    i use a rolling pin my father made for his mother when he was 15 in 1935 in 'shop'. When she passed, my own mother got it. I have now and it will go to my niece who I hope will pass it on to her own daughter.

    Ads my!! Has your website changed ... All selling I loved your site till all this selling... I like to watch other sites when they don't advertise everything they use ... That being said , keeping butter cold , what did our grannies do and grannies before that ??? No frig , even insummer excelle t pie crust ... This is what I don't understand and they used soft lard best pies ever..

    Hi Gem-ma!
    I have been wanting to write to you about the absolute joy your BIGGER BOLDER BAKING cook/baking book has brought to me!
    I have been in and out of the hospital with my youngest daughter, so haven't had the time, but I am taking a minute to tell you now!
    I am so impressed with it that I went to order 2 more for cooking classes, - 1 each for the 2 special needs schools that my daughter attends, but they are sold out!
    I am hoping they restock soon so that I can get them before the holidays! The kids really get involved in the classes, and feel proud that they created sweet treats themselves! 1 of the most requested is gingerbread cookies!

      Hi Mariam. Pies and tarts are cousins. One of the major difference between the two is the consistency of the crust. While pie crusts are very flaky and light, tart crusts or pastry crusts, tend to be firm and crumbly and not at all flaky.

    When I need a blind baked crust, I have a different way of baking it. I have two identical sheet metal pie pans that I got from my mother-in-law. I place my crust in one pan, then set the other pan down inside. Just like I would stack them to store them, only with the crust between the two. The metal conducts heat, cooking the crust from both sides. And unlike most metal pans, these pans don't have a rolled edge, allowing them to fit tightly against both sides of the crust. They also have wide rims with a trough around it to keep boil-overs from burning on the oven bottom.
    With the beans or rice method the beans or rice insulates the inside of the crust, greatly increasing the bake time, and only allowing the crust to bake from the bottom.
    My method bakes the crust in half the time, and never bubbles or shrinks, even without docking. If you can find pans like this, I'm sure they'll prove invaluable to you too.

    I love your channel. I am making my own cream cheese now. I am teaching my 2 grandchildren to be bigger bolder bakers. They are 6 and 4 and LOVE to bake. Cinnamon rolls are their favorite and cheesecake

    Thx for the great tips Gemma! Now I can make my pies perfectly without any issues, guess what i'm going to make your best-ever pecan pie recipe next week for thanksgiving, this is great timing. Quick question what oven do you use fan-forced or regular? and can you create more pie recipes? I was thinking maybe you can show us how to make a apple crumble pie or something. I use a glass 9 inch pie dish for my pies should I get another pie pan or keep using the one I have?

      Hi. Thank you for being here. In answer to your questions: oven, I use a regular oven, no fan just heat from the bottom. I will see what I can do about pies, but for sure there is something that will be done in that department, and yes, you can use a glass dish for making pies.

    Quick question: Should I blind bake my crust when I'm doing a pumpkin pie? The recipe that I've used in the past for a pumpkin pie said to not blind bake the crust, but I got a soggy bottom :( Suggestions?

      Try it and see. I would start with partial baking and go from there.

      Sherrie: I always blind bake at least 20 minutes for pumpkin or any custard type pie and bake on the lowest rate. Stops that doughy bottom crust.

    All of my baking gear came from my grandmothers and great grandmothers. I’d take this video more seriously if you encouraged people to buy from thrift and antique stores instead of buying new disposable crap.
