Unbeknownst to me he had already tried it, and said that was the best tasting POTATO casserole he’s ever had. And, get this, he’s the one who does the cooking in our home!! Lol...he was shocked!!! He was so relieved because he eats healthy & thought he had messed up!!
I made this the other night and I don't think I'll ever want another regular baked potato ever again. It was THAT good. I put it on BROIL the last 5 minutes of cooking time to brown the top layer even more. Definitely a new staple side dish in my kitchen.

I made it on Saturday and it was gone by Monday and I had made it in a 9"by 12" glass baking dish. I ended up making another one that same Monday and it is half gone already! Karen, elaborate on your idea of fully cooked Cauliflour. I don't like over cooked veggies. I have one recipe that say to cook it between 8 to 10 minutes, do you agree with that?
For this recipe I cooked the cauliflower until it was fork tender before adding it to the casserole. If you are boiling the cauliflower it will probably take 8-10 minutes. Steaming might take a little longer. Thanks for commenting, Gina!
I used 2lbs of frozen cauliflower from a package, and I cooked it in the microwave according to the package directions. If using fresh I would guess that to get 2 lbs you would probably need 2 heads of cauliflower. Hope this helps :)
I've been looking over the years at the historical aspect of what they call gourmet food...most gourmet food came from rustic home cooking which is wild since I've always said I would much rather eat some pot roast for instance rather that gourmet...that in my book if done correctly is the epitome of gourmet cooking lol

i used one head of cauliflower and it was enough.
