SUPER COZY VEGAN RECIPES

- Hey everyone! It's still chilly here in Halifax (and most of Canada) so I thought some cozy meals were in order. These are perfect for making a big batch to share of have for meals during the week. I hope you make them and love them! Recipes below.

RECIPES
TOMATO BASIL SOUP:
1 small/medium sweet potato, chopped
1/2 white onion, roughly chopped
1 clove garlic, chopped
1 28 oz can diced tomatoes
salt & pepper to taste
handful of fresh basil or 1-2 tsp dried
Cook sweet potato. In a frying pan, cook onions and garlic until translucent and lightly browned. Add sweet potato, onions, garlic and tomatoes to a blender and blend until smooth. Add to a pot and season with salt and pepper. Add basil. Serve hot. Add grilled cheese croutons for best experience.
LOADED BAKED POTATO SOUP:
1/4 cup vegan butter
1/4 cup flour
2 cups non-dairy milk
2 medium potatoes, chopped
1 cup veggie broth (if needed)
salt & pepper
1 tbsp vegan sour cream/ vegan cream cheese (optional)
1/4 cup green onion, chopped
vegan cheddar cheese, coconut bacon, green onion for topping
LAVA CAKE:
I followed this recipe but left out all the coconut shreds and flakes.

You are so lucky to have so many vegan options at the supermarket such as vegan cheese, vegan ice cream, vegan bacon, I live in Peru and we don't even have tofu at the supermarket I have to go to a market 1hour away from my house by bus to get it :(
Kelly Sarmiento I live in Amsterdam a pretty diverse city (culture, food, language etc.) and vegan icecream is accessible in a small shop around the corner and vegetarian/vegan meat products are available in most supermarkets, but I have no idea of where to get vegan cheese.
Kelly Sarmiento If you have access to a strong blender/food processor & raw cashews, I make sour cream from raw cashews soaked in hot water for about 4 hours, lemon juice, and apple cider vinegar. There are recipes that use other things, which might be easier to find depending on where you live though c:

I'm sorry to hear that! Its a pity that some countrys still don't sale vegan products in "normal" stores.I live in germany and even vegan restaurant are totaly a thing and I'm so thankful for that! Just wait a few years and It should change wherever you are living! P.S make your own vegan cheese,its fun!
Kelly Sarmiento I have the same problem, I live in Kenya. I'm lucky that I visit family in Switzerland every year, so I bring a lot from there, but there is a lot I can't bring.

So what’s stopping you? Is it the vegan label? I know many don’t like vegans but if you truly care for the animals it’s easier to look beyond it and not care what others think. Have you seen fork over knives or earthlings? These docs will open your eyes for sure!
DIANA LIGOV actually, she just said eating this way has made her healthy; can you imagine eating purely vegan would do? Your meat, eggs and dairy is the most unhealthy thing you can consume. You don’t know cause you haven’t seen the documentaries regarding the meat and dairy industry. If you did, you would never touch it again,! I promise you that. Not to mention the torture innocent baby animals go through to be consumed. Most if not all, are babies. Please watch above mentioned documentaries. Fork over knives and earthlings on you tube

I have dark brown hair and blue eyes too and a lot of people find that pretty but girl! You are beautiful just the way you are and brown eyes are sooo so pretty as well! Especially when the sun shines then they seem kinda goldish!

Hands down, this is one of the top vegan foods channel!!! (no one argue with me) everything looks so good and there is so much variety.

The second soup you've made is a "bechamel" sauce, it's weird that you drink it like a soup x) In France we use it in small quantities in our dish haha

Wait what potato soup is the best how can you only use it as a sauce??? You're right, it's delicious, especially if you make sure it's chunky!
It's not the whole soup, just the butter-flour-milk sauce at the beginning that is called bechamel. :)
Ohhhhh we call that gravy :). Except usually, it's made with pork fat (obviously not vegan).
Liv I love the fact that you make your delicious vegan food out of normal everyday foods that are accessible to most of us & not some expensive, use only once ingredients. You are a wonderful inspiration to young & old, well done sweet girl 😘

For recipe number two. If you don't have vegan cream cheese you can add hummus & nutritional yeast. It makes the soup taste pretty cheesy

your sister is super funny and the relationship you have with her reminds me of me and my sister a lot. My sister always wants to eat all the food I cook, especially because I cook more than she does. And she also lives off rice and pasta and potatoes lol

Just a little extra you can make for the loaded potato soup, sautee leek, onions and a tiny bit of garlic then add everything in. Trust me the leeks and onions make a huge difference!

I recommend adding a couple tablespoons of cooked rice to the soup before blending! Adds a nice silky and creamy texture.

I'm not a full-time vegan at this time in my life, but I do of course like to eat vegan when possible. I've been watching your videos a lot lately because I love the recipes.I had NO IDEA you were from Halifax! I am too! I've found produce here in the cold months can be really, really expensive but you've done a lot of affordable recipes, so I'm double inspired to try them now.
