I just made this macaroni salad. I followed the recipe but added 3 boiled eggs chopped up. It is soooo good! My husband loved it and said it was the best macaroni salad he has ever had! Yes, you do cook the pasta for 17 minutes, it was not mushy.

I concur with the boiled eggs. A critical ingredient. I also believe the sweet relish and the salad macaroni are needed. Many times I've been to a deli and saw a great looking mac salad only to find drill chuck pickle in the mix. Always ask for a taste.

@@grandmajane2593 I think it's all a matter of each person's personal tastes, because I only buy Best Food's mayonnaise, (Hellman's), because I love the flavor so much. Now, I have tried Kraft brand mayonnaise, only once, and it was yucky to me, bland, with no flavor. It did not taste good to me. It was such a turn-off, that I went right back to the store, and had them give me my money back! The only reason that I had tried the Kraft, was because it was on sale, and I didn't have enough money at that time, to buy the good stuff. This was 17 years ago!! Lesson learned. Never do it again.

Hi Mariposa, Thanks for your question, I use roasted peepers in a jar, you can find them at store, if they don't have them. You can roast your own, just place red bell peepers, on a long fork, roast them over a flame. Turn them often, and once they are roasted, allow the pepper to cool some, and then place in a plastic bag, this will make removing the skin easier. Hi Lorna, that is a great question, the simple answer is that when using hot water to heat, most of the time the hot water is setting in the water heater for a long time, and it can develop a metal taste, so starting with cold water you avoid the metal taste, hope that makes sense to you. Until she gave me her mac salad recipe, she uses it (she's southern and doesn't use measurements lol) total game changer. Her recipe is very similar to yours. Sweet pickles are critical tu great mac salad. When I was a kid my mom would make her mac salad similar to this, and every pot luck we went to she always took home an empty bowl. Not so with the other offerings.

Dinner tonight at Dads. Made the salad yesterday, wanted the flavors to work before it hits the table. “Taste Testers” say it’s pretty darn good.
Everyone loved the salad. Mixed a little to early so more Mayonnaise was needed. Dish was eaten to 85%,.

Why would you put cold water in a pan that you want to heat up? Why not use hot water?
Hi Lorna, that is a great question, the simple answer is that when using hot water to heat, most of the time the hot water is setting in the water heater for a long time, and it can develop a metal taste, so starting with cold water you avoid the metal taste, hope that makes sense to you. Hi Ralph, I hear you loud and clear, however in my defense, you have to start cooking some where. When I first started cooking I barely knew how to boil water. If there had of been a step by step video, I could have learned to cook a lot faster. I don't consider myself to be a professional chef by no means, I just think "The Big Easy Chef", has a catchy title to it. Until she gave me her mac salad recipe, she uses it (she's southern and doesn't use measurements lol) total game changer. Her recipe is very similar to yours. I never rinse the pasta, that removes the starch from the pasta. The starch helps the salad dressing absorb into the pasta.

Sweet pickles are critical tu great mac salad.
When I was a kid my mom would make her mac salad similar to this, and every pot luck we went to she always took home an empty bowl. Not so with the other offerings.
