No... A real beer you poor strait into the middle with a smooth flow. And the foam with rise to the top helping the beer breath and a beer bottle with the right carbonation. Will fill it to the top and not over flow. This method he uses is amature stuff.
Works with soda too, anyone who denies tilting the glass just doesnt drink. The amount of carbon let out is minimal, compared to what is still in the drink. Yeah you might get slightly more bloated in theory, but the effect is so minimal you cant tell.

Yeah except beer SHOULD have head when poured, the amount of head it should have depends on the beer, but the aromatics of the head will affect the taste of the beer as well as the carbonation level. Any bartender worth a shit knows this.
