Peat Smoke - The Story of Irish Peated Single Malt Whisky

  • Irish peat x Irish barley - for the first time in generations.
    We decided to return to the traditional ways and flavours of Irish single malt whisky production. That meant using only Irish peat - not importing Scottish peat - to create our whisky.
    Out of necessity since the dawn of time, peat has been the primary fuel source in rural Ireland, with its sweet pungency familiar to generations gathered around the hearths of ancient thatched cottages.
    This same diffused aroma cloaked barley dried over peat smoke by illicit distillers, a custom that began to die out in the 1850s.
    As part of our pioneering quest to unearth whisky’s most natural flavours, we dried barley grown on two Single Farm Origins of Ballybannon and Fenniscourt, Co. Carlow, using peat cut from Ballyteige in Co.Kildare. Each farm’s harvest was peated to different levels: Fenniscourt’s barley to 38ppm and Ballybannon’s barley to 47ppm.

    I tried both and they are marvelous! Astounding achievement! In quality and complexity on par and even above with the big scottish peaters. The Fenniscourt smells like an 12yo Caol Ila and the Ballybannon resembled an Islay South Coast blend. Amazing stuff! Thank you for the nice videos, it gives those great whiskies much more background character.

    OMG...any chance of this 'peat smoke batch' coming State side? The integrity factor in your whisky making is both amazing and to be respected with a degree of reverence...well...at least in my book! Cheers...

      Yes indeed, Ross. It should be available right now in fact. We have 1,000 bottles of each of the Peated Single Farm Origins in the US. Worth hitting Google to see which states/shops have it available right now.

    I know its a competitor but doesnt connemara use irish peat?

      Whilst we don’t want to speak of specifics, prior to us asking for Irish peat every Irish peated whisky producer would have had to have used Scottish peat. We were the first to use real Irish peat again.
