    My favourite hack for fast fried rice when you don’t have day old rice, is to use a pack of microwave rice, without heating it first- it’s already pretty much cooked, still dry and seperate- perfect!

    Lately I've been using a Vietnamese mushroom seasoning (hạt nêm nấm) in my fried rice rather than bullion powder. The umami is through the roof and really kicks the rice into high gear.

    I’m really confused about the pricing on that Lomi thing. It seems suspicious to me for the website to say “$49 today” and in another spot have “total $499” without saying when that’s due. I’m sure the product is fine, but I wonder about that pricing.

      I saw that too! I think it’s a preorder situation where you pay $49 now to reserve the product and then 499 when the product is delivered to you

      Your paying a deposit for your lomi. Once your lomi is made and ready to ship you get charged. I was confused when we bought ours.

It actually looks like an incredible product we could really use, but I’ll have to look into normal composting options as the price point (and postage) is prohibitive for us. Although the technology looks amazing, so hopefully over time it will come down or be adapted.

      @@marabanara I would believe that the price will go down eventually. You should look into a worm composter if your trying to avoid the traditional compost piles. That's what we did when we rented and it worked really well

    I half expected you to break a sheet of nori and enlighten us a bit more. I saw a squeeze bottle used to suck the yoke from the white and thought it to be a good idea when you have lots of eggs. Thanks for sharing this recipe and I wait for the next pearl of wisdom. Hugs

    Wow! I can tell from the color of those yolks that you feed your chickens a healthy diet. They're not an anemic, pale yellow like the cheap eggs at the store. Bravo, Emmy! Bravo!

    I've done this technique a bunch of times. To hedge my bet on the color I'll sometimes throw a little turmeric in as well, maybe a quarter teaspoon per pint of white rice.

    re: separating eggs. easiest way i've seen & a nice hack is to just use an empty plastic water / soda bottle. You just squeeze it, then put the tip next to the yolk, let go, and it sucks it in. Also super easy to clean if desired, although I assume most people just throw them away.

    You can get compost pots on Amazon for $40 bucks. Lomi cost $500.

      The electric composter breaks it down quickly. I haven’t seen anything like that for $40, all the alternatives I’ve seen are in the hundreds. You can get regular pots for storing your food scraps in the kitchen but the idea is to then transfer it to a compost heap outside or in your food recycling if available in your area. They are not the same product.

    I use instant rice to make fried rice. Follow box directions, then add to your recipe. It's a quick filling meal around here and my kids love it. Tonight we did spinach and eggs in it.

    I have a Waring blender that was also my mom's before she passed away. I add my banana peels and other food scraps, water to blend into a liquid. I then add this to my planters in the backyard, and stir it into the soil.

    I make mock fried rice by boiling my rice in chicken stock with a bit sesame oil and then adding extra sesame oil after its done cooking, letting it stay in the rice cooker a bit longer so it develops a crust that adds to that "fried" taste, then I add some egg and stuff.

    People please tell me, does no one separate eggs with the egg shell anymore?!
    I feel like this is so in depth. I just make mine in 1 big pan and I make it a bit differently but basic concept, except I don't have to do the rice first. I may have to try this way but feels like a lot of dirty dishes

    I usually make a vegetarian fried rice with onions. I've added mushrooms as another vegetable. One time I made bacon fried rice with green onions and mushrooms. Another great addition is shrimp.

    The concept of Lomi sounds great. The fact that when you go on their site they're trying to trick you into thinking you're paying $50 when they'll actually charge you $500 is shady as all hell.

    I learned this method a few years ago, but I add the egg yolks to the rice before it goes into the pan. That way the rice gets fully covered. I might like your method more, though, because you don't risk burning the egg.
    FUN FACT: this works just as well with cauliflower rice! I keep a few bags in my freezer for nights when I'm craving comfort food or I'm feeling lazy. I put it on a bowl and in the microwave to heat it up, push it into a sieve to drain excess water, then it's ready to use just like leftover rice. YUM!

    I love tofu scramble as a vegan egg fried rice alternative. You should try that one time Emmy, surprising how similar it tastes! Black salt makes it have an eggy taste too!
