Presto, "just in case." My husband and I currently live with my 92-year-old mom in her home, and she has a gas stove. We own a condo in Colorado that we are current renting out. We needed to buy new appliances for it, and I bought the only electric stove that has the coil burners (General Electric). I like the way that glasstop stoves look, but wanted to be able to can, use cast iron, etc. so went for the coil burners while that option is still available.
      You are doing the right thing by using the green dial.
      I love RoseRed Homestead! She does such a great job. Interestingly enough, at the time that I made this video, she was still opposed to electric canners, due to that Utah study. I'm glad she came around and decided to do her own testing, and approves of this new method. I think it can be hard for people to change, so good for her for being willing to try a new way of doing things.

    Thank you so much for this. This has re-convinced me to start using my Nesco. I started to get a little concerned about using it and bought a Presto stove top canner. you brought up such good points about approval, safety and other issues. So today, I will start to use my Nesco to pressure can my ground pork. Beside, I do like my Presto canner, but it is a pain in the neck to keep adjusting the temp on the stove. I have to watch it Constantly and adjust. I’m new at canning , but I’m having a lot of fun learning. I am new to your channel as well and have subscribed. Thank you for this timely information!

    Thank you, thank you, thank you! I just received my Nesco today, I have never pressure canned before and have only water bathed 6 times. I am very scared of stove top canners. I live in south Florida, my altitude is 16feet. I’m going to can some chicken broth and soup tomorrow and this makes me feel like I will be able to safely can food for my family. I also have a gas stove and here in S Florida it is way too hot to use my open burner for long periods of time.

When I saw some people make videos against it, and then saw in the comments that some people had the canner but were afraid to use it, I felt I needed to say something about it. I think this canner works well for a lot of people - people living in a small space and want to do small batch canning, people with glass top stoves, or people who don't want to (or can't) lug around a big canner, etc. I think I've only used my stove top canner a time or two since getting my Nesco.

    Thank you so much for this video. I just found your channel and I’m looking forward to seeing more. I recently purchased the Nesco Pressure Canner and I’m very happy with it. It appears too me the Utah study was very sloppy. It’s as if they had a preordained conclusion they wanted to prove. They clearly did not have any fact checkers or an adequate peer review prior to publishing. I’ve purchased many Nesco appliances over the years and find them to be of top quality that last a long time. I’m sure they would not offer a product that did not live up to it’s claims.

    THIS VIDEO SHOULD BE READ BY EVERYONE INTERESTED IN ELECTRIC CANNING!
    I apologize for the lengthy comment but felt it necessary to explain my position.
    Since retired and have a garden, I became interested in home canning. Like anything I get involved with I research the hell out of it. Canning being no exception. I soon discovered the pros/cons of equipment & methods for this time tested preservation of foods.
    I decided that I may prefer an electric canner due to not wanting to heat up my home (in summer) as using a conventional stove top canner will do.
    I then read where these electric canners may NOT be safe since the real authorities, USDA, Penn State, Utah State, NCHFP, etc., have not endorsed them. In fact, the USDA does not endorse any product. I have read all of the articles by these institutions and am happy that you have addressed them. To me, these offices are "Gods" to follow since they have nothing to gain like endorsed authors do. But upon reading their claims, certain flags arose as to their findings. I needed to investigate further.
    The one thing though, is that I have not heard one instance where someone has died due to these electric canners providing un-safe food. You have mentioned this also.So onward with the research and more questions.
    After more reading (and like every other topic in the world) there is a plethora of people that claim to be "pros" and post information that they swear by. Obviously these claims MUST be read with trepidation.
    When I saw your video, your name and photo, my first thought was that here is ANOTHER home grown pro telling us to follow what they say without them really researching deeply into the topic. I was going to immediately blast you in the comments but decided to hear what you had to say.
    Guess what? You video is not only informative BUT THE BEST INFORMATION REGARDING THIS TOPIC! You have covered all the bases with your extensive research. You have addressed every detail regarding issues related to electric home canning and it’s safety.
    To digress a little…
    I came across a web site (creativecanning) where the author has claimed that the Presto Digital Canner is the only electric canner approved by the USDA. And as mentioned, the USDA does not endorse any product. Although Presto has followed some of the USDA guidelines for safe canning, it has NOT been approved by them. In fact, Presto doesn’t even state that they are USDA approved but that it has followed the guidelines. Only the author has stated this. Obviously this author has been compensated by Presto!
    Your comments regarding the Nesco canner were spot on. I was impressed by your statement regarding the safety features that are built into the unit such as not being able to skip the 10’ pressure build up. Whereas on a stove top unit this is done manually and could be skimped on.
    Also, I whole-heartily agree that an established, long term company is NOT going to chance endangering people’s lives by erroneously producing an inferior product.
    To summarize…this and all of your other comments regarding items NOT mentioned by the "Gods" have left me more comfortable with purchasing an electric canner. Lesson learned by your video…never judge a book by its cover.

One thing that stood out to me is your mention about the person who said the Presto is the only one USDA approved. I think that misunderstanding came about because they put something on the box about USDA. I don't have it in front of me at the moment, so I may be a little off on this. But I believe the basic idea is that they follow USDA guidelines. But when people see "USDA" on the box, they jump to conclusions. Interestingly enough, Presto was criticized for putting that USDA thing on their box - even though they didn't say anything untrue.
      There is definitely a lot of misinformation out there, and I'm sure I'm guilty of it myself at times. But I sure try to actually think through what studies such as the Utah study actually say, and think about what isn't said, as much as what is said.

    Thank you for this video! I've been very interested in learning but have a bad right wrist due to a fracture and subsequent surgery. I kept seeing mixed reviews on the safety of electric canners but know that with my disability, traditional canning isn't possible as well as having a glass top stove which apparently, is also bad. I now look forward to purchasing one of these to help preserve some of the harvest of our garden.

      Lori, I'm so glad you found the video helpful! There are many like you who are not in a position to use a stovetop canner. I still have my stovetop canner but will likely end up in a condo eventually, and it just makes sense to have something smaller. Also, I like small batch canning since I don't have the room to store a ton of food that I've canned. All the way around, I think these canners are great for anyone not in a position (for whatever reason) to use the large stovetop canners.

      I just rewatched her video on the Carey/Nesco canner and on thicker, more viscous food she upped the canning time from 60 pints to 75 mins and 70 quarts to 90. USDA Complete Guide to Home Canning Section 3, p. 14-15 Hope that helps.

    Thank you! Thank you! Thank you! My journey with pressure cookers has begun. Thank you. This video was the reason I was able to understand that this Nesco (Identical as Carey. Nesco bought the item, its the same. I promise!) I first ordered the Carey and then Realized the Nesco was $30 cheaper and the same item. I am SO happy that you made this video. This video was the only reason I felt confident in actually using a pressure cooker. I felt terrified to use an actual pressure cooker. I don't have great memory, it's not something that alarms would help with. I'm just absent minded and in reality this pressure cooker makes me able to use a pressure cooker. Do you know if using "Pressure Cooker" mode @ 60 MINUTES for example with the GREEN 15 PSI Pressure valve - that is Pressure cooking at 15PSI right?? I notice the Pressure Canner has HIGH and LOW function - but wants a lot more water. I have believed that if I want to pressure cook at 15 psi that I would then "Pressure Cook" with the GREEN 15 PSI Valve. I WOULDN'T have to use the "Pressure Canner" @ HIGH setting in order to get 15 psi , right? The GREEN VALVE = 15 psi and I use "Pressure Cooker" @ Specified Time (example 60minutes) I believe i'm doing it right, I'm using the Pressure cooker function but I wondered if that was only 10 PSI? it says the Green Valve is 15 psi but then I noticed the pressure canner has high and low and pressure cooker doesn't so I got worried maybe I was doing it wrong. I over explained in caution to make sure i was understood thanks in advance and I realize the answers in the video I'm going to watch again tomorrow too!

      Hi Dustin, thanks so much for your comment and your kind words. Regarding which setting to use, it depends on if you are cooking or canning. If you are cooking something you're going to eat right then, then use the pressure cooking setting. If you are canning a low acid food (such as green beans), then use the HIGH setting, which is for canning low acid foods. Do NOT use the pressure cooking setting for canning.
      Regarding which valve to use, use the green one if you are over 1000 feet elevation. Use the black one if you are under 1000 feet elevation.
      I recommend canning water the first time you do it, just to practice. Have your manual out, and follow the steps one by one. That will help you know exactly what to do. Hope that helps!

      @@StockingMyPantry I am using the pressure cooker for sterilization and I need 15 PSI, which is why I opted for the green valve am I doing that wrong? I am sterilizing jars of rye seed for mushroom substrate and it requires 15 PSI Pressure cooking.
      I suppose this information would have been helpful.
      Now does it make sense that I'm using the Green valve? My understanding is that yes green valve it's for Altitude but that in terms of physics that the actual weighted valve is what weight makes the pressure reach 15 PSI.
      I am wondering if I'm confused - and if I should be pressure canning instead of cooking? I don't think so specifically because the requirement for sterilization is 15 psi in a pressure cooker at a certain time period pet volume.
      If you're using the black valve there is no way to reach 15 PSI for sterilization? this is a question.
      I Know that people absolutely love this electric l cooker specifically for the sterilising jars for innoculation with mushroom spores. So I know it has the 15 PSI option. My understanding was that you can't get 15 psi without the additional weight on the valve, as well be true the standard pressure cooker to. I realize I didn't explain the sterilization part now with that information, then would I not use the green valve? In order to reach 15 psi.
      The pressure cooking feature instructions are specifically talking about cooking food. I am talking about reaching 15 psi for sterilization.

      @@StockingMyPantry no apologies necessary. Thank you SO MUCH for getting back to me so soon. I have my first round of jars in right now and I am so shocked at how quiet it's been running; I am so grateful.
      I ran it once last night and once today, today I walked away from it yesterday I stayed with it. Yesterday I noticed that while the pressure was building there with steam releasing and it was making a fair amount of noise, a steady consistent sound of air releasing.
      I didn't notice that today, but I had gone upstairs immediately to make some food and do some cleaning. Is that a normal experience? For air to release as the pressure is building? I'm only asking because I didn't stick around for it today and so I was shocked that I couldn't hear it from upstairs, and by the time I came downstairs it was already pressure cooking like 20 minutes later, and so silently (just bubbling a bit)
      Should I expect that air release the if I am in the same room again? I know silly question just wanna make sure it was running properly.
      I am very grateful for your time and energy replying I'm very grateful for the time and energy you took making this video this video is fantastic you're an extraxtremely capable individual who did a great job outlining the concerns that other people have with these devices. I am absolutely grateful for the time and energy, I was using fractional sterilization which is 3 consecutive days of 90 minutes in a Steam Bath 24 hours a part and now all I need to do is pressure cook for 60 minutes ONCE and then they're ready.
      I didn't feel confident operating a pressure cooker because of my memory difficulty, I likely would have been scolded by hot water and I am confident that I have nothing to worry about now. Thanks for helping get over the hurdle. I can't help but wonder if you've been paid to do this video because the amount of information that you have acquired is a rather impressive. (I doubt that's the case but I wonder only because of how well presented and established the information was.

    i'm going to buy one of these .While the Presto electric canner processes 5 qts its more expensive, and it only processes @ 15 psi. I live at 650 ft elevation so that is overkill. This canner ( getting on sale) is 1/3 the cost of The Presto electric canner, and looks to be just as safe. Rosered did a video on it, using her temp probe in the jar, and stated that it passes the test( for obtaining kill zone temps for the specified time period needed to kill Botulism spores), however she stated we need to make our own decision, as she is canning at 5000 ft. I am afraid to use a manual canner as I have a 22 yr old glass top stove and do not know ( nor do I know the model # or have the owners manual) to see if it will withstand the weight of a manual canner and will not crack the glass top. I have seen video that the canner cannot extend over 1" over the burner diameter, put I am not willing to take that chance. Buying a new stove is much more expensive than this canner. Canning outside on a propane stove, no way in the hot Texas summer, especially the oppressive heat we are having this summer, as you so have to monitor a manual canner closely to make sure your pressure is maintained

I feel that I can trust her information because she truly understands the science in ways that most of us (including me) don't. I know that she is in the process of testing the Nesco, but her test is not quite complete. She has let a bit of information on her findings out, and I think the news will be good.     Thanks for the well reasoned work. I learned a lot. I live at about 800 feet so I should have no problem. If someone still had irrational safety concerns at sea level would using the green 15lb nob be a problem ? Can't seem to find this answer. Thanks again for your efforts. .

      Thanks for your kind words and question. From a safety perspective, it won't hurt to use the green valve at a lower elevation. However, it will cause your food to be over processed, so the end result won't be as enjoyable food. For instance, vegetables may turn to mush. The bottom line is that there is no reason to use the green valve at your elevation, and doing so will lead to less than ideal results.

    Would love to learn how to this kind of canner. My stove is small to hold a regular canner due to I have an built in upper oven. It take up height and width.

      This type of canner is great for anyone with space challenges. You can use it on your kitchen counter, or even on a table if you use an extension cord. So there is a lot of flexibility with it. I have some other videos showing how to use it, that you may want to check out. One thing to note is that the Nesco and Carey canners are the exact same canner. Sometimes the Nesco is cheaper, and other times the Carey is cheaper. So get whichever one costs less at the time. Instructions are the same for each canner.

    Dr. Cantrell lives on the Colorado plateau at 5000 ft elevation so she tested the canner using the 15 PSI weight. The Nesco 9.5 quart Nesco canner passed with flying colors. Check out Dr. Cantrell's video on this see her results and make up your mind.

      Yes, I was so happy to see her video! At the time that I created this video, she had not yet come around to supporting the Carey/Nesco, due to that Utah study. Thankfully, she decided to do her own testing. I was very happy to see her results, and that the Nesco did so well!

      Glad it was helpful! Enjoy your new canner! At your altitude, you'll be able to just use the black pressure valve that is already on the canner. Just take your time when canning for the first time or two. I find it helpful to have the instruction book out when canning, even though I've done it many times. I'm pretty forgetful, and so that may not be necessary for you. :)
