Steve thank you for putting up this video! My grandmother hasn't been in too good health and has been losing her appetite, but I made this for her and she was able to clean her whole plate. Super easy and delicious.

Hey Steve, I cooked this last Sunday, and was blown away. The cheese/pesto/spinach flavors blended beautifully with the Salmon. My wife is not a Salmon lover, like me, but this blew her away. In fact she ate the little portion that was left, for dinner Monday night and still raved! Bought the Salmon, spinach, cream cheese, Pecorino, at Costco, the grocery store, and my herb garden for the rest......Thanks again!
That intro cannot compare. That is one of th best intro songs I have ever heard. And you're doing beautiful things with salmon. PESTO SAUCE. BASIL SAUCE. FLOUR.

I made this a few weeks ago. Then I made a variation of it, spreading a duxelles on the bottom and a savory, cream cheese- sautéed spinach blend on the top before sealing. Both versions were equally good. But be aware that this is VERY rich and desperately needs something cool, crunchy and acidic as a counterbalance. Think relish. I added a crisp salad of mesclun, arugula, radish & red onion, tossed with a puckery lemon vinaigrette. It saved the day. This dish would have been unbearably rich without it. Also, be sure to keep the salmon en croute portions small. Otherwise, it could very easily tire the palette. A sauvignon blanc was the perfect accompaniment. My spouse loved it.

It's really really good! I cook it when guests come over. Having pesto on hand simplifies the cooking process a lot.

After a horribly disappointing experience with a shop bought frozen salmon en croute, containing a shred of salmon the size of my thumb and next to no other filling, I'm very keen to try this. Cooking from scratch is so much more satisfying, you know what's in there and while I would hardly class myself as a pro I much prefer what I make at home to fast food. Although salmon is expensive this dish is probably still cheaper than a takeaway.

I made this exactly like the video. Everyone who taste it loved it.
Cooked this yesterday, Boxing Day. Really tasty and to be honest, it's not too difficult either, especially when buying the ready made pastry in Lidls. Did not opt for cream cheese because of the waistline, but substituted a local brand of low fat spreading cheese.
Also, missed the bit about 'puff' pastry, and used 'filo' pastry instead, Still turned out great tasting. It's first class cold too.

Thank you...Yep I just parboiled them in salted water....then I finished them off in the pan with a little vegetable oil until golden brown, salt & pepper :)
