GREEN LOADED VEGGIE SHAKSHUKA (Parsi Bhaji par eedu)

  • Hi Guys!!! Its been a while - and I'm back with a smashing winter recipe - its delicious and easy to make using all the beautiful green bounty of the winter produce!
    Here goes the recipe:
    2tbsp olive oil
    3tbsp butter
    1-2 green chillies
    3/4tsp cumin powder
    3/4 tsp cinnamon powder
    3/4 tsp red chilli powder
    1tbsp parsley
    4 eggs
    salt to taste
    20gm hung curd
    1/2 lemon juice
    water
    1 large leek
    100gm swiss chard
    50gm bathua
    50gm spinach
    50gm methi
    3 spring onions
    1tbsp dill
    2-3 tbsp coriander
    1tsp mint
    5 garlic cloves
    Method:
    1. wash and prep all the greens. Chop them up.
    2. In a pan, add oil and butter, add the garlic and brown it.
    3. Add spring onions and green chillies, add the greens one by one.
    4. Add salt and cook. Add all the powdered spices, Then add a little bit of water and create the base.
    5. Add the eggs, season and then let it cook for 6 minutes. They would be baked perfectly.
    6. Plate with some hung curd and enjoy hot!
