Been making these for years. Just watched your video. Your "soup broth" mixture is brilliant. I've been boiling stock with bones to get the natural gelatin for ages. Your recipe looks both time saving and decadent. I must admit I am not a chef, and I do not attempt most food videos. However this one seems accessible. Thank you! 😊🥟
I always wondered how they got the "soup" into the dumplings without leaks. But now I see you use gelatin to make it firm and when you steam it it turns more liquidy making it "soupy". But I was just going go ask, is that the traditional method? To get a thick "gelatine" soup using the gelatine that is in the bones? Because it felt weird seeing him add gelatin to food, never seen that before personally. But if you get it from the bones when making the broth that feels more logical and natural to me.
@@mikehunt221 i just watched a couple of videos on how to make xiao long bao and they actually dont use gelatin powder but they use just the meat juices itself and let it refridgerate it over night or until it has a jelly consistency to it

I personally prefer the flavour from the bone broth gelatine, I cook chicken wings with pork fat and rind offcuts low and slow, and then cool. The meat falls off the bones and joins the minced pork, I find it adds flavour and a different meat texture
It's basically (a fancy way) to replace the pork fat you would usually get by boiling pork meat/bones for a long time in authentic soup dumplings. Pork fat will probably work fine here as well (And honestly, the recipe tastes great even without the fat).
2 tbs foie gras 1 green onion 2 bits of ginger 1 1/3 cup chicken stock Boil 8 mins I/2 tsp gelatin Pour into fridge and leave to cool Another dish 1 mince green onion 1 tbs rice whine 1 1/2 tsp sesame oil 1 tsp soy sauce 1 1/2 tsp sugar Half a pound of ground pork Salt Pepper Add the other mixture we put in fridge! Then roll into the dumpling dough!!
For your kind information as an Asian, I haven't seen anyone to use gelatin. If you want the actual authentic taste, just make a regular chicken soup. Freeze it. Then cut it into smaller cube sizes and wrap it in the flour moulding. And then steam it. You will get the authentic taste.

As someone who has learned Chinese for pretty much my entire life (if you include learning from parents), I say your pronunciation of xiao'long'bao is quite spot-on. Very good for someone who may not have grown up in a Chinese family environment (I say "may" because I don't know, for all I know you could have an Asian parent lol). Making this with my family, tried it at a place called Din Tai Fung, I fell in love with the taste of it! Hopefully I’ll be able to replicate it to the best of my ability.
Din Thai fung is literally the best place for these dumplings and it’s their most famous dish . There are so many locations which is even better cuz u can eat the delicious food all over the world. (Also depending on where it is the recipe is always slightly different but they will always have soup dumplings)
