Damn. I was watching Jimmy Fallon when he was interviewing Steve Carell, and Steve said this was based off his audition because when he was trying for the part, one of his sketches was a podiatrist who gets nauseated by feet! Interesting

Colbert is so good at imitating nausea that I felt a bit of nausea myself as the sketch went on. It was perfectly ordinary restaurant faire but I'll be damned if I'm going to put any of that in my mouth now!

In the docu "Too Funny to Fail" it talks about this. Really funny. Apparently Stephen was a waiter and sometimes would come in with a hangover and be grossed out, and would do this bit for the other waiters. Carrell wrote the list so he didn't know what it said beforehand.
Steve Carrell is my absolute hero as far as comedy concerned. The work he's done in The Office is nothing short of amazing. Stephen Colbert is another one, he'll become on of the greats of hosts in talkshow no doubt about that.
A truly flawless comedy sketch; no wonder this show is so legendary. Carell is always great, but I can't get over Stephen Colbert in this--he carries the sketch 100%.

He was discussing what stuck out in his mind as being funny and what shaped his career in comedy. This clip has totally got to blow up and Steve Carell needs to get on Colbert's show for a reenactment.
i loved this show when it was on (the short run that it had). particularly i loved the skit where carell and carvey drove around paying for things and then driving away before receiving them.
Yeah, have to admit that I came for this because of the Late Show interview with Timothee but I had kinda heard about it because Colbert has mentioned it a few times when he talks about working with Carell.

Deadpan means keeping a straight face; not reacting. Please stop perpetuating its misuse, you have already mislead more people with a limited understanding of the vocabulary they wield. If Carrell was deadpan they'd have named the sketch "One Waiter who is Nauseated by food and One who Stands Expressionless."
