      I think people confuse flavours from different spices with heat. Like the taste that a bay leaf or a corriander seed imparts isn't hot, it's just flavourful. And that strength of the masalas is often written down as spicy in a way a chilli 🌶 is spicy.

    After seeing what these Indian Contestants are preparing and the judges going gaga, I think I should send my mother to some of these Master Chef's outside India, and even if the judges don't like the food she can count all the nutritional values the food has, as she does with me..😂😂

      Chutney could be made in many ways......there are types of chutny where the ingredients and in big irregular pieces and it makes it so much better 😋

      That's because this chutney had an uncommon ingredient-apple, which is not used in basic Indian chutney.

    main reason why people dont use salmon in curry is because salmon is way more expensive than other common meat ingredient like chicken.

      Because salmon isn't native to India? Indian recipes have always been developed keeping in mind the native ingredients available,it wouldn't make sense to use salmon in a curry that is meant for a native fish.

      @@abhaysurya1892 it is. There is a species called Indian Salmon. I live in Andaman and the local fishermen do sell salmon. And yes, we generally don't use it in curries because it is expensive. The only people who I saw have it are people who go to gym because it very rich on protein. They generally pan fry it and eat it with a little bit salt.

      There is a very popular fish named “Hilsa”, widely eaten around eastern India ( Bengal region ), tastes quite similar to Salmon. Actually it’s more moist and delicate than Salmon. If you ever get opportunity to get it (try Bangla grocery stores) please cook it in light spices with mustard or coconut gravy...... I can bet u would give a second thought to Salmon.

      @@islandsunset No, salmon isn't native to India,the fish you are referring to is "rawas"(indian salmon) which does not belong to the Salmonidae family. Salmon cannot even survive the warm waters of India,how can u call it native?

      It's not true. I am indian and I have very low spice tolerance. And most of the food I eat have low spice doesn't mean it tastes bad. Not everyone in india eats chili peppers with rice.

Which is okay, but when you think Indian cuisine it is mildly spicy, which becomes unbearable for the west who are again stereotyped as people with low spice tolerance.

      It's more about flavour and balancing the masalas and taste. Indian food doesn't need to be spicy to be tasty. The same can be said about Mexican, Korean, and other cuisines which are stereotyped to be spicy when in that it's a whole range of flavours.

    Each Indian state has its own language and culture. Indian cuisine is an amalgamation of many many cuisines such as Bengali, Marathi, Kerala, Tamil, Punjabi (etc) cuisines each one of em equally complex and diverse (as that of a small country). If you don't know this about Indian cuisine, you don't know Indian Cuisine...

      I've seen a lot of UK shows are chill. Take kitchen nightmares for example. The uk version is much calmer and less dramatic, the US version is full of drama and battles

      New Zealand, Australia, UK and Canada, the shows are so chill, the competitive heat is still there but there is strong sense of sportsmanship and wholesomeness above all in the atmosphere.

    I love the way every dish is described, right from flavor to looks, the way its cooked and served. Practically everything.
    This way every dish is felt from the heart is what makes all of the Judges few of the Best Cooks in the world.
    Its for the New generation to look upto them for inspirations.

    I understand exactly what they mean about that crescendo. I've been experimenting with indian spices and made a fried egg with spices that turned out incredible. The spice mix started off with a beautiful deep flavour and, as it faded, it was finished off by a quick kick of spice. It was a good feeling and now I just need to try making it again 😅😭

    I am a indian I Live in a State called tamilnadu in a city called Chennai the soo basic we love spice in India I love spice today we are chicken curry and a traddinal soup if anyone comes to India tamilnadu is the best place to eat Indian food

      If you have even eaten in a high quality Indian 5 star restaurant you'd know that the Indian dishes are not spicy at all. Fact is your streetside food vendor might create something ultra spicy but in the higher class world that's not acceptable even in India.

      @@Rikka_V1 well seems like you really don't have a great idea about Indian food. Well Indian food is indeed spicy and they are made mild these days since many westerners don't like to have spicy food. I don't know about which 5 star restaurant you are telling about but I have been to Renaissance and Taj they serve good quality food and they offer different level of spice quotient. You'll find that they'll say that originally these dishes are made very spicy but we can make it mild. And as far as street food is considered it is not that they make it ultra spicy its about you who doesn't want to eat spicy. People here say to the street side vendors to make it more spicy.

    In master chef india, they ask contestant to crate western dishes. In MasterChef UK, they are applauding the basic Indian dishes.
    Love the difference.

    Lol they take a plate and then put banana leaves on it. The purpose of banana leaves is to eliminate the use of plates. Lovelyy video nevertheless.

      how is she supposed to carry food in a leaf to the judges lol. also, its not just to eliminate plate but when u eat on a banana leaf it enhances the flavours of food. but ofcourse, u wouldnt use utensils on banana leaf in that case.

      In south India these days they serve banana leaf over plate , just to get the feel of eating in the banana leaf or maybe as leaf are disposed there is sense of feel good that we are not eating food on plates that are washed and reused .

      I mean in south India, no one brings a leaf to the table like that with food already on it. The leaf should already be on the table. Servers come and put food on it.

      South Indians don't use banana leaves daily.it's only during certain occasions like festival
