    Use the beets in your baking - beets pair up great with chocolate. Dehydrate and powder some of the beets.( can add to soups, stews, baking,- including with flour in breads and pastas, smoothies etc for extra vitamins) Make beet chips - beet hummus - add beets to potatoes to make latkes (potato pancakes) Add diced beets to risotto and rices - pair w apples to make muffins - red velvet cake -

    I actually giggled out loud when Elenor said, “this is a dirty situation”. 😂 Watching Grant’s face when helping you was a second giggle moment. So much fun to have the kids in the garden! We had a small amount of rain but we sure could use a lot more. My celery isn’t quite ready yet but I sure enjoyed hearing the crunch of yours. It made me excited for what’s to come here!

    My husband's grandmother was polish and made red beet soup.I need developed a taste for itbut the rest of family loved it.

    I could eat picked beets everyday. I mostly put them in my salads. Also good just on the side.
    Your garden looks so greens and healthy.

    Overgrown cucumber is good idea. You can leave a few of these for seeds and you will have your own planting material for the next season.

      Yes! I do this towards the very end of the season so as to not effect the output of the plant ☺️

    In your strawberry beds, or all over your garden, you can use diatomaceous earth is affectionately known as the DE. That’ll help you with your slugs, Mill mill bugs, earwigs, any other creepy crawlies

    Children are the most observant humans on the face of the earth and will always tell you like it is. “This is a dirty situation!” 🥰 I just about cried laughing! What a beautiful way to spend the day!!! 💜🙏🏽🙏🏽🙏🏽. So beautiful that you are introducing the garden and all the things that go along with it to your children at an early age. I wish I had known early so I could have imparted the importance of it to my children. My 3 kiddos now think this is just my newest hobby! 🤣 But they are more than happy to partake in the spoils when it’s done! Great video and great job!!! 💜

    That second cabbage looks like a Dutch late flat cabbage. I’ve grown it before and it has a sweet taste.

    Beautiful garden. Between the fires in Canada - the extreme heat and heavy rain my garden is looking very sad. Lost cucumbers, squash and peppers. Such a heart break as I worked so hard putting the garden in. I enjoy watching what you make with your harvest. So adorable that your children are big helpers

    We don't like beets, but we do like to make beet kvass. It's a fermented beverage that's pretty good and has a lot of health benefits. Just beets, water, and salt.
    I bought an electric pressure canner this year (about $100) for small batch canning and so I don't have to watch it. It's been so nice for doing just a couple of pints/quarts of green beans every couple days.

    I air fry beets with some salt or homemade buttermilk ranch type seasoning and my family gobbles them up as fast as I can make them!

    Beetroot chutney.
    I include red onion, apples, dried cranberries, ginger, chilli, all spice and a little cinnamon. I cook the diced fruit and veg in red wine vinegar before I add the sugar which helps to keep the glorious beetroot colour.

    Borstij soup is really nice and would can pretty well for ready meals? Havn't tried canning but it uses a lot of beets and is delicious.

    You can juice the beets for fresh beet juice and freeze some for juice later
    I give my family beets, celery, cucumber and occasionally carrots juiced together as a breakfast drink. Get those nutrients straight into those bodies. I say occasionally to the carrots because if the beets are sweet the carrots will make it even sweeter.

      Probably with a blender and strain through a cheesecloth to take out the pulp and you may have to add water to it while blending.

    Love hearing your daughter's amazement in the garden! Grant did not hesitate to go help mommy in the garden either! I love seeing your garden, mine is still so big I cant say I enjoy harvesting if that makes sense. Next year I am downsizing to half and see how that goes!     Try and make no tomato pasta sauce also called nomato sauce. The flavor and color mimics regular tomato sauce, without containing any tomatoes. The main ingredient is red beets. It’s super delicious and can be pressure canned.

    If you like smoothies or healthy green beverages you can freeze the beets and make a powder for your yummy juices, same if you have an overstock of celery. It's easy and it'll last very well. You can also ad it in soups, stews, creams. Also for the beet powder it can be added to salsas and even oatmeal and yogurts. Awesome harvest, your veggies looks so lush and healthy. 🐞🐝

    I freeze roasted beets to later purée and use in brownies, hummus, smoothies, etc. They freeze well!

    You could freeze dry your beets and turn into powder and fill into pill capsules and take as a supplement

      You’d think right?! I wish it were that easy but a lifetime of exposure to chemicals, toxins and other junk found literally everywhere has just been hard on my body. Autoimmune issues have wreaked havoc. I’m thankful for that garden and it’s organic produce though, it definitely helps the healing process!

      Yes! I have so many 😂 we still prefer the texture of frozen. I’m honestly just running out of space to store freeze dried things 😬 I need a bigger pantry!

    Beet preparation option for preserving vitamins for the winter:
    take beets, dried apricots, raisins and honey, cut into pieces or grind, mix, bake in the oven for about 30 minutes, then put it into sterile jars.
    Another option is simply to store root crops in the cellar and take them as needed. If the cellar is dry, root vegetables can be placed in a box of sand and moistened from time to time. Beets are preserved in the cellar until spring, and in spring some of the root crops can be planted on seeds.
    For storage in the cellar, it is best to remove beets from the bed in late autumn. In the garden, it retains itself better than in any storage.
    If winter is mild in your area, you can leave beets in the garden altogether and take when you need to right from the garden bed.
