    Cold Sesame Soba
    1/4 cup tahini
    3 tablespoons extra-virgin olive oil
    1 tablespoon chili oil or sesame oil
    1 tablespoon + 1 teaspoon tamari
    1 tablespoon + 1 teaspoon red wine vinegar
    1 tablespoon + 1 teaspoon rice vinegar
    360 grams (12.7 ounces) soba noodles
    salt
    1 english cucumber or 4 persian cucumbers, cut into matchsticks
    2 scallion greens, sliced
    1 tablespoons toasted sesame seeds
    Place a large pot of water on to boil. In a large mixing bowl, combine the tahini, olive oil, chili oil, tamari, red wine vinegar, and rice vinegar and stir until combined. Once the water is boiling, cook the soba, then drain it and rinse it under cold water. Shake it to make sure it's totally dry, so as not to dilute the dressing.
    Add the noodles to the bowl of dressing and toss them until well combined. Season to taste with salt, then portion into bowls, garnished with cucumbers, scallions and sesame seeds.

    Thank you so much for the sesame replacement idea. I’m allergic to peppers so a lot of these simple chilli oil sauces feel unattainable for me but that’s a fun substitute!

    I made this and it is as good as you think it is. As soon as I ate the last bit, I made it again. I used a chili crunch instead of chili oil for some texture but you do you.
