How to Make Bourbon

Bourbon is made in four steps: mashing, fermenting, distilling, and aging. The mash recipe must consist of at least 51% corn. Malted barley and rye typically make up the rest. Fermentation is usually completed with distillers yeast and the pre-distillation starting alcohol by volume (ABV) is usually about 10%. Initial distillation proof must be no more than 160, or about 80% ABV to maintain flavor. Bourbon must be aged in new white oak barrels and cannot enter a barrel at more than 125 proof. Once aging is complete, it is bottled at no less than 80 proof (or 40% ABV). Additionally, it is not permissible to use color or flavor additives in bourbon.

I have a question about the rule of not distilling over 160 proof. Does the entire run have to be bellow 160 proof including the foreshots and heads? Or are we talking end product after blending hearts with some heads and tails?

Bourbon is also only called bourbon if it is made in Kentucky, where they are actually not allowed to put it in barrels at any more than 94 proof.

Negative. Bourbon can be made anywhere (in the U.S.). Only “Kentucky Bourbon” is made strictly in Kentucky.

@@ClawhammerSupply negative ghostrider. While you can make bourbon anywhere, you can't market it as bourbon. Jack Daniels is made the same way as Buffalo Trace, but they can't call it bourbon, because it's not made in Kentucky. Hence Jack Daniels Tennessee Whisky

@@viper29ca I live in Kentucky and have family in the bourbon industry with Brown Forman, who owns multiple bourbon brands and Jack Daniels. You are incorrect. Bourbon can be made anywhere in the USA. It just has to follow specific federal guidelines, some of which are detailed in the video. Jack Daniels is a Tennessee whiskey, and not a bourbon, because they filter it through charcoal before bottling. You aren’t allowed to do that with bourbon. There are bourbons made in other states throughout the country.
