Thanks for another interesting, and humorous video ( I'm beginning to think your animals are ganging up on you). Since my wife became ill I do all the cooking, so it looks easy enough for me to make, and looks delicious. She'll appreciate the change. Not a great deal of Mexican cheese on sale in England, but plenty of Continental ones.

Robert you could use Feta cheese to the salty flavor she’s talking about in the Mexican cheese.
