For Ehlers-Danlos syndrome, vegan diet is very helpful, also because MCAS usually comes with hypermobile EDS and could even be the cause according to some doctors like Lawrence Afrin. What I have found very useful along with WDPB oil free diet was the Cusack Protocol for EDS (aloe vera and Maitake) and the Paddison Program for arthritis.
To avoid the need for dressings, can just pour boiled whole grains and beans over greens. High calcium greens are kale, collard, mustard greens, turnip greens and bok choy.
Juicing is the back bone of my health recovery, I am low fat raw vegan since four years and two meals a day are fresh whole fruits and veggies but the juicing carries me further, based on my experience. Its not either/or, it can be both.
I would guess it is hard to get enough calories on fruits unless you also do some juicing to concentrate some calories. Hunter gatherer groups did rely on honey to get enough calories to survive. I heard females who do not get enough calories on raw diets are unable to reproduce.
Some raw diets use refined substance like oil and raw sprouted grains to get enough calories. Some tubers can be eaten raw like sweet potato altho less calories are absorbed from raw sweet potato compared to cooked sweet potato. About half of the tubers in africa could be eaten raw and the invention of cooking made more food available. Even when cooked, some of the wild tubers used by hunter gatherer groups were quite low in calories so trying to get enough calories was the main problem of our ancestors. Our ancestors on the africa savanna probably had to also rely on some fatty animals to get enough calories aside from honey. Some sprouted legumes can be eaten raw like peas, lentil, mung bean, chickpea (garbanzo) and adzuki bean. Larger beans cannot be eaten raw which was probably one reason why cooking was invented.

All vegans including raw vegans should take b12 supplement to avoid going crazy and to avoid death.
God is the reason Tim didn't get bariatric surgery :)
